Representative brand is Kaisen. ◉Tamura Junmai Ginjo Tamura Junmai Ginjo is made from Iwate Prefecture's Gingin Gin. It is a rich, mellow, sweet and umami type of sake, with a deep, full-bodied flavor. It also has a slightly complex, rustic flavor. The Tamura series does not limit itself to any specific sake rice, but uses carefully selected sake rice from all over Japan in pursuit of the depth of flavor that comes from the "difference in rice".

I have had it, but this will be my first post on sakewa. I had an image of Kunika as light and dry, but it has a sweetness with a banana🍌 feel. It also has a melon-like melon sensation after a day. Purchased at Vinos Yamazaki in Kyoto after buying Daina at a liquor store in Saiin After this, I went back to the liquor store on the 2nd floor of the Yaichi main building and to Takimoto - Isetan 😊. I really wanted the Vinos limited edition Isoboast, but the date was a year ago, so I avoided it💦. It's also February 24 😅. I thought about how to read "kunika", "kokka", etc... but when I looked it up, it's "kokkou". Reminds me of Cocco for my generation 🤔. Drink at room temperature. It's lightly colored. It's been almost a year, but there's no sense of aging. It has a classical flavor and a little lactic acidity, but it's still light and refreshing. I'd like to try some of their raw sake, though I didn't have any this time. Like Isobojiman, I think Shizuoka sake is a good choice for me 🤔. I was saddened to hear that this brewery is already out of business 😿.

At home. First time in Gifu, Shirakawa-go. It's very thick, even among the nigorizake I've drunk. The aroma is like sweet sake. When you put it in your mouth, you can feel the sweetness of the rice and grain, and the sourness. The texture is tart and leaves a little residue on the tongue, but it's not unpleasant. I think it is best served on the rocks.
