National Sake Fair 2025 Day 2 ㉚ Gifu ⑥ Oda Sake Brewery in Takayama City I remember drinking vacuum-packed sake at the Japanese Sake Festival. Annual shipment is 700 koku. They say they are the originator of many Onikoroshi sake breweries in Japan. I think the real brand name is Hida-boast. It's under the umbrella of Hidagura Corporation, a sake brewery revitalization company. Polishing ratio 58%, Hidahomare 18-19%, Sake degree +10, Acidity 1.9 Amino acidity 1.9, 901 yeast, 1754 yen. It tasted sharp and dry 😅.

This is the fifth brewery in Saku's sake brewery series. This is a rare bottle as it has recently met with a fire and is closed. We happened to find it at a one-day spa and secured it. It has a strong bitterness and acidity, with a tangy mouthfeel. It also has a sweetness, so it is not harsh. It is the best sake from Saku so far. It is a genuine Ibaraki sake made from Hitanishiki produced in Ibaraki Prefecture. It has an unadorned flavor, as is typical of Supin's sake. It is dry, with a short, refreshing aftertaste!
