It has a sweet aroma from the moment it is poured, and when you take it into your mouth, the sweet and umami flavors quickly run out, leaving you with a gentle, smooth, and clear image of the after-flavor! Whether it is the water or the brewing method, I am addicted to this clear aftertaste! With only one month left in this year, I'm getting drunk and thinking that it's time to narrow down the bottle of 2022 that I will choose 🍶.

To compete with them with seafood, We consulted with them in advance about "Uchiwa Shrimp" caught in Hirado, Nagasaki. We consulted with them in advance and asked them to secure it for us at the market. We had them as sashimi. It was like a smaller horseshoe crab. They were very pleased 😁. Now for the 🍶... Tonight's sake is a Shiraito Brewer's Nigori sake from the famous Shiraito Shuzo, which I had the pleasure of meeting at the brewery during my trip to Fukuoka in late May. When we visited the brewery, the proprietress and her little son were very attentive to us, and we were very grateful for the free tasting, which they usually don't do 😊 We bought a bottle of one of our favorites, so we're going to open it now 🙌! The rice polishing ratio is not stated, but I think it is more than 70% polished. The aroma has a soft lactic acid nuance that is not typical of sake. The taste is easy to drink with a slight sweetness of rice in the supernatant and umami flavor 😋 It becomes completely cloudy when mixed with a significant amount of lees, but it has a smooth mouthfeel and is more delicious 😋😋😋😋😋.

The sake has a very clear and clean structure, with a hint of sourness from the ginjo aroma of the cucumber, and the rice is sweet and full. The finish is very crisp and very excellent. ☺️ It is best when it returns to room temperature from chilled. ⭕️

In the latter half, the sourness comes from the umami. Then it finishes with a kick. After swallowing, the chest is chilled. If you combine it with pear Hmm? It was a bit salty and sour! When I combined it with Satoya's "Tamayura"... It's so good 😘! I loved this pairing 💕 By the way, "Tamayura" is... A famous Yamagata confectionary "Noshibai" made with white bean paste and agar, topped with Japanese raw chocolate. Very delicious 🥰. For lunch, I had a quick ramen (ramen).
