This is the first time I've bought bamboo island since the new system was put in place. According to the official website of the Japan Famous Sake Association, the rice is Nihonbare and Yamadanishiki. The lees are submerged and when mixed, it is slightly effervescent and petite. Slightly sweet and bitter. I wonder if it is better to drink it while it has gas? Once the gas is gone, the bitterness will make it hard to drink 🤔. I wonder if it would be sweeter to drink the alcohol by itself?

OSAKA-JO SAKE SQUARE 2023 It is a very crisp, dry, deep-flavored Ajiginjo. The aroma is subtle. The mellowness is more apparent in junmai sake. This is also a good sake. I drank 8 glasses this time and they were all good! There are so many good sake that I can't keep up with them all! It's a happy scream!

Today is Valentine's Day!👩‍❤️‍👨 This Sake paired very well with the filet mignon I prepared for my wife. There is a full mouth feel with umami. There is a light smoke flavor and wood. The aftertaste is short.

Cowboy bought me this as a souvenir from Niigata! Yay! Yamahai is great! The design is cool too! It's crisp and mellow, and I drank a bottle so fast... I want to drink it again!

Saga, Saga Prefecture, Japan. Saga Brewery Co. Umenomado Special Junmai 3㌥ I tasted and bought this at the Sake Expo held at the Kintetsu Main Store in Abeno Harukas. I actually had it yesterday, but since it is a special junmai, I compared the two. We will drink it cold. The color is clear and almost colorless. The top aroma is mild and not very noticeable. The taste has a robust rice flavor, sweetness, and a nutty, chocolate-like complexity. It is rich and mellow, but compared to Saka, it has a more traditional country-style flavor. The aroma on the nose is bitter and chocolatey. By the second day, the chocolaty flavor has settled down, and a clear, mineral, full flavor emerges, making it easier to drink. Ingredients: rice (domestic), rice malt (domestic) Rice polishing ratio: 60 Alcohol content: 15 to 16 degrees Celsius

Saga, Saga Prefecture, Japan. Saga Brewery Co. Saka Tokubetsu Junmai Nama Nama Zake. Purchased after tasting at the Sake Expo held at the Kintetsu Main Store in Abeno Harukas. Saka is a new brand, and is apparently better known as "Ume" (window plum). It is served cold. The color is clear with a slight yellowish tinge. The top aroma is mild, with a slight hint of alcohol. The mouthfeel is smooth with a slight flocculation, and it does not feel fresh to the extent that it should. On the palate, there is a little bit of juicy acidity, a little bit of tangy alcohol, and a nutty, full flavor that spreads. The aftertaste is a bit of a sharp spiciness, with a slight throat hit after swallowing. I bought it thinking it would be sweeter and more umami, but it was surprisingly dryer than I expected. Souvenirs from a classmate from Akita, Japan, at the end of GW If you are not sure about Akita sake, go for Fukukomachi! I think it's as reliable as the best Akita sake. I don't feel much of the Uetatekoso aroma. The mouthfeel is familiar sweet and tasty, but it has a very different flavor with a crisp acidity. In addition, it has a strong umami flavor, and the taste of umami acidity is something you don't encounter very often. Fukkomachi has a lot of nostalgia!
