The stock was low, so they let me compare it with the one just after the bottle was opened.
The one right after the bottle was opened had a woody aroma and slight bubbles, and was relatively dry.
The one that had been aged for a while seemed to have less woody aroma and more acidity and sweetness.
I liked it at first because it was sweet, but I've been drinking a lot of sweet stuff lately, so maybe I'm getting tired of it. It's delicious, though.
I asked for an autumn sake that I could only drink for now, and this is the one they served me.
It was not as sweet as my image of autumn sake, but had a stronger flavor of rice.
It is also consistently good.
It is nice to know that there is a store in Osaka that always has Kachikoma on hand. I never thought I would be able to drink Junmai Daiginjo.

It's still delicious. But I really think that there are better tasting drinks out there without paying such a premium for them.
