The eighth sake rice research bottle is Yumesansui, a trad variety from Aichi. It has a solid image, but the aroma is citrusy. Freshness of new sake, slightly effervescent and drier than sweet. Very tasty.

Last weekend I was out of sake to go with oden, so I went to the local supermarket and bought a 300㎖ bottle for the sake. It has a sweet and refreshing taste. It's good at hiya, but it tastes even better when it's warmed up to human skin temperature to increase the sweetness. However, I thought it would be too clean to pair with oden. I chose this sake because I wanted to keep it light, but.... If I wanted to warm it up, I could have used a more robust Junmaishu or even Honjozo. I'm still learning💦.

On a trip to Shiga, I visited Hirai Shoten. The quaint appearance of the store and the display of products were a sight to behold. Today's bottle was the "Sake Brewer's 3003000 Year Old" (pictured left). The aroma is melon, apple, and pineapple, and the first sip is a punch. It has a mellow sweetness, but the acidity and bitterness make it crisp and refreshing. Delicious. Well, Shiga Prefecture was fun! I'm also looking forward to Kosetsu (I heard it's read as Fouche) on the right side of the photo 😄.

Something I got from a work colleague. Thank you 😊 Unfortunately, it was completely 'old', probably due to extremely poor storage conditions (at the dealership). It had a strong sense of rice, and I could feel a glimpse of the rich dry taste, but the aftertaste was so uncomfortable that I gave up after one glass. We decided to serve it as a cooking sake from now on.

#Hamamatsu# I went back to my parents' home in Hamamatsu during Golden Week. I left Tokyo around 3pm in the afternoon. Tomei Expressway had zero traffic jam 😯 Surprised 😆. It was good to move at the time to spend in the holiday resort 🤔. Arrived at my hometown and bought gyoza (dumplings) and sake (sake) at my parents' house. Knowing that "Hana no Mai" was waiting for me. I bought this sake and went home. It was very spicy 🤯 and bitter at first. Not bad 😅

A gift from Sawanoizumi The Jun Dai I drank before was a Miyagi sake, beautifully light and dry, and I felt (selfishly) the earnestness of the toji (master brewer). I had an image of a modest, but firm, light, dry Kura. And then there is this special pure Sawanoizumi. It does not have much of a topping aroma, but the mouthfeel is surprisingly sweet and umami! It is sweet to the level of the Hitakami, and the robust umami is also very tasty! It has a light acidity and bitterness, followed by a refreshing sharpness. It's good! This is good! The price is relatively cheap, about 1300 yen for a four-pack, but it is convincing enough! Ishikoshi Brewery. I underestimated you. Sorry about that. Comparison of nigori sake (Wakayama's favorite nigori sake) Following Minakata, Chokyu ✌️ This is the fire-brewed version of the nigori sake we drank in February. I buy every bottle of Chokyu I see that I have never had before 😆. The first thing that surprised me when I drank it was that there was no fizziness at all 😲. The aroma is somewhat almond-like, and it's cloudy with a lot of orioles, so it's like diluted almond milk. But it also has a sourness to it, so I felt a bit unbalanced 🤔. I prefer nigori sake with a fizzy taste 😄.

Nigori Sake (Japanese rice wine) First time drinking Chokyu's nigori 😊. I always buy Chokyu when I see the new label ✌. The ori is quite a bit more and has a strong fizzy feel to it. It has a lot of umami and a hint of sweetness that is typical of Chokyu, and yet it has a clean dryness that makes it a dangerous sake that you can drink with gusto 🤭. The impression is quite similar to Hirotogawa's nigori👍 It goes well with western food, and the omelette was a nice match 😋.

[Summer sake is also berry good😂] The most memorable brand I drank last year, super kyu🥰. Don't miss out on getting a bottle of summer raw sake that's also bright! This one is a bit different from the matured Omachi sake I had last year, and I have the impression that it swings in a very sweet and juicy direction. The aroma is tropical 🥭 and the flavor is perfect, with a long, sharp finish and a hint of bitterness. The umami flavor is firm, so it is easy to match with Japanese fried food 👍.
