Hakudakesen Gin-no-sato Jyuwari-brewed Aged Junmai Daiginjo GAKU
The second high-end model of Hakugakusen, which was newly released at the end of last year. I was aiming for the original "Miku Raichi", but I got this one, saving it for the next time.

The wrapping of the sake is made of "Habutae" (a traditional Japanese wrapping cloth) with Fukui Castle, which is associated with Lord Shungetake, painted on the wrapping.

Hayaseura Special Junmai Sake-Noten HAYASHI Limited Brewing
The aroma of rice with a hint of sweetness, the mouthfeel is clean and refreshing, and the finish is slightly sweet with a refreshing aftertaste.
As the title says, this is a private brand of Sake-no-Ten Hayashi, which is one of the best breweries in the area in terms of sake selection, and Miyake Hikoemon Shuzo, which brews "Hayaseura". ジャイヴI was going to take a break for a while after emptying "Winter Fireworks" over 4 days, but my work schedule didn't allow me to drink for the next week, so I drank for 5 days in a row 😅.
Well, I looked around the cellar and saw the moon hiding behind the clouds when I put the kids to bed a while ago, so let's have a "moon-viewing drink tonight" here 🌛🍶 this time.
Koeikiku Bikun 2025 Unfiltered Nama Sake
Last season I didn't notice it was on sale and passed it up, but this year I was lucky enough to get it at a liquor store 😁.

The aroma is rich with rice, the mouthfeel is clean and fruity with a light sweetness and a slight tangy gas feeling on the tip of the tongue, and after it finishes, it has a refreshing finish with a berry-like acidity.

A refreshing rice aroma, a clean, fruity sweetness, a slight berry-like aroma on the nose, and a clean lingering finish with a refreshing sweet acidity.
The overall impression is light and clear, and the strawberry-like sweetness and acidity stand out when paired with a side dish.
Ate: [yellowtail sashimi] and [salmon sashimi] 🐟️

The ooze was going down nicely, so we mixed the top clear liquid with the light nigori and compared the two by switching sake cups 😋!

When the oriki (oriental herb) is mixed in, it adds impact to the umami, but the impression of freshness remains the same.

Fukkai Yamadanishiki Nama Sake
I was curious about this sake, so I got it 🥰.
When I opened the bottle, I could smell a sweet aroma similar to that of ramune or cider.
[The sake is a gulp of sake.]
The aroma of sweet rice is calm, and the mouthfeel has a slight gaseous feeling, followed by a quiet, mature sweetness, umami, and a long, pleasant aftertaste.

A cool, refreshing rice aroma, a slight gassy sensation at the tip of the tongue, a subtle sweetness and umami that flows into the body smoothly, and a long, refreshing aftertaste that finishes with a mineral sensation that lingers on the tip of the tongue.
[I heard that the hi-seasoned version has more sweetness, so I'm interested in that as well.
The nigori sake that was sold together with it also looks delicious!
The dish was "yellowtail sashimi from Oita" (🐟️), as fish from Kyushu had just arrived!
