This is a local brew from Fukushima that I got as a gift from a friend.......it's hard to find in the Kanto region unless you go to Tochigi.... This is a good choice for a midday meal.

The aroma of the food was very strong. But it is sweet and gentle, not harsh. It has just the right amount of maturity. Goes well with Nozawana. It softens the salty taste of Nozawana. Sake comparison at home! We chose 3 kinds of sake from "Fukumitsuya", a long-established sake brewery in Kanazawa. Fukumasa Munune Junmai Dry, Nama Zume. This was the first sake made with black malted rice. I felt a bit salty, but I wondered if this was the richness found in sake made with "black koji"? Wind, Water, Man, Junmai 9 It is a junmai sake with an alcohol content of 9 degrees Celsius and a refreshing taste. I would like to drink it with pasta or Italian food! Fukumaso Sake: Hyoketsu Nama-Shu Dry With a sake alcohol content of +10%, it has a very strong sake taste! I would like to drink it with a salty meal and sip it while neutralizing the taste. It was interesting to compare the different types of sake and to see the difference between them. ☺️

I was strolling around Fukushima-related stores to buy a gift for Mother's Day and to commemorate the end of Golden Work! I found this handy cup of sake 👍. When I opened the bottle, it had a clean sweet aroma of sugar cane. The mouthfeel is smooth with a round sweetness that sinks in. The mild umami has a banana-like flavor. The pungent spiciness comes from the clear taste. It has an astringent aftertaste that comes around the time of swallowing and an easy-drinking quality that disappears without a hitch, giving it a clean, calm taste without heaviness or clinginess! It is a beautiful and calm taste with no heaviness or clinginess! Don't underestimate it as a cup of sake...! This pleasant cup of Aizu Sake was so easy to drink that it made me feel again the power of Aizu Sake 😋.

Birthday gift alcohol, Part 2 It's called Sake no Wawa 50 check in. Ibaraki sake that Manachie hasn't had yet😊. It's clear, light, a little bitter and has quite a bit of sake feel to it. A little graininess. It is good to drink with soda or on the rocks. The more you drink red rice or ancient rice sake, the more you realize the greatness of Ine Mangaka 🤔.

I was impressed with the Miyamanishiki Hi-Kiri that I had previously tasted, so I tried the nama-shu as well. It is fruity, sweet and delicious, but a little refreshing. It also seems to have more acidity. The hi-ire version seems more cohesive, but I personally prefer the nama-zake. It tasted good when it was first opened, but on the third day, it's not so good. The bitterness is getting much stronger. I think I would prefer the more stable fire-roasted version.

We used Go To to Echigo Yuzawa. So_1F3D4 brand and Naebayama brand that I don't remember seeing in Tokyo to match the local cuisine of the hotel. Junmai-Ginjo sake with Junmai-Ginjo specifications. The gentle aroma, the sweetness, and the refreshing finish give me the impression that this is a "Niigata's local sake" as I have always imagined it to be. In terms of Niigata brands that you can buy in Tokyo, I'd say it's similar to the Junmai Ginjo specs of Tsurueri or Kubota. If I tasted it, I'd never be able to understand it myself... After all, coming on a trip and pairing it with local food is the best part of local sake 👍.

The rice used is Gohyakumangoku and Koshibuki. My first impression was "It's sweet. ❣️ I felt that "Kosu-Mori" was also quite sweet for me, but it seemed more profound than "Kosu-Mori". It is like licking a muscat candy. The finish, however, is crisp with just the right amount of bitterness, so the sweetness doesn't linger and it feels refreshing. It is a delicious drink, but I think it is suitable for different situations.
