Kokushu fair 2025 in Osaka⑳⑳ Ibaraki Prefecture booth 10 When we say "Shirakiku" in Kansai, the image of Shirakiku Brewery of Daisen Shirakiku comes to mind, but Hirose Shoten in Ishioka City has been using the brand name of Shirakiku since 1805 when the company was founded. ◉Shirakiku Junmai Ginjo The taste is mild and mellow, with a dark sweetness. It has a complex aftertaste. According to bouken's information, it is made from rice Inochinoichi, which is a mutation of Koshihikari. I forgot to take a picture of it, so I borrowed it from bouken-san.

National Sake Fair 2025⑳⑳ Ibaraki Pref. Hirose Shoten in Ishioka city. Shirakiku is drinking the expensive Jun Dai draft sake that you buy at the corner shop of Mystery Cheeya earlier this year. Polishing ratio 60%, Inochinoichi 15-16%, Sake degree -6 1925 yen I've never heard of Inochi no Ichi before 😳. It is sweet, refreshing and delicious! Shirakiku, I'd like to try many other specs, but I'll have to pouch this one to get it too...

This is Kashiwamori, an original sake from Katayama Shuzo, which I bought on a trip to Nikko. Slightly dry. It has the rich taste and aroma of original sake. I also recommend the "Sake Long Cake" filled with this sake 😀 I have had many different sake cakes, but this one, by all means, should be paired with sake. You will not regret buying it.

This is also our first time to visit this brewery. I'm glad to see that they have a lot of unpasteurized sake. I completely forgot about the bad things at work and went into drinking mode. Oh, the label of Yuki (YUKI) has changed. Like "Kaze" and "Sora" in the Yaeguhiki series, the design is based on white, with a thicker material that gives a softer impression. At home. Kumamoto sake, Sung Kaoru, purchased on an expedition to Fukuoka. The Sansho I was looking for was sold out, and I managed to find this Kumamoto sake. This sake was tasted along with the Junmai Ginjo I posted earlier. We were there when the store opened on the first day of tasting and sales, so all the sakes were unsealed, so we were able to sample them in fresh condition. I recommend going on Wednesday when the store opens 😆. It is Rokumaru with 60% rice polishing ratio. It is the same as Shinomine. It has more richness and umami than Junmai Ginjo. It is suitable for warming up.
