This is a gifted Junmai Ginjo, a sake from Nagano. It's fruity but not sweet in the mouth, and it has a crisp and well-balanced bitterness... This quality goes well with "X" cuisine, not just raw sake.

This is the fifth brewery in Saku's sake brewery series. This is a rare bottle as it has recently met with a fire and is closed. We happened to find it at a one-day spa and secured it. It has a strong bitterness and acidity, with a tangy mouthfeel. It also has a sweetness, so it is not harsh. It is the best sake from Saku so far. It's a shame that we won't be able to taste it for a while. I hope they will do their best to bring it back.

It is "Iginjunsei" (酏吟純聖) Yamahai-brewed Junmai Ginjo by Mifuyu Shuzo. This junmai ginjo is made from Shiga Prefecture's Yamadanishiki rice polished to 55% and fermented at low temperatures using the Yamahai method. You can taste the unique acidity and robustness unique to Yamahai. It is also a great sake that can be served lukewarm. Purchased at Yamasho in JR Ashiya station. I mentioned before that this liquor store is based in northern Kyoto and has a wide selection of sake from the Tango area, but they also have Kumi no Ura. It is rather sweet. Muscat and lychee-like flavor. It is fire-brewed but fresh. I'd like to try some of their fresh sake. I'm sure it would be delicious. According to the internet, it's unfiltered raw sake. It's true that it's on the lees for a fire-brewed sake. Sediment is noticeable.

@sakebar Fukuzo Kobayashi Shuzo Honten located in Umi-cho, Fukuoka. I guess the representative brand is Bandai. This will be my first time here too 🍶. The first aroma is slightly sweet. Sake that I bought as my souvenir when I visited Minamisanriku Town. It has a dry dry taste with (in my opinion) a good amount of miscellaneous flavors typical of junmai sake. You don't feel it as you keep drinking. I participated in a storytelling session about the tsunami damage in Minamisanriku Town. I couldn't believe that a 22-meter tsunami had hit a four-story building along the coast. Even though I actually visited the place, I could not help but feel it when I saw the now calm sea. Hearing about that time always brings tears to my eyes. Perhaps it is because I am from Tohoku. To what extent does "reconstruction" mean?

Junmai Ginjo 🍶 Henohenomoheji 😅 All of it is made from Yamada Nishiki 🌾 without agricultural chemicals in its own fields. Fairly yellow, strong acidity, matured. Daruma Masamune-like. This is also my first Akishika Henohenomoheji, 100% Yamadanishiki, 17% alcohol, slightly yellowish and not spectacular, but with a delicious rice flavor. I like fruity sake, but I have come to like this sake as well. How about drinking it lukewarm? I would like to try heating it up, but it would be a waste, so I'm not sure.

I've always wanted to try a henohenomoheji. I found it at an izakaya I usually go to, so I tried it 💪. Grain aroma. The taste is quite robust with a gentle sweetness. The back end is astringent? It's good with a sharp finish 😋. I would like to drink it at various temperatures, but since it is an izakaya, I can't go that far 😇. I had it with Ara sashimi and it's great ‼️ I've never had ara before, but the meat is quite firm and filling 🐟. I have a faint memory of ara being in a delicious book 🤣.
