Saitama Pref. Iruma-gun. Asahara Sake Brewery Co. Biwa no Sasanami Junmai Namaisake. I went to buy the pre-sake I wanted, and since that was the only sake I was sorry to buy, I bought Saitama sake, which I rarely have a chance to drink. When I was trying to decide which one to buy, the owner laughed at me at the cash register, wondering why I was looking at the back label so much. I told him I don't like anything too spicy, and we chatted for a bit. I had it cold. When we poured it into the glass, there were quite fine microbubbles adhering to it. It is clear with a faint yellow tinge. The top aroma is slightly malty and slightly apple-like. The mouthfeel is juicy, full, and smooth. The palate has a slight sweetness from the rice on the tongue and a mild acidity that flows gently through the mouth. The juiciness is followed by a refreshing taste. It has a malted rice aroma that spreads when it passes through the nose. The aftertaste is a bitter and bitter taste with a slight spiciness that lingers for a short time. The sake has a sharp taste after passing the throat. Rice polishing ratio: 70%. Alcohol content: 15%. Homecoming Series 13 Hitachi City, Ibaraki Prefecture is home to Shiina Sake Brewery's Fukushin. It is a pure Ibaraki local sake made from 100% Hitanishiki produced in the prefecture! The specs are a special junmai sake with a rice polishing ratio of 55%. While the aroma is subdued, the taste is a robust sake that hits the right notes of rice! The aroma has nuances of young melon and white bean flour, the acidity is not strong, and the taste is easy to drink with a medium attack and a slightly long finish. For my taste, it is my favorite type. It is too hot to warm up today, but I will add my comments on heated sake later.

Tomikushin's summer sake, which was absent last year due to lack of Miyamanishiki This year's resurrection is a special junmai, unfiltered, unpasteurized sake brewed with Hitanishiki Ogawa yeast instead of Miyamanishiki. Soft and gentle taste and aroma. It has a good ripeness and full-bodied flavor. It has a cocoa flavor that is somehow delicious! It is easy to drink and has no curdle. I heard that this year, they tried to use Ogawa yeast for the sake competition and missed out on a prize, but I hope they keep trying!

The acidity is citrusy with a crisp, bitter taste. Overall, it is a refreshing summer sake. It is well-balanced and can be drunk easily. The yeast seems to be different from last year's, and judging from the other reviews, it may be a different one. (It's also possible that my taste buds are wrong...) I bought it at the Kasumi Sosa store of the supermarket. To put it bluntly, it is a label purchase (laugh). Opened at room temperature, taste is so-called "umakuchi dry"? It seems to emphasize the sake-like quality more than the light dry sake. It is supposed to be junmai sake, but it seemed to have the atmosphere of a honjozo sake that contains brewing alcohol. This one, like the Ko-Imari, was purchased when I was with Yoohee-san. The rice is Matsuyama Mitsui. It has a melon-like taste and a strong bitter taste like bitter melon.
