It says Gotenzakura in small letters on the lower left corner of the front label, but I was told that it was a PB from a local liquor store. Sake made with LED dream yeast from Tokushima🍶. The aroma on the nose is gorgeous and fruity. When you put it in your mouth, you can taste the smooth sweetness and umami. It also has a fruity overtone. This sake has a good aroma. It was delicious 🍶✨.

There is clearly more lees than the previous Yamadanishiki. When you take the supernatant first, the taste opens up from the beginning, with a thick umami and sweetness spreading. The Yamadanishiki Junmai Ginjo reached this state at room temperature, but this one's flavor comes through even at low temperatures. When the lees are stirred, a crisp acidity is added and the aftertaste becomes clear. The full-bodied aroma comes out of the nose, and the taste becomes highly complete at once. This one is also insanely delicious! I've been drinking a lot of Omachi sake lately, and I wonder if this complex and thick sweet flavor is a characteristic of Omachi.

Yamadanishiki ver. Compared to Omachi's lees sake, it is slightly more lees and has a 1% lower alcohol content (17%). The bottle size is also changed from 500ml for Omachi to No. 4. The aroma is like rice itself and rice malt. The pure sweetness that is typical of Yamadanishiki passes through the nostrils with a slightly thick texture, and there is a slight bitterness that seeps into the tongue. Nice fruit-like aroma typical of Okunoto's Shirakiku😊Elegant sweetness and umami are as delicious as before 😚👍Gentle acidity spreads slowly and disappears with a clean aftertaste✨. It's still the same delicious sake that is typical of Okunoto Shirakiku 🥳.

Mishio Junmai Ginjo Omachi 100% Omachi produced in Okayama Prefecture Polishing ratio 50%. Alcohol content 15-16%. Sake meter degree +2, acidity 1.8 (reference) Fat 5/7, opened 5/23 I wanted to drink a dry sake from Kochi and was attracted by the label that looked like a pattern of playing cards I used to have at my parents' house 🤣. The brand "Bishio" is a new brand that started in 2014. It is one of the Junmai Ginjo series that is based on the concept of "elegant sweetness reminiscent of honey" and is part of a trilogy that includes "Kitashizuku", "Gin no Yume", and "Omachi". The aroma is almost imperceptible after opening the bottle. In the mouth, it has a fruity, fruity aroma and flavor, but at the same time, the alcohol is very strong. The acidity is moderate and not harsh. The acidity is not too strong, but it's more spicy and tingling than the number 😅. I tried to drink it after 4 days, which is unusual for me, but although the mouthfeel got better, the strong alcohol feeling didn't go away. The aftertaste is light, so it would be classified as light-dry. It's like a Tosa sake in that respect 😊. Unfortunately, it didn't suit me and was disappointing 😅. Oh! Maybe I should have tried heating it up 🤔.
