This is the first Amabuki. This brewery brews all of its sake with flower yeast. We will have some autumn sake. The yeast used is Abelia. The words of the flower are "strong luck", "humility" and "modesty". It's perfect for me, who doesn't have a shred of humility. Opening the bottle. It smells like a flower. Maybe it's just my imagination. I can feel the gorgeousness. Ripe pineapple. The aroma of the pineapple when you bite into the pulp spreads to your nostrils. It's thick and delicious. After letting it sit for a day, the aroma became more subdued and a little drier and spicier. This is not so bad. I think I got lucky. It's like I got a 5 star in a gacha. I'll buy a horse ticket.

It's been a little over two years since I first became interested in sake. When I think back, it was at an izakaya that I stopped by on my way home from my first visit to my current workplace that I discovered the deliciousness of sake. The owner was very friendly, and I can't tell you how many times the delicious food and sake saved my weakened heart. On several occasions, I was served this Tobiroki and was impressed. Another reason is that the famous sake served in the novel "Kamisama no karte" was Tobiroki. It's a sake that is rarely encountered, but that's why it's a special sake that you can see, taste, and feel the joy of. I am grateful to be able to celebrate my wife's birthday with this sake.

I was told that it was very popular. The flat rice milling "makes the rice easier to dissolve and allows us to design a sake that goes beyond the conventional boundaries". The gasiness is pleasant and (pineapple?). It was juicy, sweet, very drinkable! Even better, after a week, when the gas is gone, the muddled goodness stands out! It's so good!

Open a bottle at a family celebration. Just leaving it on the table adds to the festive atmosphere. The taste is blissful and full of rice flavor. The aroma is also good. It makes all five senses happy.

I had a chilled bottle of Mukaze, which I was curious about because of its unique label. The aroma is gentle but powerful, and when you put it in your mouth, you can literally feel the gorgeousness. However, it quickly and beautifully clears up like water. I'm pairing it with nabe, but I feel like this would go with just about anything! It was delicious.
