This is a junmai-shu with a so-called low-polishing ratio of 88%. No lie⁉️ if it's just the first sip, it's so perfect that even the Jyushiyo I just had is faint ✨.
Fresh green apple and LaFrance nuances.
Chilli, delicate acidity and soft sweet umami.
The aftertaste is refreshingly bitter and moderately sour. A light sharpness closed it out 😋💕.

As expected of Jyushidai, not only the aroma, but also the atmosphere it creates is spectacular💕.
The taste is mellow.
It has a soft mouthfeel, a mild sweetness, and a savory, concentrated rice flavor. The sharp acidity adds a bitter aftertaste like citrus peel. But this bitterness is also pleasant ❤️😋

I was told that even though it is an old sake, it is kept in a warehouse and has only recently been shipped, so it is surprisingly easy to drink without feeling that it has aged that much.
