Hitakami Junmai Ginjyo Usunigori Nama Shu (light nigori sake)
First time to drink "Hikkami" ✨ despite having chosen a lot of fish for the entrée!
The ooze was going down nicely, so we mixed the top clear liquid with the light nigori and compared the two by switching sake cups 😋!

The aroma of mellow and sweet rice, the umami that flows smoothly into the mouth, the sweetness and sharpness, the clean and sweet aftertaste similar to that of rum, and the light bitterness that lingers on the tongue.
When the oriki (oriental herb) is mixed in, it adds impact to the umami, but the impression of freshness remains the same.

The aroma is cool and sweet with a hint of rice, and the mouthfeel is reminiscent of soda or cider, with a refreshing and crisp umami and sweetness that finishes with a refreshing and pleasant aftertaste.
When the orikomi is mixed, the umami also increases, but the refreshing sweet and clean aftertaste remains the same, and you can't stop yourself from having another cup.
I wanted to pair it with fish, so I served it with Ehime kanpachi sashimi and Shizuoka bonito tataki. 🐟️
