La Chante the other day. I first learned about the sparkling LaChante when I visited Akita. Poured into a champagne glass, the beautiful appearance of bubbles rising from the glass is champagne itself 🥂. It is brewed with 100% Akita-Komachi and water from the Ou Mountains. It tastes like sweet champagne 🍾. But I personally didn't like the aroma. It smells a bit like glue for a moment after you take a sip from the top of the bottle. It's so perfect that it's hard to believe it's made from rice, but compared to real champagne (not that it needs to be compared), it's less subtle and has a strong rice carbohydrate feel (which is a good thing).

The sake that Rafa ordered. I exchanged it for the sake I ordered and drank some. The rice is said to be modified Nobukou. Unlike the straight kumi-style sake, it is calm and has a mild sweetness. It is more like a classic sake. The official website says it is about -7, so I think it is more on the sweet side. If you think of it as the standard sake of the brewery, it is quite high. It seems that Rafa has a connection with Satte City, where Toyoake's brewery is located, and I thought such an episode was interesting.

This sake is sold by a united effort of breweries in Ishikawa Prefecture. The sake store I visited had two varieties, Kochira and Tedorigawa. Hoping for the recovery😌. It is a medium, slightly sweet delicious sake with a smooth texture. Microbubbles at the bottom of the glass. The mild aroma reminds me of green apple and the fresh sweet and sour taste is impressive and refreshing. Very tasty.
