The same mild aroma as the first sip, soft rice flavor and moderate sweetness spreads with a little acidity, and finishes quickly with a hint of bitterness and a little alcohol spiciness. Overall, it is refreshing and easy to drink. It is good for accompanying a meal, but it may be too smooth as a stand-alone sake. The taste may have changed since the one I bought from a brewery in Ehime this time last year came out of the fridge. It went well with spicy grilled minos and Umaibo shrimp mayonnaise flavor.

This sake was given to us by a visitor to Kobayashi Sake Brewery in Niigata, which is famous for its signature Akita dog. It is slightly sweet and has a subtle rice flavor, and although it was made in December 2010, it does not have an aged feel and is refreshing and easy to drink. It has a slight peach and lactic acid flavor. I think it is one of the most delicious alcoholic sake.

I went to Yamagata for the first time in a long time😊. I was allowed to drink sake at my uncle's house. Mellow and sake-like sake, just the way I like it for everyday drinking 😊. There was also some Asahitaka at night, but I don't remember drinking it. I forgot to take a picture 🥲.

We ordered at Benkei no weibasho, an izakaya near Niigata Station. This restaurant is operated by a local conveyor-belt sushi chain, and we were informed that their seafood dishes are sure to be good, so we made a reservation and visited. I was curious about this sake at Ponshukan, where I had wandered around during lunch. Niigata is known for its dry sake, but this one is quite fruity. It is not too sweet, so it goes well with sashimi. I mean, too much throat groyne!

It has a light smoky aroma, just like Kenpachi. We ended up drinking it cold, but it was recommended to be served lukewarm. It suddenly got cold yesterday. But I think daikon radish tastes best around this time of year. Starting with cold sake and warming a glass to lukewarm seems like a good idea 🍶. Sake from Sado is never a miss 😋.

Shikoku x Sake Country 2025 Sake Brewery Wonderland On Osaka⑤. The booth of "Kaze no Sato" in Ehime. After suffering tremendous damage from the torrential rains in western Japan in 2018, the brewery decided to revive itself with the support of local people, fellow members of the sake brewers association, and volunteers. The brewery has recovered through crowdfunding and other means, and this one is also not to be found in the Kansai region. Junmai ◉ Junmai The aroma is a bit peculiar. It may be an off-flavor. The flavor is firm and a bit nutty. They say it is recommended to be heated. Junmai Ginjo Not too much sweetness and umami, but a mild acidity. Junmai Daiginjo Uzu The aroma is a little subdued, and the sweetness and umami are refreshing, the type of sake that goes well with river fish. Junmai Ginjo-shu Sakurahime A junmai ginjo-shu brewed with Sakurahime yeast. It has a clear, sweet and umami taste with a clean and refreshing aftertaste. When I told him that Sakurahime yeast is not cherry blossom, he said yes, it is a flower called delphinium. The Ehime booth was set up by the sake brewers' association, and everyone was wearing the same shirt, light pink vest and pants, which bouken-san said looked like Junrei.

I'm opening them all up because they are overstocked😅. I couldn't buy it last year and have been waiting for a year. The one I had at the Japanese sake festival was very subtle so I wanted to make sure 🤔. Fresh and fizzy. It has little sweetness, but the gasiness on top of the bitterness is very nice. I'd like to try the sake made with Kame-no-o that comes out around spring.
