Tonight, I'm going to open this bottle for the first time in a long time & the long layover series. Kenshin Special Honjozo 2021BY I'm going to have a glass of this sake, which has been in hibernation for more than 2 years, with a plum crystal I bought in the neighborhood as a side dish. The taste is dry and crisp when cold, but as it gets closer to room temperature, the sweetness and umami of the rice is concentrated in the attack, and it changes to a deliciously dry taste. It gently wraps the sourness of the ume crystal and washes it away, and it goes surprisingly well with it, making it a good drink. ☺️

Continued from yesterday. The second bottle is a sake called Kenshin from Niigata. This bottle was given to me by a friend of my son. The timing was not good, so I was finally able to open it. I took a sip, thinking it would be a little yellowish and dry. I took a sip. Surprisingly, it had a mild barrel sake flavor. I bought a bottle of Ayagiku's raw sake because it seems to be rare. I bought it at Okura Sake Shop in front of Tamatsukuri Station. It is a new store opened this year. They seem to carefully select and handle brands that are not found in the Kansai region. They have a wide selection of sake brands such as Rairaku, Kinshi Morinori, Shonosato, Hizen Kurashin, Chitose Mori, Kikunoi, Hakuryu (Fukui Prefecture), Ayagiku, Hanashimi, Zoka, Morinokura, Rokkasen, Tenzan, etc. Sake made with Sanuki olive yeast. Fresh, rich, sweet and acidic. The acidity is impressive, but there is also a bit of spiciness in the latter half. It has a light mouthfeel for its alcohol content, perhaps due to the acidity. It does have a slightly tropical flavor.

Morimoto Morimoto Junmai Sake "Hatsu-no-Takimikiri 2022". This is my first time to drink this brewery. It was a delicious one 🍶🎶 and served chilled. It is a dark, umami, spicy sake, but as the temperature returns to normal, the sweetness and sourness come through. I think it is a good sake at room temperature or warmed. All of Shizuoka Prefecture's sake is delicious.

It's just the two of us on the second day of our trip. We started the day with a beer toast! After the second beer, my wife had beer and I had sake, cold yesterday and hot this time! On the first day of GW, the 29th, I purchased sake that goes well with meat 🥩. It's a collaboration product of Kumamoto's sake brewery "Zuitaka" and "Gullitcheu Fukushima" wrote the label. The rice used is Yamadanishiki from the Sato Plantation in Sosa City. It is said to be free of chemical fertilizers and synthetic agricultural chemicals. The sweetness is moderate. The acidity is citrusy with a crisp, bitter taste. Overall, it is a refreshing summer sake. It is well-balanced and can be drunk easily. The yeast seems to be different from last year's, and judging from the other reviews, it may be a different one. (It's also possible that my taste buds are wrong...) If that's the case, I look forward to it every year! This year's was my favorite type❣️.
