This is the fourth bottle of the accumulated contributions! As I poured, bubbles danced through the gulp, and those bubbles quickly disappeared. It smells sweet and spicy. Bon appétit! I thought it smelled acidic, but when I put it in my mouth, I felt almost no acidity and it is a gentle, soft drink. I don't feel any corners at all 🙂. The assertion is somewhat moderate sweet and spicy, and the light sweet and sourness spreads from the tip of the tongue to the middle of the tongue, but then disappears. Among the sake I've had recently, the drinkability is outstanding, and it doesn't convey much of the intoxication, making it quite a dangerous sake 😇.

At home. This is my favorite Sei Masamune. This is a seasonal sake from spring to summer of Onikoroshi, the main brand of the Uota Shuzo brewery. It is a junmai daiginjo unfiltered raw sake that is stored in a snow cellar. It is sold at the brewery, at a roadside station in Kiyomi, Takayama City, and at supermarkets in Takayama City. The color is hazy with lees, and it has a rich aroma of rice like doburoku. The rich flavor is reminiscent of onikoroshi, and the sweetness spreads out from the rich umami. It is one of Misobagi's favorites with a long-lasting aftertaste.

National Sake Fair 2025 Day 2 ㉚ Gifu ⑥ Oda Sake Brewery in Takayama City I remember drinking vacuum-packed sake at the Japanese Sake Festival. Annual shipment is 700 koku. They say they are the originator of many Onikoroshi sake breweries in Japan. I think the real brand name is Hida-boast. It's under the umbrella of Hidagura Corporation, a sake brewery revitalization company. Polishing ratio 58%, Hidahomare 18-19%, Sake degree +10, Acidity 1.9 Amino acidity 1.9, 901 yeast, 1754 yen. It tasted sharp and dry 😅.

The 5th Sagajo Shoten Presents at the 5th Bishushu Raku Kushan Shokai 😃. We were honored to have the opportunity to visit the Umaue Sake Brewery in Hiroshima ❗It's a rare sake to drink, and we had to have another one 😉. So this one is made with Ginpu! Tenryo, which I ordered at a meal on my trip. It was a freshly brewed and stored Honjozo brewed with Hidahomare. I usually don't drink Hidahomare, Honjozo, or Nama-Seizou, so I thought it would be a good opportunity to drink it. The color was crystal with a slight yellow tinge. The aroma is quite mild, with mineral and earthy notes. When you drink it, it has a slightly fruity overtone. Next comes a sense of minerality and a hint of sweetness. There is also a slight white ball-like feeling. The acidity is smart and not too assertive. Bitterness appears a little at the end. The lingering aftertaste is pale and slowly fades away with the bitterness. As is typical of honjozo, it has the sake-like flavor that is generally imagined by those who do not normally drink sake, but it is a food sake with a fruity character that is typical of freshly stored sake. It's meant to be served at ryokans, as it goes perfectly with fish, vegetables, and other Japanese dishes! I've been drinking a lot of sake that can be drunk on its own, so I'm very satisfied with my first "food sake" in a long time! It may not be a hit with those who only accept easy-to-understand sake, but for those who like dry sake, or those who want to enjoy a marriage between sake and food, or to complement food, this is a naturally delicious sake.

This brewery was closed in April this year due to the effects of Corona and other factors. It is said that there is no reopening schedule, so it is practically closed. The official site has disappeared, and it looks like the company has been sold. It would be nice if the company that bought it would let it reopen... It's a rich, umami type that's different from the general image of Niigata's sake. It has a sweetness from the rice. As it has won a gold medal, I'm sure this sake would be delicious warmed. If the name of the sake rang a bell, you're right 👍It's an amazing sake that has taken the name of a famous book. Denemon is a sake brewery brewed by just one person. The name comes from Michel Carouge's famous book "The Bachelor's Machine," which is cited as the bible of the master brewer. It is also related to Marcel Duchamp's "The Bride Naked by Her Bachelors, Even (a.k.a. The Big Glass)". When I think about the sake rice "Aizan," I can see the image of this sake being brewed with love while loneliness, loss of humanity, and the desire for barren love cross the mind 🧐. Today we are going to start with our special bird ❤️ no doubt👍and our favorite gateau rusk🥰Carouge & Duchamp, so it's like a French 🇫🇷... ❤️ By the way, this "bachelor" is not sweet at all 🤘 it is rather tangy and spicy, and has a sharp taste, leaving a bitterness that is typical of Aizan. But it is not too alcoholic, and is indeed easy to drink 🧐. When paired with the rusk with pomegranate on top, the sweet and savory flavors are gradually felt. The flavor really changes depending on the food.
