I'm opening another bottle today😍. My first Miyazaki sake. Everyone says Miyazaki is hard to get, so I popped in 🤣 I ordered it with Jidori Koko 👍. It's a bit sweet, but not too sweet. It has a modern umami taste, similar to a brand I've had before like Tsushima-ya 😋 It's quite refreshing and the sharpness disappears quickly 😋 It seems to be the only brewery in Miyazaki that specializes in sake 😋 It's delicious - thanks for making sake 😂.

Scoring: ☆☆☆☆ Miyazaki's only sake brewery specializing in sake, Chitoku Shuzo. It has a mild aroma with a good sweetness 😄. Refreshing drink with little lingering aftertaste. 😋 A lightly flavored umami type, or perhaps an 🏠. Not much umami or bitterness lingering on the tongue. Easy to drink but needs one more punch😅. It has an old fashioned taste but with a modern drinking style😋. Quite a tasty sake😋. Tonight I'm having seafood nabe with oysters, cod and scallops 🎵👍

This will be the last sake I drank at Fukuzo. For those of you who think "How much have you had to drink? I think so too😅. The first aroma is sweet with classic acidity. It has a full-bodied sweet flavor with a hint of acidity on the palate. It's also a great costumed honjozo that you don't feel like it's been soaked in alcohol 😋. It was delicious 🍶✨. Thank you for everything, landlady 🙇🙇🙇.

Tenma Daijukai (¡°Tenma Sake Association¡±) This sake is named after Governor Yoshimura And an illustration of a mysterious person on the label Where is Governor Yoshimura? Where? It's a very typical mature, slightly dry junmai sake, and it's good warmed up. It's the type of sake I'd like to drink on a regular basis, but it's more of a souvenir. I misunderstood. I'd like to buy it if it were available!

Tenma Taishukai 2024 ④ The day before, I tasted Sakakamatsu from this brewery at a liquor store in Ikuno Ward. He asked me if I was going to the Tenma Sake Festival. I've been to this brewery and bought sake before. I think it was a brewery in Osaka, but closer to Wakayama and near a fishing port. I drank Junmai Ginjo Natsusei Nemuchi-san confirmed with the brewery that it was the same Sakakamatsu Natsusei that I drank the day before. Hmmm? When I drank it the day before, I had the impression that it was a summer sake with good flavor and drinkability, but something is different... Is it the temperature range? It seems too thin or too light 🤔. Summer Ginjo This is also a summer sake. Similar to Junmai Ginjo, but this one is spicier.

I bought it by weight the day after the Hankai Train Off-line Meeting. I took this opportunity to buy it because Miyakotsuru's draft sake is rarely distributed. This is an annex of a store in Fushimi that sells all of Fushimi's sake in Nihonbashi, Osaka. I wonder if the sake brewers' association is involved? The bottles come in various sizes and labels, and you buy the bottle you want and pour it. You pour the sake yourself, but since I was right on the 300 ml mark, I received a sake cup as a "Pitari" prize. The taste is melon-like with a clean mouthfeel. The long, thin and extended acidity is impressive. It is a little light and has a sweet and spicy flavor. After about a week, the flavor seems to have opened up, or rather, the flavor profile has become more defined.

Go-around Rokkomichi 1/5 It was my first time to participate in a go-around! I was excited and thrilled from the morning. I couldn't work today... lol. It was like a field trip for adults. I visited 5 stores in the Rokko-michi area in Kobe! First of all, here is the shaken sake. As I stood nervously at the counter, my neighbor spoke to me. He said, "How many restaurants have you been to?" I said, "This is the first one. It's kind of nice, isn't it? This is my first time drinking Miyakotsuru. It is very dry. It is light. I asked for breast meat with kombu-jime egg yolk and chicken skin with wasabi and soy sauce. I thought it was a little strong. But it goes well with sake! This time, the theme for me was "matching the dish". I'm on the train now on my way home. Because I have to work NOW tomorrow.... I'll be posting more soon.......!

Akashi-tai Junmai Daiginjyo Genshu Rice used: 100% Yamadanishiki produced in Hyogo Prefecture Rice polishing ratio 38 Alcohol content 16 Capacity 720ml Degree of sweetness/spiciness: Sweet/Hot/Hard How to drink: Cold or room temperature (7-15℃) 720ml, approx. 4,500 yen Matching dish: Beef shank stewed in spicy Japanese style Bought at a brewery in Akashi. A sake that has won various awards. There are many, so check it out yourself! The aroma is fresh and elegant sake aroma. And what is worth mentioning is the taste. You can taste the sweetness of apples and white peaches and the refreshing acidity of pears. Very fresh and fruity. The aftertaste disappears quickly. A refined, fresh, and lush sake. I would like to give my personal impression, so here is my general comment. Overall review ~ S~. If you like sweet, fresh, fruity and refreshing sake, you should try this. I don't want to say "this one", I want you to drink Akashitai. It is a gem that should be enjoyed not only by drinking, but also by rolling it around on the tongue like a wine. It is one of my top five favorite sake. If you like sweet Akashi-tai, please drink it.

Akashi Taihai Unfiltered Honjozo Nama Sake Akashi Sake Brewery Co. alc. 19 degrees, rice polishing ratio 70%. 720ml, about 2000 yen (I think it was about...) Pairing: Bonito Tataki Sake limited to the Visitor Center. Maybe there is an official mail order...? Well... all I can say is that it tastes good anyway. Is it true that it has a high alcohol content...? Is this...? It's so refreshing! It has a smooth and soft sweetness. It is easy to drink, like milk. It tastes great chilled or slightly lukewarm. The alcohol taste is felt because it is a pure sake, but it tastes even better than that. The aroma is orthodox, as is often the case. The aroma is orthodox, as is often the case, but there is a slight berry-like sweetness.... The aftertaste is also refreshing, and the alcohol content is high, but it goes down well. It is very easy to enjoy. I think this is one of those drinks that even people who don't like alcohol can enjoy. I want to praise it a lot, but... General Comment ~ S~. Delicious, but I personally prefer the Akashi-tai Junmai Daiginjo. Akashi-tai itself should be enjoyed by everyone. It's not a habit, it's refreshing, sweet and sour, but I would recommend it to everyone. Akashi-tai should be advertised more to raise its name recognition. Drink it!

Akashitai Unfiltered Junmai Nama-shu Akashi Sake Brewery Co. Rice polishing ratio 70%. alc. 17 degrees 720ml 3000yen (I think it was around ......) Matching homemade smoked pork belly and garlic cheese Sake bought at Akashi Sake Brewery. Maybe seasonal, limited sales route...? It is sweet, sake-like and delicious. It has a full-bodied, umami flavor. The aroma smells a little like alcohol. The aftertaste is very sake-like and alcoholic. Food is difficult to find 🤔. Personally, I think it's for sake lovers to drink sake slowly. Rating ~ B Tasty. Delicious, but personally I found it difficult because I want to match it with food.... I'd give it a B, but that's a bit harsh since it's limited. If you look at the taste alone, it's an A...

Tonight's sake is a Shiraito Brewer's Nigori sake from the famous Shiraito Shuzo, which I had the pleasure of meeting at the brewery during my trip to Fukuoka in late May. When we visited the brewery, the proprietress and her little son were very attentive to us, and we were very grateful for the free tasting, which they usually don't do 😊 We bought a bottle of one of our favorites, so we're going to open it now 🙌! The rice polishing ratio is not stated, but I think it is more than 70% polished. The aroma has a soft lactic acid nuance that is not typical of sake. The taste is easy to drink with a slight sweetness of rice in the supernatant and umami flavor 😋 It becomes completely cloudy when mixed with a significant amount of lees, but it has a smooth mouthfeel and is more delicious 😋😋😋😋😋.

Tonight, I feel like I've been shvitzing at the gym for two days, but drinking this is a negative rebound, but when it comes to horse mackerel and monkfish sashimi, it's a MUST 🍶. I bought this 💁 at a brewery when I was in Fukuoka. It's Shiraito Sillite 70 ✨. Unlike Tanaka Rokujugo, this sake seems to be distributed within the prefecture, but it is a 100% Yamadanishiki Junmai sake from Itoshima, and when I tasted it, I enjoyed this lowest-purity sake 😋. The sake has a very clear and clean structure, with a hint of sourness from the ginjo aroma of the cucumber, and the rice is sweet and full. The finish is very crisp and very excellent. ☺️ It is best when it returns to room temperature from chilled. ⭕️

Get it at "Marugoto Kochi" in Ginza, Tokyo❗️. I had never heard of this brand before, but it was delicious ❣️. The rice used was something from Kochi Prefecture. It has a fresh citrusy taste like a fresh sake, with a rich mouthfeel, but it goes down smoothly. The aftertaste is clean and crisp. If I had to say something, I would say that I would like a little more sweetness, but it is just right for light drinking.

Second day of Kochi Night. The cab driver told me that Hirome is good, but for bonito, I should go to Matsuri Jaya. He advised me to go to Matsuri Jaya for bonito, as it has a good selection of alcohol. So we went to Matsuri Jaya. At first, we started out with regular sake, just like a normal drinking party in Kochi. The staff at the restaurant recommended various temperatures for drinking. The first sake is Fujimusume, which I have never tried before. Slightly spicy and umami-guchi (flavorful), it was a perfect match for the thickly sliced salt cod roe. The special sake cup is also cute! But from here, I sank into the swamp of Kochi sake.

The last stop on our Nikko train trip was the real face of Katayama Sake Brewery. We visited the brewery and had a tour. It is a small brewery and the cold brewing process is about to begin. The brewer who guided us around the brewery told us that the sake is carefully brewed using the Sase method. The fourth photo shows the sake being squeezed in the vat. The alcohol content is 19%, so the sake has a certain weight, but I did not feel much alcohol. The Junmai is sitting in the fridge, so I am looking forward to that as well 😊.
