I asked the manager, a familiar face on Imanaya's YouTube page, for a recommendation for a heated sake to purchase. This is delicious. I haven't had much in the way of heated sake, and the only brand-name heated sake I can think of is Izumihashi, but this looks like it could open up the world of heated sake! It has a rich flavor and acidity. It has a rich flavor and acidity. It's a bit harsh when drunk cold, but when it's heated it doesn't mellow, but the umami flavor seems to increase. I'm going to explore heated sake this winter.

Popping. Certainly strong bubbling. Personally, it is stronger than Kouei Kiku Snoclet. Lactic acidity, umami, and freshness. No punch. It's a delicate low-alcohol. The most sensational sake of the moment.

This is a comparison between Saku from Mie Prefecture and Zijima's Aizan. The same specs of 100% Junmai Ginjo from Aizan, also from Hyogo. Both are Aizan, but not too sweet, refreshing, dry and fresh. The Saku is more flamboyant, while the Zijima is more astringent, and both are easy to drink. I'm afraid of the sake of Mie Prefecture (๑˃̵ᴗ˂̵)
