I was impressed with the Miyamanishiki Hi-Kiri that I had previously tasted, so I tried the nama-shu as well. It is fruity, sweet and delicious, but a little refreshing. It also seems to have more acidity. The hi-ire version seems more cohesive, but I personally prefer the nama-zake. It tasted good when it was first opened, but on the third day, it's not so good. The bitterness is getting much stronger. I think I would prefer the more stable fire-roasted version.

Rooster Yoemon from Kawamura Sake Brewery in Hanamaki City, Iwate Prefecture. This sake is famous for its sour taste, which is rare in Iwate Prefecture. I drank it for the first time at a store in Hanamaki and was surprised by the sourness. It seemed to be quite a challenge since Iwate is generally known for its sweet and tasty sake. I asked him, "Okay, what time? I asked him what time, and he said noon. There are not many places near my house where you can drink from noon, so we ended up going to Noge. First "shellfish" restaurant I've ever been to. Kikuyu with hot sake (it was a little cold and rainy) 🍶. My oldest son's wife is a sake drinker, so it was perfect! This is my first time drinking it! And I don't usually drink it hot, so I don't know what it is, but it's nice 😋. I can feel the acidity. And the aroma comes in fluffy. I guess I was right in heating it up. Don't eat too much, let's go to the next restaurant!
