New Year's sake (2) - Women's tears When I went back to my parents' house, my father bought this sake. It seemed to be a recommendation from Aoki Shoten. With all due respect, I had never heard of this sake and it was unknown to me. When I opened the bottle, there was not much aroma. When you put it in your mouth, you can feel the sweetness and gradually start to feel the alcohol, and it ends up being dry. From the naming, you would expect it to be intensely dry. It is easy to drink. There are still many sake that I do not know about, and sake is very deep.

Rice used is something from Kyushu It was sent together with eel as a hometown tax return gift from Isahaya City❗️. It is a clear and dry sake with good sharpness ‼️. The sweetness is just a hint and goes well with eel. I was curious about the sake brewery that has the same name as Okinawa "Reimei", but I see they are related. It is interesting to see how many things are connected in this industry.

I got this on a trip to Nagasaki last year. I will have it while thinking back to the delicious Turkish rice and Sara Udon noodles 🤤. When you open the bottle and pour it, the aroma is sweet and fluffy, like pudding or custard. The aroma is gentle and soothing. The mouthfeel is smooth and silky, but as the aroma suggests, it has a pudding-like flavor and a moist sweetness that fills the mouth 🍮. On the other hand, it also has a slightly tangy and pungent acidity that gives it a lightness, so it has a good balance of depth of flavor and a sharpness that goes down your throat👍. In the latter half of the bottle, the astringent taste also comes out, so the flavor can be felt as caramelized. There are also the standard "Yokoyama Goju" and "Rokujyosu", and I remember that I had a lot of trouble finding a variety at the Nagasaki airport. I also drank Nagasaki sake several times, and it seems to me that the level of sake is as high as that of shochu 😌.

I had never seen this brand before, so I couldn't resist buying it. This is a sake brewery in Shunan City, Yamaguchi. There are about 1,400 sake breweries in Japan, so it's no wonder that there are breweries and brands that I don't know (there are more than 1,000 here). Even if I were to drink one brand every day for the rest of my life, it would take me almost 30 years (^_^;) It's simply impossible. This was an aside. The moment you put it in your mouth, the aroma is distinctive. I wonder what it is, is it the aroma of rice? In total, the aroma is fluffy, the taste is tangy, and the sweetness is warm. I think it's delicious.

I bought it last year as a souvenir from Utsunomiya. It's been a while since I've had "out of the gate", but my taste buds have changed since the last time I had it, so I'm looking forward to it! When you open the bottle and pour it, it smells like citrus fruits and lychee. It is tasteless on the palate, but gradually the richness and mellowness of the rice comes out. The sweetness, spiciness, and astringency of the flavor are all present as soon as the lid is opened! Although it is a junmai ginjo, it has such a robust flavor that it may be served warm. The overtone is similar to that of "Shinkame" and gives the impression of a matured sake. The lingering aftertaste is well rounded as it quickly fades away. Overall, the shades of gray are exquisite, and the taste is quite interesting! In fact, the first sake I ever drank in my life was "Monkai Fude. I was actually the first person in my life to drink sake, and that drink at Kinugawa Onsen has led me to the present day.

Tonight's sake is a Shiraito Brewer's Nigori sake from the famous Shiraito Shuzo, which I had the pleasure of meeting at the brewery during my trip to Fukuoka in late May. When we visited the brewery, the proprietress and her little son were very attentive to us, and we were very grateful for the free tasting, which they usually don't do 😊 We bought a bottle of one of our favorites, so we're going to open it now 🙌! The rice polishing ratio is not stated, but I think it is more than 70% polished. The aroma has a soft lactic acid nuance that is not typical of sake. The taste is easy to drink with a slight sweetness of rice in the supernatant and umami flavor 😋 It becomes completely cloudy when mixed with a significant amount of lees, but it has a smooth mouthfeel and is more delicious 😋😋😋😋😋.

Tonight, I feel like I've been shvitzing at the gym for two days, but drinking this is a negative rebound, but when it comes to horse mackerel and monkfish sashimi, it's a MUST 🍶. I bought this 💁 at a brewery when I was in Fukuoka. It's Shiraito Sillite 70 ✨. Unlike Tanaka Rokujugo, this sake seems to be distributed within the prefecture, but it is a 100% Yamadanishiki Junmai sake from Itoshima, and when I tasted it, I enjoyed this lowest-purity sake 😋. The sake has a very clear and clean structure, with a hint of sourness from the ginjo aroma of the cucumber, and the rice is sweet and full. The finish is very crisp and very excellent. ☺️ It is best when it returns to room temperature from chilled. ⭕️

I'm opening another bottle today😍. My first Miyazaki sake. Everyone says Miyazaki is hard to get, so I popped in 🤣 I ordered it with Jidori Koko 👍. It's a bit sweet, but not too sweet. It has a modern umami taste, similar to a brand I've had before like Tsushima-ya 😋 It's quite refreshing and the sharpness disappears quickly 😋 It seems to be the only brewery in Miyazaki that specializes in sake 😋 It's delicious - thanks for making sake 😂.

Scoring: ☆☆☆☆ Miyazaki's only sake brewery specializing in sake, Chitoku Shuzo. It has a mild aroma with a good sweetness 😄. Refreshing drink with little lingering aftertaste. 😋 A lightly flavored umami type, or perhaps an 🏠. Not much umami or bitterness lingering on the tongue. Easy to drink but needs one more punch😅. It has an old fashioned taste but with a modern drinking style😋. Quite a tasty sake😋. Tonight I'm having seafood nabe with oysters, cod and scallops 🎵👍
