To compete with them with seafood, We consulted with them in advance about "Uchiwa Shrimp" caught in Hirado, Nagasaki. We consulted with them in advance and asked them to secure it for us at the market. We had them as sashimi. It was like a smaller horseshoe crab. They were very pleased 😁. Now for the 🍶... Like yesterday, Shiratake-san. I think it was the one with the most intense flavor during the tasting (we received a lot of it, probably... You can still feel the umami and sweetness of the rice. The aftertaste is pleasantly bitter and lingers for a long time. (PS: After about 30 minutes of pouring the cold sake into a Kimura glass piccolo, the aroma of ripe melon spread through the glass. After drinking it, it is still melon. It went from rice to melon🍈) My mistake, or rather my assumption, was that the addition of brewer's alcohol would refresh me. But after tasting it at Hakutake-san, it was the opposite... The same goes for this sake. The sardine was grilled with salt, well oiled and grilled to a high strength. The skin is crispy and you can even eat the bones. The flavor spreads and goes very well with white rice. The yeast we were allowed to taste, 1801 and No. 7, was said to be used at the brewery. The only sake brewery in Tsushima. Shiratake Sake Brewery (Former Kawachi Sake Brewery) During the waiting time at Tsushima Airport, I enjoyed Tsushima venison? and enjoyed it, but I was not feeling very well, so I will refrain from commenting at this time. I drank it again at home. I first drank it cold, but it had a strong umami and sweetness from the rice. The sweetness lingers in the aftertaste. I could go on and on with just this one... (Come to think of it, I would drink it on the rocks...) (By the way, we were told that it can be served on the rocks or with fruit.) Added -> I remembered that and tried it on the rocks. No way, it became more, rice, this is delicious. It's not the type that stands out for its flamboyance, but rather the rice, so I imagine it would go well with anything that goes with rice when it's hot 💭. This month we had a lot of drinking outside, so it's been a while since I've had a drink at home! I got a bottle of summer sake "Kashoku", which is rarely seen even in my hometown, because there was some left at the liquor store! The mouthfeel is sweet with a refreshing acidity, and the mellow aroma lingers until the end. It seems that more emphasis is placed on the mellow aroma than on the refreshing taste! Representative brands are Yuki Kirara and Hyakkibune. ◉Yuki Kirara Sakahomare Junmai Daiginjo The flavor is citrusy, acidic, and slightly reminiscent of yogurt. It is quite likeable and delicious. It is a small brewery with only three people working on it, but they will be awarded the Kura Master Platinum in 2023 for this sake. A bowl of oden at an oden shop in Shizuoka Station. I had no idea about this brand. The best part of traveling is being able to drink this kind of local sake with local food 😆. A little sweet and full, with a clean dry finish. It is not flashy, but there is no alcohol feeling that lingers in the throat and it is very smooth to drink 😄. It goes great with Shizuoka oden, which is a thick, dark broth with fishmeal, and if we weren't on a family trip, we would be drinking it endlessly 😅.... Also, I had a local B gourmet dish called "Motsuru Curry" for the first time, which was also very tasty👍👍!

Shimane Local Sake Fair Osaka ③. Ichinomiya Sake Brewery of Iwami Ginzan and Rika. I had bought Yukika at Hanshin Department Store in Amagasaki in the past. I found out that it was Mr. Rika, the toji (master brewer), who was standing in the store at that time😅. I tasted the following Iwami Ginzan Special Junmai Hiyoshi Oroshi Rika Junmai Ginjo Kaihatanryu Ichitunya TANE Nama-zake Yukika Sparkling None of them left much of an impression on me, but I thought the Yukika was as tasty as ever. It was sweet and strong, like a strong calpis soda. I would like to try it again because Sugidama-san in Kyoto sells Iwami Ginzan.
