It is made with high-quality sake rice (Hitogokochi) grown under contract in Iizuna-machi, a town next to the brewery, and glutinous rice produced in Nagano Prefecture, and brewed by local people using a yeast developed in Nagano Prefecture. It is a clear, umami-guchi type sake with a cool, refreshing taste. A water purification system using Shindai crystal is used.
