The aroma is calm, but when you put it in your mouth, the juicy sweetness and umami taste spreads all over your mouth with a slight carbonation.
The crisp finish is a must.
The bottle was opened after a few hours, but it is unquestionably delicious.

Sake brewed with 100% Kame-no-o, a pesticide- and chemical-fertilizer-free sake, grown with great care by Mr. Koyama of "Chantoseya Farm" in the terraced rice fields of Kamiseya, Miyazu City, located in the northern part of Kyoto Prefecture.
I bought it at my favorite liquor store out of curiosity.
It smelled like rum and was summery and refreshing.
When I tasted it, it was very interesting.
It is quite refreshing and dry, with a hint of sourness.
Perhaps due to the fact that it is 11% alcohol, the freshness of a young white wine, rather than the umami and richness of rice, comes out in full force.
The lingering finish is long, with just a hint of bitterness and astringency.
It was an interesting sake that could really be mistaken for a white wine if you drink it with your eyes closed.
It was a treat!

Sake with a vanilla-like aroma but with a delicious flavor.
The cork flew out of the refrigerator at a tremendous rate during fermentation.
It was delicious.
