yoyoyoIt is a rare sake that is fermented (fully matured) until the yeast has eaten up as much sugar as it can in the unrefined sake.
I was curious about it and was finally able to purchase it.
It is a junmai sake with an alcohol content of 21% and polished to 70%! The specs alone pack a punch!
Pale golden color. Aroma of tasty acidity. This is natural lactic acid bacteria.
When you drink it, the punch of 21% alcohol is outstanding. The flavor is rich, but unexpectedly refreshing.
The way the acidity is used is as expected from Hanaboe. It is full of umami and extremely delicious.
However, it is quite intoxicating.
I drank it on the rocks with ice!
It's even more refreshing now that the corners have been removed. It's cold and summery✨.
It's a great sake that can be enjoyed in a variety of ways✨

yoyoyoI went to Tanaka Sake Shop for my favorite Hanaboe.
It was a hot day, so I chose a soda pop for its typical sourness and freshness!
When I twisted the screw cap a little, the liquid level came up again and again.....................too much energy!
Finally, the bottle was opened. The lees that had accumulated at the bottom were already stirred up by the gas.
First, the aroma.
It smells like sweet yogurt✨It smells so good✨.
When we drank it, the richness of the mizu yeast spread along with the gaseous feeling of the shuwa shuwa.
I like this feeling that is typical of Hanaboe's mizu-hashiroshi.
The gasiness, yogurtiness, sweetness, sourness, and bitterness each have a solid profile and assert their own individuality, making for a very interesting taste.

The specs were completely to my liking, so I had it for the first time, Souhyo.
The aroma and taste were different from what I had imagined.
From the outside, it looked like a classic, but this preconceived notion was completely overturned.
The aroma was mildly fruity. The image changed completely.
On the palate, the acidity of the sake yeast and the umami of the rice! This is what makes it so special✨.
The potential of Yamadanishiki from the special A district of Yoshikawa, Hyogo Prefecture! It is wonderful!

I spent about 30 minutes in the liquor store trying to decide which one to get, but I was right on the money with Souhyo ✨. yoyoyoI bought Tsururei Junmai-shu Yamadanishiki for a change of pace from the Kaze no Mori that I have been enjoying for a while.
It is not a light sake, but rather a robust sake with a good taste of rice!
Still, it's not a robust classic, but a gentle and easy-drinking sake on the palate✨.
It is delicious!

I changed my mind, but I had been drinking Kaze no Mori, so I was surprised at how much of a difference it made. yoyoyoContinuing from last time, this is Kaze no Mori Akitsuho.
The gaseous sensation is mild. The aroma is also milder than expected. Gentle fruity ✨.
Some seme smell and sharpness. Easy to drink and tasty sake with a taste of Akitsuho!
I was also reminded once again of the perfection of 657 ✨. yoyoyoMy goal is to conquer all the sakes in Japan, but I can't resist local sake.
This is my favorite brand, Dragon Black by Ryuryoku.
This sake is brewed with Hyogo-nishiki, a variety of Yamada-nishiki developed by Hyogo Prefecture as a countermeasure against global warming!
It is characterized by its low aroma, but it has a deep flavor and is crisp, clear, and dry!
