This is the fourth bottle of the accumulated contributions! As I poured, bubbles danced through the gulp, and those bubbles quickly disappeared. It smells sweet and spicy. Bon appétit! I thought it smelled acidic, but when I put it in my mouth, I felt almost no acidity and it is a gentle, soft drink. I don't feel any corners at all 🙂. The assertion is somewhat moderate sweet and spicy, and the light sweet and sourness spreads from the tip of the tongue to the middle of the tongue, but then disappears. Among the sake I've had recently, the drinkability is outstanding, and it doesn't convey much of the intoxication, making it quite a dangerous sake 😇.

We were honored to have the opportunity to visit the Umaue Sake Brewery in Hiroshima ❗It's a rare sake to drink, and we had to have another one 😉. So this one is made with Ginpu! Tenryo, which I ordered at a meal on my trip. It was a freshly brewed and stored Honjozo brewed with Hidahomare. I usually don't drink Hidahomare, Honjozo, or Nama-Seizou, so I thought it would be a good opportunity to drink it. The color was crystal with a slight yellow tinge. The aroma is quite mild, with mineral and earthy notes. When you drink it, it has a slightly fruity overtone. Next comes a sense of minerality and a hint of sweetness. There is also a slight white ball-like feeling. The acidity is smart and not too assertive. Bitterness appears a little at the end. The lingering aftertaste is pale and slowly fades away with the bitterness. As is typical of honjozo, it has the sake-like flavor that is generally imagined by those who do not normally drink sake, but it is a food sake with a fruity character that is typical of freshly stored sake. It's meant to be served at ryokans, as it goes perfectly with fish, vegetables, and other Japanese dishes! I've been drinking a lot of sake that can be drunk on its own, so I'm very satisfied with my first "food sake" in a long time! It may not be a hit with those who only accept easy-to-understand sake, but for those who like dry sake, or those who want to enjoy a marriage between sake and food, or to complement food, this is a naturally delicious sake.

I stopped by the brewery for the first time in a while. I used to have a special fire-brewed junmai and a sake called "Mariko no shu" which is named after the female toji (master brewer?). Both were quite dry, classical sake. Both were quite dry classical sake, and I had the impression, for better or worse, that this is what local sake is supposed to be like. This was probably my first nigori sake, but it looked delicious, so I bought some! I wondered if the beautiful woman at the sales counter was Mariko herself? It has a classical aroma with a banana feel. It is more of a hint than a standing aroma. It has a classical taste and is dry, but you can drink it by itself if you want! It is very easy to drink because it has a lot of turbidity, which gives it a strong umami flavor and makes it easy to taste the sweetness. I drank it with kimchi nabe (kimchi stew), and I think it goes well with strong flavors and nabe dishes! It also seems to go well with meat, and I am sure it would go well with ginger-grilled pork or chicken steak. I imagine it is like Kikuhime nigori or Tamagawa nigori! To be honest, I think it's one of the best in the Koshu Plum Grove, so I'd be happy to buy a bottle and drink it slowly. It can probably be stored at room temperature until early spring.

☀️ Masamune hunters go today🍶. I found an undrinkable Masamune at "TABI BAR & CAFE SUZUVEL" 😆. It is a Masamune brewed by Obata Shuzo, famous for Manotsuru. It has a mineral aroma 😳. Clean herbal mouthfeel 🌿. The aroma is so rich that the sensation of sake fades 🫥. Rice flavor🌾 masks the sweetness and acidity, and the ginjo aroma stimulates the nose. It leaves a slight bitterness and astringency in the aftertaste🙄. It was a new drinking experience with a unique flavor 🤗. How cool to "speak without speaking" 🤩. I thought I should come up with a catchphrase like "Nice Masamune without talking about it" ❓🤣. Nice Masamune👍
