The Takatsuki Sake Juku project visited Honda Shoten in Aboshi. Inside the store, a specimen of Hyogo Nishiki, newly developed by Hyogo Prefecture in 2011, was on display, attracting the participants' interest. It is produced by crossbreeding Yamada-Nishiki with another sake rice, and the rice is said to be short and resistant to collapse.
Although they were not able to tour the brewery for various reasons, they listened to the passionate talk of the fifth-generation brewer.
All of Honda Shoten's sake rice is suitable for sake brewing. The brewery is particular about the terroir of its sake. This time, I got a bottle of Yamadaho special junmai. The quality of the sake was full and coherent with a refreshing acidity. The sweetness increased day by day, and it was so delicious that I wished I had bought another bottle or two.
