From the brewery
Summer carp is a limited edition product available only during the summer months. It is made with high-quality sake rice (Hitogokochi) grown under contract in Iizuna-machi, a town next to the brewery, and glutinous rice produced in Nagano Prefecture, and brewed by local people using a yeast developed in Nagano Prefecture. It is a clear, umami-guchi type sake with a cool, refreshing taste. A water purification system using Shindai crystal is used.
The aroma is fruity and sweet, and the mouthfeel is slightly spicy and sweet with an immediate alcohol taste. The aftertaste is also slightly spicy.
