Hakkeikubiki is a series of the eight blessings of Kakizaki: sun, water, earth, sky, wind, trees, snow, and people. This is wind. Come to think of it, it was windy in Kakizaki. This is the second bottle from the Sake Rice Study Group. The sake rice is locally grown Koshitanrei. The aroma is light, but has the gorgeous flavor of a daiginjo. The taste is very broad. At home. Kumamoto sake, Sung Kaoru, purchased on an expedition to Fukuoka. The Sansho I was looking for was sold out, and I managed to find this Kumamoto sake. It has a smooth, refreshing taste with a slight bitterness at the end. It was a dangerous one that was easy to drink. After a long time, I took a walk around Motomachi area in Kobe by bicycle, bought some gyoza (Chinese dumplings), and went home. Since it was Saturday afternoon, Sannomiya and Motomachi were quite crowded, and the city seemed to have regained its vitality.

This is a tax return gift from Furusato. We chose this sake because of the impressive phrase "water from the mountain, the closest sake to the sky. It has an aroma of unripe fruit, but the assertion is gentle, and the first sip gives a sharp impression. It is slightly tangy, with a mild sweetness and a clear acidic stimulation, which fits the image of a clear stream in the mountains of Shinshu. It is sharp and clear. We got some nice long hijiki, so we made tempura and had it with some very tasty fresh shirasu (baby sardines). It is a good night on the first day of a three-day weekend.

Second stop on the Takayama sake brewery tour. We visited Funasaka Sake Brewery. As usual, the tasting machine took care of us. I chose a junmai ginjo that seemed to suit me from the description. It was described as sweet, but I got the impression that it was medium sweet with no fruity taste. I wonder if it would be a sweet sake in this brewery's lineup? It tasted crisp.
