On the palate, the texture of the liquid had a slight heaviness that is typical of unfiltered sake. The attack on the palate is medium-soft, deliciously spicy. There is a slight mild effervescence.
The bubbles spread a moderately refreshing umami flavor, which was followed by a bitter finish.
It is a refreshing medium umami spiciness that is not heavy but still satisfying.
Maybe it is because of the warmth, but it made me want to eat bamboo shoots stew.
