I had not had the pleasure of visiting Sado last year, but I found this at a liquor store in town when I wandered by. I was hooked by the power word "centrifugal separation" and decided to take it home immediately. This is a good sake. It is very soft and elegant on the palate. The rice is made from Gohyakumangoku with a 55% milling ratio, but it is beautiful, with the sweetness and flavor of the rice riding on the transparency of the 35% milling ratio. The aroma is banana-like. The taste is full of sweetness, but the gradual entry of acidity is clear and the balance of sweet and sour is pleasant.

Purchased at Yamasho in JR Ashiya station. I mentioned before that this liquor store is based in northern Kyoto and has a wide selection of sake from the Tango area, but they also have Kumi no Ura. It is rather sweet. Muscat and lychee-like flavor. It is fire-brewed but fresh. I'd like to try some of their fresh sake. I'm sure it would be delicious. I found my favorite Satochi at an Izakaya and couldn't resist ordering it😍. The smell of pears. It smells so good. It has a caramel-like sweetness and then a light sourness.
