It's been a long time since I've had a YENOMI. I bought it at "Sake no Yamamoto" in Minami. Mimuro Sugi Dio Abita" Junmai Ginjo Unfiltered Harajuku (Yamada Nishiki) [Imanishi Shuzo, Nara]. It has a refreshing acidity on the palate. By the time it reaches the mid-palate, the umami in the back of the mouth quietly asserts itself. The acidity and umami are in excellent balance. It has a crispness that leaves only a dull, echoing aftertaste, and the taste quickly dissipates. It seems to go well with anything you eat, strong or light.

A series of drinks brought to a company drinking party without permission. It was purchased at "Sake no Yamamoto" in Shimanouchi, Minami. Kamo Nishiki Shagafuda-shu Kohsuisen" Junmai Daiginjo Shiboritate Unrefined Nama-shu (Omachi 80, Yamadanishiki 20) [Kamo Nishiki Shuzo, Niigata]. The mouthfeel is slightly sweet. Toward the mid-palate, it has a fruity acidity. It is slow to the last. As it sinks in, the sweet, deep flavor quietly seeps in. The balance between the gorgeous aroma, sweetness, and acidity is exquisite. Surprisingly low alcohol (13%) with this satisfaction.

A series of drinks that I took the liberty of bringing to a company drinking party. It was purchased at "Sake no Yamamoto" in Shimanouchi, Minami. Kaze no Mori ALPHA 1: Door to the Next Chapter" Junmai Unfiltered, Unpasteurized Nama-Shu (Akitsuho) [Aburacho Shuzo, Nara]. As one would expect from Kaze no Mori. And because it is an alpha variety, it has a pleasant effervescence from the mouthfeel. It is basically fruity, but there is a bit of bitterness along with sourness at the mouth. However, it is within the range of fruity. It is somewhat refreshing with a citrusy bitterness. From the mid-palate, umami spreads to the tongue, mixing with the bitterness and acidity to create a harmony of flavors. The taste slowly extends to the aftertaste. Oishiiiiiiiiiiiii♡!

On March 1, I went to Minami for a casual drink. We had our drinks at "Tempura Stand Ponkichi Sake Shop". Urauchi Chiebijin" Junmai Ginjyo Nama Sake [Nakano Shuzo, Oita]. The sweetness is soft. The sweetness mellows out the alcohol and bitterness. A fresh aroma like green apples passes through to the nose in the mid-palate. The aftertaste lingers slightly, but is surprisingly refreshing. When paired with a meal, it is surprisingly easy to drink. Only the sweetness and aroma remain, and they do not interfere with the food. It is a great accompaniment to food.

On February 19, I had a "ladyshine" with my colleagues at work. We had drinks at "Mingei Shubou Makisui". Nishinomon Miyamanishiki Series" Junmai Daiginjo Araubashiri Unfiltered Nama-Shu (Miyamanishiki) [Yoshinoya, Nagano]. It has a sweet mouthfeel, but there is a strong sake-like flavor hidden deep inside. It's like an alcohol taste with a strong sourness, similar to the umami and bitterness of rice, which I'm probably not good at... but it's all wrapped up in a gentle sweetness, and the taste of sake is very strong. But I think the gentle sweetness wraps all of them, and harmonizes them without erasing them. That's the full-bodied, sweet and tasty flavor you feel around the middle. By the time the sweetness fades away, the strong taste in the back fades away softly, and the acidity, which is also refreshing, remains slightly, and the aftertaste goes away sharply. Nice.

Mansaku no Hana" Mutsukemai Yamada-Nishiki 70" Junmai Yamada-Nishiki (pure rice) [Hinomaru Brewery, Akita]. The mouthfeel is tasty with sourness. The acidity extends into the aftertaste with a slight bitterness in the midpalate. It is fruity with a bitter taste like grapefruit.

Sotonomi with my usual partner on February 14. We had it at "Fish, snacks, and sake" restaurant "Yasen". Mutsu Hachisen Mutsu Hachisen Houjyun Chou-harai Special Junmai Unfiltered Nama-shu [Hachinohe Shuzo, Aomori]. It has a slightly sweet taste on the palate, and the bitterness mixed with the umami flavor is refreshing and refreshing. The aftertaste after finishing the bottle, the umami and bitterness with a sense of dryness spreads and leaves the body.

The sweetness is tucked away in the back of the bottle and is only slight. The mouthfeel is mainly sour and umami. Bitterness is accentuated to the extent that it does not become unpleasant. The aftertaste of umami and bitterness extends with a sense of numbness. This is a very well-balanced sake.

February 14, Sotonomi with my usual partner. We had dinner at "Fish, Snacks, and Sake" restaurant "Yasen". Tanaka Rokuugo" Nama Junmai (Yamada Nishiki from Itoshima) [Shiraito Shuzo, Fukuoka]. Sourness, slight umami, and bitterness come in the mouth. The bitterness mixed with the acidity is the main part of the flavor, but surprisingly it is not so unpleasant and the finish feeling is refreshing.

Contrast of sweetness and bitterness in the mouthfeel. The sharp, rich flavor continues until the mid-palate. The sweetness leaves after the mid-palate, and the bitterness lingers in the aftertaste. When I think of Midori-Label as having aged this, I am deeply moved by the mellowness that emerges from this point.

2023 Year in Review. Purchased at Grand Cercle, Liquor Shop, B2F, Daimaru Shinsaibashi. Shin Tsuchida Happy Hill" completely additive-free brewing, raw yeast (land rice cultivated Happy Hill) [Tsuchida Shuzo, Gunma]. We liked Shin Tsuchida K that we drank a while ago, so we chose this from the same brand. Rice is usually grown in rice paddies, but the rice used to make this one was grown in a field of soil! Historically, upland rice is said to be older than paddy rice. The first taste is a dry and mild one, followed by a mellow but firm taste. After that, a mellow but firm umami flavor sinks in. The aftertaste is light and light for a flavorful wine. It is very easy to drink and tastes great with strong dishes such as meat and oily foods.

2023 Year in Review. Purchased at Grand Cercle, Liquor Shop, B2F, Daimaru Shinsaibashi. Mutsu Hachisen Green Label" Special Junmai [Hachinohe Shuzo, Aomori]. It has been aged moderately after being laid down for the summer, giving it a rounded, angular mouthfeel. It has a moderate sweetness with a hint of fragrance and acidity lurking in the depths. The stable, down-to-earth taste continues without any deterioration from the first sip to the aftertaste after swallowing, and slowly fades away, leaving a lingering aftertaste. Come to think of it, this green label is the first Mutsu Hassen that I have ever tasted, and it is the reason why Mutsu Hassen became my favorite.

2023 Year in Review. Purchased at Grand Cercle, Liquor Shop, B2F, Daimaru Shinsaibashi. Shin Tsuchida K" Kijozo-shu Brewing [Tsuchida Shuzo, Gunma]. To be frank, it is a very sweet sake, but at the same time, it has a strong umami taste. This is something I have never had before. Although it is not a fruity type, I think it is something that even beginners can enjoy. This is probably the first time I've had Tsuchida's sake, but it's one of my favorites right away.

2023 Year in Review. Given by "Night Chot Stand." Senzuke" Junmai Daiginjo [Izumi Shuzo, Hyogo]. A moderate sweetness spreads on the palate along with a slight bitterness that passes through the nose. The aftertaste is soft, but the lingering aftertaste lasts for quite a long time and disappears smoothly. The feeling after drinking it is always refreshing. I wonder if this is a special type of "refreshing" type that has a lingering aftertaste. It is difficult to classify.

2023 Year in Review. We had it at Meisei Horumon Ghibier. Enayama" Junmai Ginjo (Yamadanishiki) [Hazama Shuzo, Gifu]. A slightly sweet mouthfeel from the bitterness characteristic of alcohol, with more sweetness flowing down the middle to the back of the throat. It leaves a lingering sweetness, but the finish is refreshing.

2023 Year in Review. We had it at the Ushiro. Sho Shiki Akai Ito" Junmai Ginjo Nama (Shiga Ginbuki) [Sho Shiki Shuzo, Shiga]. When you put it in your mouth, you will feel a soft sweetness on your nose. The sweetness, which is not too assertive but firm, softly envelops the bitterness of the sake, gently blurs it, and then disappears. The aftertaste is only a lingering aftertaste that does not even reach the aroma.

2023 Year in Review. We had it at "Stand Beanfish." W Hidahomare 45" Junmai Unfiltered Nama-shu (Hidahomare) [Watanabe Shuzo, Gifu]. The mouthfeel is slightly sweet. When it spreads in the mouth, the bitterness of the alcohol spreads slowly but quite a bit. However, as one takes two or three sips, the bitterness gradually fades away, leaving only a soft dryness from the sweetness, as if one gets used to it or becomes numb to it. With each sip, the drink becomes more refreshing and clear.

Year in Review 2023. We had it at "Fish, Snacks and Sake Restaurant Hacen". Mimuro-sugi Summer Jun" Junmai (Yamada Nishiki) [Imanishi Shuzo, Nara]. The process from the first sip to the aftertaste is super speedy and interesting. Rather than a simple dry and refreshing taste, the flavor changes quickly. The sweetness that is typical of Mimuro cedar is only slight. The umami and acidity, which seem to be the original taste of this sake, move in a sharp line graph. The aftertaste is pleasant, with a slight line drawn just slightly.

Year in Review 2023. We had it at "Fish, Snacks and Sake Restaurant Hacen". Oze no Yukidoke" Junmai "Fish-Yummy Junmai" [Ryujin Shuzo, Gunma]. The concept of this junmai sake is that it goes well with fish. It is said to be a mellow dry sake with enhanced acidity. I think it is a umami type of sake, if I were to classify it as such, but I can't say for sure. I think it is, but I can't see a clear picture of it. It has a certain dryness, though it is a bit restrained in its assertiveness. But there is definitely an umami behind it. But there is definitely umami behind the dryness. If I were to describe it by lineage, I would say it is umami type. While being wrapped in umami like an aura, the dryness is present from the mouth to the aftertaste. It is interesting.

Year in Review 2023. We had it at "Fish, Snacks and Sake Restaurant Hacen". Tanaka Rokuugo" Junmai Namaishiki (Yamada Nishiki) [Shiraito Shuzo, Fukuoka]. This sake also has a clean mouthfeel. The balance between the restrained umami and acidity is wonderful. The acidity numbs the mouth while the umami lingers moderately. The lingering high notes resonate quietly.
