Many local people do not know what kind of local sake is available, so as the Sake-no-Wa-Uwa-Uwa-tai, we brought some to the company's drinking party to convey the charm of this sake. This one was brewed by Nakajima Sake Brewery, a 100 stone sake brewery in Okunoto, using Azuma Sake Brewery's facilities in Komatsu, which is in the midst of the excitement of the Shinkansen bullet train opening. This is a seasonal sake from spring to summer of Onikoroshi, the main brand of the Uota Shuzo brewery. It is a junmai daiginjo unfiltered raw sake that is stored in a snow cellar. It is sold at the brewery, at a roadside station in Kiyomi, Takayama City, and at supermarkets in Takayama City. The color is hazy with lees, and it has a rich aroma of rice like doburoku. The rich flavor is reminiscent of onikoroshi, and the sweetness spreads out from the rich umami. It is one of Misobagi's favorites with a long-lasting aftertaste.

Mie Pref. Matsusaka City. Shinra Sake Brewery Co. Yumemado Tokubetsu Junmai Sake, undiluted. Purchased at a sake shop in Tsu City Station, where the brewer himself took us on the way back from the Mie Sake Event. It is a rare sake with a very small production. We will drink it cold. When I looked closely, I noticed something floating around in the bottle, probably the lees of amino acid clumps. The color is clear and dark golden, like amber. The top aroma is mushrooms, humus, and a slight roasted, aged aroma derived from malted rice. On the palate, the aroma on the nose is complex, with an axial strength that is typical of the original sake and a sense of nostalgic old, withered sake, with a mild acidity that would have been sharp without the sweetness, and a slight astringency and a slight umami taste. After swallowing, there is a skittish spiciness, and the sense of maturity is gone, which is a strange sensation. When I heated it up, it went from amino acid sweetness and mellow umami to a sharp dry aftertaste. This is a sake for connoisseurs. I learned a lot from it. The aroma is mild on the palate, and the flavor is somewhat nostalgic, but with a robust taste and a bit of character behind it. It was my first time drinking this sake, but I got the impression that it was a simple but very tasty sake I used to drink in the past. When heated up, the flavor became more mellow and different from that of cold sake. While everyone is trying to be modern and end up with the same old thing, this is a sake that is safe to drink and tastes like the old-fashioned way, I am thankful for the old-fashioned sake that I can drink with peace of mind. Although the type of sake is a little different, I felt happy to have found a new sake in the same Mie region as Miyamasugi, which I can no longer drink.
