Rice used is Miyamanishiki I didn't find it too harsh, but my partner, who prefers a gorgeous sweet taste, found it too much for his palate. It is true that the alcohol taste comes first, and the mouthfeel is not smooth. As the day goes by, the corners are removed and it becomes more moderate, so it might be better to go out with it slowly, but I don't dislike it in this way.

Junmai ⭐️⭐️⭐️⭐️ Uesugi Yonezawa Naoe Yamashiro Kanetsugu [Love Polishing ratio 60%, ALC 15%. This is the 7th kind of sake we purchased on our trip to Yamagata 🤗. The label is named after Naoe Kanetsugu's helmet seal [Ai]... I couldn't help but buy it 😅. I thought it was a crisp, dry, refreshing sake that I would never get tired of drinking on the palate. When pouring it into the sake cup, I put a little more than usual so that the saucer would be filled with [love]... I was drinking it by myself laughing with the memories of my trip 🤗. Junmai-shu ⭐️⭐️⭐️⭐️ Polishing ratio 60%, ALC 15%. This is the fourth type of sake we purchased on our trip to Yamagata 🤗. In Yonezawa, we did not have enough time to visit Kosaka Sake Brewery due to a visit to Toko's sake brewery. The next day, after eating Yamagata Ramen, we stopped by Beni no Kura in Yamagata City and purchased this 🤗. It's a refreshingly dry sake with a great taste of rice. Kasumigashoju, Junmai Ginjo. I bought it immediately because it was half price at the drugstore. The spiciness and sweetness overlap and fuse from the beginning and disappear with a delicious taste. Good ministry.

Another bottle I bought at Hasegawa-san in Tokyo station. The first time for Otokoyama-san in Yamagata This is also the original label of Hasegawa-san. The rice used is Miyamanishiki, so it's the same as "Junmai-shu Gold Label". Anyway, it was a delicious sake with a lot of fullness. The sharpness isn't bad either, and it's perfect as a sake for a meal. I thought it was good for everyday drinking. That's about all I can say for a 1-gallon bottle...

☆☆☆☆☆ A refreshing hiyaoroshi with a lot of acidity. It doesn't have much sense of maturity, but the umami is strong. Delicious sake that doesn't interfere with food.

Rice used is something from Iwate Prefecture and germinated brown rice from Shiwa-machi glutinous rice Classified under the Sake Tax Law as "Other Brewed Sake It is a so-called craft saké, but it is no different from ordinary sake. The fruity sweetness spreads quickly, and the umami is also conveyed clearly. The citrusy bitterness tightens up the whole experience. The lingering aftertaste seems to be slowly fading away. It is not flashy, but it is good for a leisurely sipping. However, 3,000 yen for a four-pack is a bit expensive!

I like it, delicious, apples, cold, rice feel, similar characteristics to 2022BY Kaze no Mori Alpha8 brewed with brown rice, not just brown rice, but germinated brown rice, so other brewed sake craft saké. 3 days after opening the bottle, banana, Shaoxing wine caramel, not bitter, classical feel.

Overall 10 (out of 10) This is the first sake I've ever had. It is a sake brewery that has been revived as a craft sake in the modern age after 100 years of history! According to the description The secondary ingredient is germinated brown glutinous rice produced in Shiwa Town. It has an aroma very close to that of sake, and you can enjoy its dignified, gorgeous aroma and fresh sweetness. according to the brewery's description. Delicious 😋. Good aroma👍 Sweetness, umami, and spiciness with an independent presence that does not mix with the sweetness. And yet it is clear and transparent with a simple "water" feeling. The final taste is a little bit rummy, and it closes with the taste of rum. I got such an impression👍😋😋. It was served chilled. The aroma I felt was -Aroma: Aroma of rice and a little bit of rummy 👍 -Aroma: A slight spiciness and bitterness that passes through the nose. Taste sensation The higher the number, the stronger the taste (5 is the maximum) -Spiciness: Start 1 → Lingering 2 -Sweetness: Beginning 2→ Lingering 2 -Sourness: 1 at the beginning → 1 in the aftertaste -Bitterness: 0 at the beginning → 1 in the aftertaste -Astringency: 1 at the beginning 1→ Lingering 1 -Rice flavor: 4 at the beginning → 3 in the aftertaste Mouthfeel I felt】→3 Smaller number = light and smooth Large number = thick and rich (5 is the maximum)

100% Yamadanishiki from Hyogo Prefecture, with wine yeast. It is said that the name "Sora no Tsuru" comes from a dream of riding a beautiful "crane" soaring in the sky. Wine yeast is great because it makes rice sweet and sour! The top aroma is of grappa and rum raisins. When swirled, it smells of plum. The flavor is very sweet and sour, like plum wine. The color is a pale yellowish hue like lemon pulp, the legs are short and weak.

It is a sake from Akashi City, Hyogo Prefecture. It is only available directly in the city, and there are only a limited number of stores where you can drink it. I found it at a store selling Hyogo products in Kobe Hankyu in Sannomiya and bought it. How does it taste? It does not have the harshness of the original sake. It has a chocolate-like aroma. It has a rich sweetness, with spiciness and astringency chasing after it. The chocolatey and caramel-like aroma that passes through the nose is delightful. If you let it air a little, it becomes more brightly sweet and fragrant. It is simple, but quite flamboyant. How about if you heat it up? It tastes like chestnuts and is easy to drink! The spiciness that comes out volatilely and the refreshing sweetness that comes in quickly. It has a rich and expressive taste. It is really good. The aftertaste is also refreshing and sharp with a nice sweetness. I think it is especially good when heated. I have now completed a round of the 70-odd breweries in Hyogo Prefecture (and have 300 reports to my name)! It took me two years to complete this feat. It was a long but enjoyable journey. I will continue to enjoy Hyogo sake (and Fukui sake as well) slowly and carefully, and hope to one day become an evangelist for good Hyogo sake...

Purchased at a liquor store in Nakazaki-cho after an event at Ogimachi Park with Nemuchi The design looks like something you'd find in a bottle at an izakaya 😅. Normally I wouldn't pass it up, but I thought it looked unusual and bought it. It's been a year since it was made, but I don't feel it's aged too long. It is light, refreshing and easy to drink.

Type: junmai daiginjo, rice polishing rate: 50%, alc.: 16% Floral aroma, vanilla, marshmallow and a little bit of savoury aroma. Flavor feels dry with sharp acidity and bitterness of alcohol. Earthy flavor lingers for a while. Not too good not too bad. Decent price here in Europe.
4 points - so-so? More acidity than Junmai Namaishu?
