I bought it because a liquor store in my neighborhood started handling Tajima. I was surprised at how fruity it was. It is fresh, moderately sweet, and delicious. It is a more modern sake than I expected. After drinking this after the first time, it feels more like a sake 🤔.

This sake was tasted at the Kobe Hankyu event and made a good impression, and was highly praised by Nemuchi-san. A liquor store in my neighborhood became a special distributor, but I was wondering why they didn't carry this sake. We opened a bottle of Daikoku that we bought today at Kado-ya Sake Shop. It is said that this sake is brewed with 100% Yamada Nishiki harvested in a special area of Hyogo Prefecture. It's rich and dry. The rich taste in the mouth and the long lingering spiciness are exquisite. I think it's a very cost effective sake.

This was the first time I drank Daikoku Masamune at home. I bought it at the direct sales counter of the brewery. The aroma is mild, but the taste is fresh and fruity. It was really good even when it was heated. The reinforced concrete brewery was demolished due to old age, and a prefabricated direct sales store was built on the site, with the rest of the land used for a convenience store and Marugame Seimen noodles. The rest of the land is used for convenience stores, Marugame Seimen noodles, etc. Now they are brewing in a rented part of Hakutsuru Brewery. At the time of the Great Hanshin Earthquake, the wooden warehouse collapsed, and the site of the warehouse was turned into an apartment building, which was named Daikoku Royal Heights.

Daikoku Masamune Junmai Ginjo Hyogo Yume Nishiki I like this sake very much😍. Calm and soft umami on the palate 😌. Gentle spiciness with a clean finish 😊. Overall, it's very cohesive and delicious 😋️‼️. The Sengoku I drank with it made me feel like a bit of a yankee 😆. Sweet and juicy is good, but I guess I prefer light and dry 🥰🥰. The last one I drank was also good, but This Daikoku Masamune was excellent👍🤣‼️.

The last stop on our Nikko train trip was the real face of Katayama Sake Brewery. We visited the brewery and had a tour. It is a small brewery and the cold brewing process is about to begin. The brewer who guided us around the brewery told us that the sake is carefully brewed using the Sase method. The fourth photo shows the sake being squeezed in the vat. There is no description on the 300ml bottle, but according to the official website, it seems to be called Shiboritate Nama-nihan-shu. It has a good balance of sweet and spicy and is easy to drink. It is truly exquisite. I think it is similar to the Shiroshika Classics Limited Nama-Nihan-shu. It's definitely better than the first unfiltered draft I opened.

Special sake that I got as a gift when visiting the shuzo. It is new year blended koshu released from the brewery every new year time. It blended the Daiginjo from year 1989, 2001 & 2013. Surprisingly, its still very light body - unlike other koshu which makes you too full. I like the aroma, while soy sauce and umami is significant, you can also feel the raisin, dried grapes inside. On palate it leans more towards coffee, toffee & dark chocolate. Serving hot is a good choice too.
