For my fourth cup, I decided on the "Koshihikari" which caught my attention! The palate is clean and refreshing, but as you taste it, it mellows out a bit with a banana feel. The acidity tightens it up so that it does not interfere with the taste, so it is well-balanced and easy to drink👍.

Hanashoku Junmai Daiginjo Betsuatsurae The aroma is like grapes with a hint of sourness, the mouthfeel is clean and sweet with a pleasant aftertaste, and there is a lingering bitterness in the back of the throat. I bought some salted sea urchin, which is a perfect match for sake, but is usually hard to find. The taste was so agonizing that it made me want to drink more sake. I think if I recommend [salted sea urchin] to people outside of the prefecture, they will be puzzled how to eat it 🤔.

This month we had a lot of drinking outside, so it's been a while since I've had a drink at home! I got a bottle of summer sake "Kashoku", which is rarely seen even in my hometown, because there was some left at the liquor store! The mouthfeel is sweet with a refreshing acidity, and the mellow aroma lingers until the end. It seems that more emphasis is placed on the mellow aroma than on the refreshing taste! Although it is a summer sake, it is a perfect bottle for long nights in autumn. I felt it has the potential to be as good as many dishes in the autumn season of taste.

National Sake Fair 2025 in Osaka_56 Fukui Prefecture Booth 8 The Yutaka Sake Brewery is located in Sabae City, which feels somewhat familiar to us since Umaiai-san helped them at the Japanese Sake Festival. ◉Kasokandoku Junmai Daiginjo Betsuatsurae The aroma is slightly smoky. It has a sweet and savory taste, with a slight bacon-like flavor. Even without any favoritism, they make a lot of good sake. They seem to be particular about Gohyakumangoku from Fukui Prefecture. Shimane Local Sake Fair Osaka ③. Ichinomiya Sake Brewery of Iwami Ginzan and Rika. I had bought Yukika at Hanshin Department Store in Amagasaki in the past. I found out that it was Mr. Rika, the toji (master brewer), who was standing in the store at that time😅. I tasted the following Iwami Ginzan Special Junmai Hiyoshi Oroshi Rika Junmai Ginjo Kaihatanryu Ichitunya TANE Nama-zake Yukika Sparkling None of them left much of an impression on me, but I thought the Yukika was as tasty as ever. It was sweet and strong, like a strong calpis soda. I would like to try it again because Sugidama-san in Kyoto sells Iwami Ginzan.

A bowl of oden at an oden shop in Shizuoka Station. I had no idea about this brand. The best part of traveling is being able to drink this kind of local sake with local food 😆. A little sweet and full, with a clean dry finish. It is not flashy, but there is no alcohol feeling that lingers in the throat and it is very smooth to drink 😄. It goes great with Shizuoka oden, which is a thick, dark broth with fishmeal, and if we weren't on a family trip, we would be drinking it endlessly 😅.... Also, I had a local B gourmet dish called "Motsuru Curry" for the first time, which was also very tasty👍👍!

National Sake Fair 2025 in Osaka_55 Fukui Prefecture Booth ⑦ Hatakeyama Sake Brewery is located in Imajo, an inn town in Minami-Echizen-cho, Nanjo-gun. Representative brands are Yuki Kirara and Hyakkibune. ◉Yuki Kirara Sakahomare Junmai Daiginjo The flavor is citrusy, acidic, and slightly reminiscent of yogurt. It is quite likeable and delicious. It is a small brewery with only three people working on it, but they will be awarded the Kura Master Platinum in 2023 for this sake. When I drink Sakahomare, I often associate it with yogurt with citrus.

National Sake Fair 2025 part52 Fukui Prefecture⑥ Hatakeyama Sake Brewery in Minami Echizen Town Snow Kirara has been bartered with Mr. Jive for a drink in the past. The World Hawk Koyama Family Group is amazing, with several other sake breweries. ◉Kinmon Sekai Taka Ginjo 50 I saw on the Internet that it is sold only in Saitama. It has a sweetness, umami, and richness that is standard and delicious. The taste is very consistent, as expected from a major sake brewer. After thanking the brewer of Ishii Shuzo for explaining everything to us, we moved on to the next booth. I asked the Saitama Sake Brewers Association to hold an event for restaurants, liquor stores, and the general public by itself, like those in Yamaguchi and Nagano prefectures.
