The scent is a bit yeasty like a sweet bread. The taste opens very light and clear but gets much more complex in the middle. It takes on a sweeter fruity taste before finishing with a mineral flavor and slight tartness.
So smooth! ๐
Refreshing with a fruity tartness. This one is only 8% alcohol so it is very easy to drink. Enjoyed this one while making sโmores with my girlfriend and brother.

Shizuku-tori sake from my humble favorite, Ikumidoi-san. The aroma is gently fruity. It is berry-like with acidity. The mouthfeel is gentle, but the volume expands with both sweetness and dryness. It has a very beautiful structure with a disappearing aftertaste. A good sake for stand-alone drinking. I think it would also work well as a heated sake, perhaps because of the image of Ikumichii ๐.

This Sake has a full mouth feel and a rich flavor. It has the flavor of sweet melon. There is also a bit of acid at the finish to give this a clean aftertaste. Very nice!

I was curious about this sake when I saw it on Sake no Wa before. It was given to me as a present by chance. It has a spreading umami and a bitter finish. It was a delicious sake. The "Recommended for you" list has become full of Hokkaido sake ๐.

Sake Brewer : Meijo Shuzo Place of Origin : Toyofuji-cho, Himeji City, Hyogo Prefecture Content : 300ml Price : about 450 yen Rice polishing ratio: 73% Alcohol percentage: 13 Pairing : Stir-fried komatsuna and thick fried tofu with aged soybean paste (hot and thick) The aroma is crisp but gorgeous. It has a slightly long bitter taste that is heavy at first and lingers on the palate. It is a small sip, but if you drink it heavily, it is bitter and you may not like it... As soon as it hits your tongue, you feel a little bit of sweetness and a thin lingering bitterness... If you like sake that is crisp and has a short aftertaste... You may not like it... If you want to match it with food, I feel that you have to fight it with tempura and other dishes with strong flavors such as salt or boiled vegetables... If the food is light in flavor... I think this sake might make it hard to taste the food... Personally, I feel it's like shochu (it's a freshly stored sake)... On the other hand, people who enjoy the richness of sweetpotato shochu might enjoy it... Personally, I prefer a refreshing type... Overall rating C (S-D)

National Sake Fair 2025 in Osaka_55 Fukui Prefecture Booth โฆ Hatakeyama Sake Brewery is located in Imajo, an inn town in Minami-Echizen-cho, Nanjo-gun. Representative brands are Yuki Kirara and Hyakkibune. โYuki Kirara Sakahomare Junmai Daiginjo The flavor is citrusy, acidic, and slightly reminiscent of yogurt. It is quite likeable and delicious. It is a small brewery with only three people working on it, but they will be awarded the Kura Master Platinum in 2023 for this sake. When I drink Sakahomare, I often associate it with yogurt with citrus.

National Sake Fair 2025 part52 Fukui Prefectureโฅ Hatakeyama Sake Brewery in Minami Echizen Town Snow Kirara has been bartered with Mr. Jive for a drink in the past. Polishing ratio 40%, SakaHomare 15%, Sake degree +1, Acidity 1.8 3,630 yen Beautiful and muscat-like. I thought it was interesting to see the gap between the sake quality and that of the rough or first pressing ๐ค. I forgot to take a picture of it, so I borrowed it from Mr. Neemuchi.

Drinking continues at Don Chaya ๐บ. We emptied the weird "Haneya", followed by another round ๐ถ. We chose our first brand that we could see in the cellarโจ First "Kame no Ou Junmai Ginjo Shiboritate" ๐. Not much in the way of aroma, but a clean sweetness on the palate, with a pleasantly sharp and sweet [Kame-no-o] lingering finish! I found out later that they revived Kame-no-o and used this episode as a model for Natsuko's Sake, so in a sense, they are the pioneer of Kame-no-o ๐.

One cup of "Ureshicho" in Ikoma City, Nara Prefecture. The acidity of this sake is classic. Paired with fried potatoes, a souvenir from my wife and son's trip to Sano City, Tochigi Prefecture.

Purchased at Umeda Department Store. (Hankyu or Hanshin) One of seven breweries in Nara Prefecture that belong to the Nara Prefecture Bodai-Hashimoto Sake Research Association. See label on back. Rich, mouthfeel It is a sweet type, but the far and spreading umami and bitterness It was delicious and matched well with food. It became mellow and mild when heated to lukewarm and I could enjoy it with ease ๐. I am interested in the history of sake only when I taste Bodaihashi.
