We opened Aizu Summer. Light and elegant, with a gentle sweetness and a slight bitterness. It has a nice sharpness and is a delicious sake that you will never get tired of drinking!

When buying Aizu sake, I was attracted by the words "Dry Honjozo". The simple name "Aizu" also intrigues me👍. When I opened the bottle and poured it, the aroma was mineral and clear. The mouthfeel is soft and smooth. The dry, refreshing taste is balanced by the sweet, astringent acidity and the umami of the rice. Although it is a regular honjozo, it has a delicate, gorgeous flavor, perhaps due to the 60% rice polishing ratio, which makes it one rank above other dry honjoze! The soft and clean part is reminiscent of "Ding" ✨. It is also very cost-effective and tastier than I expected...! You can clearly feel that it is well-known as a local sake. I would love to drink it with codfish stew 🤤.

The rice used is Yamadanishiki from the Sato Plantation in Sosa City. It is said to be free of chemical fertilizers and synthetic agricultural chemicals. The sweetness is moderate. The acidity is citrusy with a crisp, bitter taste. Overall, it is a refreshing summer sake. It is well-balanced and can be drunk easily. The yeast seems to be different from last year's, and judging from the other reviews, it may be a different one. (It's also possible that my taste buds are wrong...) If that's the case, I look forward to it every year! This year's was my favorite type❣️.

This is a special Junmai Nama Genshu with a rice polishing ratio of 60%. First of all, the fruity ginjo aroma that is typical of freshly squeezed sake is a nice touch. The first impression you get when you drink it is a refreshing, fresh and gentle sweetness that only sake can provide. It's a sweetness like strawberries that I've never tasted before - I think this is a taste that only freshly pressed sake can give you. It's delicious!

Purchased at Aomori Iwate Shop I was attracted by the "limited edition" label and bought it reflexively. It is said to be slightly dry, but it has a mild taste. I also like that it doesn't have that much of a ginjo feel to it. Let's try it lukewarm when it gets a little cooler!
