The spiciness, sweet umami, and moderate acidity come quickly, and while enjoying the aftertaste, the bitterness comes unexpectedly.
It is similar to the first sake released from the brewery, but I think this one has a clearer outline.
I think Doukan is stable in its line of slightly sweet umakuchi at first and finishes with bitterness.
Like Okura and Tamagawa, if the direction of the flavor is consistent, we can drink it with peace of mind.
Anyway, Shiga sake is generally very tasty.
I ordered this sake because it was from Shiga but with a label I had never seen before 😃.
The difference in taste between Shiga's Doukan and Nada's Chiyoda Kura is a matter of taste preference, but this sake has a more distinctive character among Doukan.
The base was clean and clear, and I felt Doukan, but I wonder if it is an off-flavor?
The aroma on the palate was unique, like an old, aged wine just out of storage. It was a little 💦.
It was a little too much for me, but I thought afterwards that I could expect the aroma and taste to change if it were heated up 🤣.
Moderate aroma
Light and watery on the palate. Rice sweetness and acidity can be felt, but the sweetness of the rice lingers in the aftertaste. Overall, the finish is light for a pure rice wine.

I always wanted to try this sake because I like Chiyoda Kura, and I couldn't find a place where I could buy it, so I bought it at the brewery.
It has a strong acidity, but I like it.
