Shishimai Fuunroku Part 3 The next point of rest and ga-in is Tenjo Yumegen This label commemorates the 100th anniversary of Maruka Kensetsu, located in the same area as Nakayu Sake Brewery. The contents are probably the same as the regular Tokujun, but it is only at local festivals that this kind of sake is served as a sacred sake. However, I am not sure if this label is "Yamato" or "Taiwa". It has been a long time since I have tasted Tenjo Mugen, and while it has a dry base, it is slightly sweet, has a strong umami flavor, and has a nice acidity and bitterness. Once again, I realize that it is a local sake. Thank you very much!

Special Junmai-shu with 60% polished rice ratio This sake is brewed by the method called "Jusui-Jikomi". When poured into a glass, there is a strong ginjo aroma at first. There is a bite to it. Is the aroma fruity? I'm not sure, but I'm sure you'll agree that it's a great beer. It has a unique aroma that comes through the nose. It has its own character and you may not like it as much as you like it. It's a bit like doburoku, but it's easy to drink. Akebono Shuzo's Akebono Seishun, well known for Tenmei. I drink Tenmei from time to time, but this label is new to me, so I opened the bottle 🎉. The aroma is gentle and subdued. It has a slight viscosity and seems to be quite sweet, but the bitterness soon develops. It then fades away leaving a complex umami taste. At 17 degrees alkalinity, the flavor is thick and robust from the first sip 👊. This Daiginjo is made from Yamada-Nishiki polished to 40%. We enjoyed this clear yet rich umami sake 😋.

The last sake we had at Kyoto Stand Kiyo Kiyo was "Toyoyo Junmai Dry Musou" by Mukai Shuzo, also from the Tango region. The rough and powerful label may represent the fishing scene in this area. When you put it in your mouth, you can feel the umami flavor and the aroma of rice is crisp and full. Even though it is called "Dry Musou", it has a hint of sweetness, which makes it a delicious cup. It has been a long time since I have had a good drink, and the best part of drinking outside by myself is that I can drink slowly while considering what to drink and what snacks to go with it, while keeping an eye on my pocketbook. I returned home refreshed both mentally and physically. From next time, I will introduce some of the sakes I took at the beginning of the year!

1853 2024/9 Kyo no Haru Junmai Nama Nigori Sake 67% 17° 24/8 A Ine-cho, Kyoto 720 1945 The bottle was warned to be opened with caution, but there was no fizziness at all, and the lees did not move even slightly. The first thing I did was to pour the clear sake into a cup, and even there I did not feel any fizz. But the taste is quite refreshing and delicious. After the second glass, I mixed the lees with the nigoromi (nigori)... Perhaps because the lees is so thick (about a quarter of the lees in stillness), the sake was a little heavy, beyond soft. It might be exquisite if gas were involved...but I kept on drinking. I had the impression that if there was a sense of effervescence... if there was no effervescence, the clear sake would be better.... On the second day, I had the clear sake and light nigori. Since I was enjoying Ine-Manbaike at the same time, I thought it would be good if they were from the same brewery, so I combined the remaining lees with Ine-Manbaike and enjoyed it as a mellow pink sake.

Today, my wife and son bought some Hakuryu Nigori👍 at a nearby Aeon. Thanks for telling me that you saw Hakuryu nigori sake with a warning sign on it so you bought it for me ❣️ I've been drinking beer and shochu on the days we don't have sake at home, but it doesn't suit my constitution or something 😅I wake up at least 3 times during the night and rush to the bathroom 🤔❓I'm still not sure if it's the amount of sake I drink or the fact that it's alcoholic or not 🤔❓ Well then, open the bottle: ‼️ The aroma is lactic acid with a hint of alcohol. The taste is also lactic acidic with a strong carbonation 👍It has 18% alcohol by volume so if I finish it, I will get very drunk 🤣. I'd recommend it more as a standalone drink than as a food drink 😆.

Nice fruit-like aroma typical of Okunoto's Shirakiku😊Elegant sweetness and umami are as delicious as before 😚👍Gentle acidity spreads slowly and disappears with a clean aftertaste✨. It's still the same delicious sake that is typical of Okunoto Shirakiku 🥳.

Hana of Tsukiyoshino Unfiltered Nama Sake 720ml 100% Hitogochiki produced in Nagano Prefecture Rice polishing ratio: 55 Alcohol content: 15%. Purchased at Hara's in Ueda on Saturday. With amazake, of course. It is a gorgeous spring-like sake with a more mellow sweet taste. On Saturday, we went from Tateshina to the Ueda Castle beyond the ski resort. It was already starting to change colors. The parking lot was full. We had lunch at a buckwheat noodle restaurant in Sakaki Town on the way to Chikuma. We never had a bad experience at any soba restaurant.
