I'm at my new place today! We had a glass of local sake at the busi-hotel to pray for a new start👍. The mouthfeel is surprisingly soft and the flavor in the mouth is like custard cream or banana au lait! The texture is also soft on the tongue. I think I may have never tasted such a soft sake! And there is a mushroom-like taste in the aftertaste. There was also a sake from my new job, but I didn't dare to drink it. I'll leave it for the future 😌.

Sannomaru Autumn hiyaoroshi from Kaito Otokoyama Shuzo. There is almost no standing aroma, but the hint of aroma is pear. It is a junmai sake that was fire-aged before storage and bottled fresh. First time drinking this brand, we had it with my family 😁. I was told that it's good to drink it cold, so I made it very cold ❄️❄️ When I opened the bottle, the aroma was not so strong, probably because it was chilled... When I put it in my mouth, I could feel the coldness and the richness of the flavor. And a good amount of spiciness... It's delicious, I can drink it easily 😆😆😆.

We opened a bottle at the office. This is the first time we have had "Shirasagi no Shiro", another name for Himeji Castle. At first I drank it at room temperature, and from the second glass I drank it on the rocks, and I could feel the gentle sweetness of the sake. The taste reminded me of Tengu Mai's Yamahai brewing. I'd like to try it warmed.

The location changed and we went to Hyogo Sake EXPO 2022, a local sake event in Hyogo, at Kobe Hankyu. I tasted a regular product, a draft version. I had tasted the hi-ire version before, so I wondered what the draft version was like. It was easier to drink than the hi-ire version, but not to my taste. I prefer the Shirasagi no Shiro (castle of the egret), which is made with Nojoho.

From the jacket, I thought it would be a light, dry, smooth and elegant type 🤔. I'm sorry, I don't know this brewery...but they have hiyaoroshi and yamahai. So he shared his favorite hiyaoroshi with me! It's easy to drink, has a nice mouthfeel, and is dry with a nice flavor and sharpness. It's also delicious and reminds me of a white wine! The Nouveau chosen by the owner this year was expensive... but he said he had no choice because of the weak yen and the international situation.
