This is a sake made with bodacious yeast. First, at room temperature. It has a mild lactic acidity and a moderate sweetness that I like. If you heat it up, the sweetness comes out, but it's still mellow and full-bodied, and very easy to drink. I recommend it.

Iwate has a lot of good sake, but lately I've only been drinking Akatake. It's Akatake again today. I missed the Christmas drink, so I had to hold down the snow for the new year. It was easy to open. The supernatant was super sweet and delicious. What is this? Is it really sake? If you twist the lees and drink it, it has a gentle sweetness and a soft mouthfeel. There is very little acidity and bitterness. This is the softest nigori I've had this season, with no spikes. This is the kind of sake that a beginner will fall into the swamp immediately after drinking. If there is someone you want to sink into the swamp, please try it.

It's been a while since I've been to Kaze no Mori. The first time I drank an Omachi, I felt it was not what I expected. The second time I drank it in a state of intoxication and couldn't remember anything... I bought Akitsuho for the third time. The liquor store told me that if I wanted to drink Kaze no Mori for the first time, I should get Akitsuho or Dewa Kaze! So I went with Akitsuho, which I hadn't had yet. Poof! As if the sake had been waiting for me to open the bottle, it opened with a bang. The aroma is of a grassy field and a slight citrus. In the mouth, there is a slight carbonation, a sweetness from the rice, and... a slight sourness? I think there is also a berry-like taste in the distance. Anyway, it's clear and clean. The last taste is bitter. As the label says, Akitsuho has a good bitter taste. So this is Kaze no Mori. It is pale, clean and lean. Dew leaf wind is also coming soon.

The second day of opening the bottle. The gasiness is completely gone. The sweetness has become more prominent. Bitterness is still there. The balance was perfect yesterday. This sake has a short shelf life.

This is the first nama-shu I bought myself. It was recommended as "gorgeous" in the shop. I was a little surprised that it was a local sake from Tokyo, but it was fruity and very tasty.

I bought this in March and kept it for myself. The aroma is sweet fruit. It arouses a sense of anticipation. On the palate, it's torrid and sweet like a ripe fruit. I was surprised. This is a white peach. White peaches from start to finish. If I took a bite out of an entire bottle of this drink with a blindfold on, I'm sure he'd mistake it for a white peach. It was a secret brew that we opened after yesterday's Shinsei. When you want to drink this drink, it's time to drink it. I can say that it was worth it to put up with so much. The Japanese top is still delicious.
