When I opened the bottle and poured it, it had a crisp aroma with a hint of apple. The mouthfeel is clean and dry, with a slight sweetness. At the same time, it has a gentle and mild sweetness. The balance of sweet and spicy sandwiches is just right, and the taste is like a candy and a whip. The combination of a clear, sharp quality and a hint of sweetness makes it taste like a peach! The way it fades away in the back of the mouth is also similar to the Akagisan, which is really my favorite ✨. This is the last of the "Tsuki no Rin" series I bought in Iwate. This is the last of the "Tsuki no Wa" series I bought in Iwate. They were all interesting and delicious 😌.

Personal preference among 4 types 4️⃣ I received a bottle of sake that has been stored at room temperature for a wacky long time... I tried to drink it but it was old sake ( ´-̥̥̥̥̥ω̥̥̥̥̥̥`) I got about 7 kinds of sake including Tasake and Jyushiyo... What a waste 😭😭😭 The sauce made with Tasake was delicious though 🥲.

profile iconI purchased it along with Hime-Nadeshiko when I visited Shiwa Sake Brewery. The aroma is subdued, with a hint of grain aroma, and has the atmosphere of a traditional sake. The taste is refreshing with a good balance of umami and acidity. The water used by Shiwa Shuzo is said to be soft and non-habit forming water, which gives Hiroki a dry but soft taste. We were very impressed by the earnest and simple personality of the owner. He told us that he has been receiving a lot of inquiries about Murasaki Sake recently, so he does not keep any stock of it in the brewery. I have had many brands of Murasakiu, but this is the first time for me to try Hiroki. I was told that while Murasakyu is brewed in a fast brewing process, Hiroki is made using a method called "sanki kokyu kyo yeast. Hiroki is named after Kiheiji Hirota, the founder of the brewery, with the aim of creating a sake that will be appreciated by a wide range of people. This Hime-Nadeshiko has a light fruity aroma of strawberries and pineapple, with a sweet mouthfeel and a good amount of acidity. It was a delicious sake that was very easy to drink, with a slight woody aroma passing through the nose as you drank it! Thank you for the treat!

Yesterday was windy and dry, so it looks quite difficult. (^_^;) Well, last weekend was the same event as last year (a welcome and farewell party for new and old branch managers of a regional bank). And what I brought to the venue was the same as last year, Ryuusen Yaezakura Junmai Ginjyo Nakakumi-Unfiltered Nama-shu (lol). Izumikin Sake Brewery recently received a prefectural governor's commendation, but it has not yet been released, so we served this sake to everyone. Like last year, it is a refreshing sweet-tart sake with a hint of sourness. Slightly sour. Slight sweetness. Slightly sweet. Slightly umami. The taste was beautifully balanced and stable. As if that wasn't enough, I went to the Fukuraiya Sake Shop in Morioka City to check out the special sake that was produced in collaboration with Izumikin Shuzo and Fukuraiya Sake Shop, as shown in the fourth photo! (@_@) (@_@) It seems to be a special sake made by bag suspension, and the brewery does not have any stock of it. We will have to wait until next year. (^_^;)

The second glass was a special junmai sake from Sakura Face in Morioka City. Sorry. Sakuraface is often included in all-you-can-drink plans at izakaya (Japanese style pubs), so I had that image in my mind. (^_^;) In fact, the all-you-can-drink plan is not so tasty, so my preconceived notions might interfere with my taste buds... (@_@) I changed my mind and took a sip. Oh, it is indeed a little more aggressive, but tasty in its own way. I don't think I would actively want to drink it, but I wonder if it would go well with food?
