Limited quantity, new sake Shiboritate 🍶 filled with the blame portion. Last year I couldn't drink it, but this year I was able to get it safely ✨. The concentrated flavor from the moderate sweetness and acidity is amazing👍! It's very drinkable and has a nice sharpness, so you can easily drink more 😆. I think it goes well with anything you serve it with! It's impossible to find this for 1,210 yen (including tax) 😅😅. Personal rating 7.5/10 points

I drank it with the image of a standard Koganezawa, but it was outrageous 😆 It was so fresh, with the sweetness of the rice flavor and the sourness and bitterness, it was like a grapefruit 🍊(🍊)🍊(🍊)🍊(🍊) I'm not sure if I'd notice Yamahai if I were blind tasted 😁. I'm not sure if I'd recognize it as yamahai if I was blindfolded, but this lactic acidity is yamahai? 😅 Personal rating 8/10 points

Miyagi Kogota Agriculture and Forestry High School 130th Anniversary Project "Students Brew Sake with Rice Grown by Students" 5th Year Challenge Sake The brewer is Kawatakei Shoten, which brews a delicious Yamahai sake called "Koganezawa" in the same town 😊. Our eldest and second daughters are also enrolled in the same high school😅. Last year it was a melon type, but this year it's a banana🍈. It has a gentle sweetness from the rice, and the acidity from the Yamahai makes it crisp and a little dry. This brewery has a strong core of sake quality👍 Personal rating 7.5/10 points

First time for me 😆. Six months have passed while I've been wondering when I'm going to open it, and I bought it in a bottle 💦. The top aroma is modest, but you can feel the sweetness. It is a mellow, sweet and umami type, and the sweetness lingers for a long time, but it is accompanied by a firm bitterness and spiciness that finishes off the taste. Personal evaluation 8.5/10 points

It is a small brewery located a little more than 10 minutes drive from my house, and I was able to purchase it at the right time 😊. (limited edition of 600 bottles?). Quote from Sabun Sake Shop The rice is steamed at Hagino Shuzo, and the koji is made using the smallest size moromi in Japan, using a classic method without using a machine. When the bottle was full, the next bottle was filled, and when it was full again, the next bottle was filled, and so on. The "no oriki" type is bottled without removing the oriks from the bottle. Some bottles contain a lot of oriole, while others contain almost no oriole and are like clear sake." The bottles are numbered, and the younger the number, the earlier they are pressed and the more ooze they have, I heard. I bought No. 3, but I could see twice as much ooze in No. 1😊. The taste is a greeful type with a sourness that precedes the sourness, and then the umami of the rice comes in and the bitterness of the greeful type finishes off the taste. It's time to drink this again this season✨ I've been saving a bottle from last year, but I finally missed the timing to open it, so I decided to compare it with this year's 💦. The bottle was opened 🤤The one from last year was stirred automatically and the taste did not seem to deteriorate, as usual, with a good balance of sweet, sour and bitter. Next is this year's one, the sapidity has increased by 1.5 % 😆 The acidity is stronger than last year's one and it's very fresh 🙂 Ummm! Of course, it's still a draft sake, so the earlier you drink it, the more you'll be able to taste the freshness of the sake 😅. I'm planning to buy one or two more bottles so I can drink it early this year!

The search brings up the Hiraki Brewery in Okayama Prefecture, but this is the Hiraki Brewery in Shizuoka Prefecture, and the origin seems to be the same. I got it as a souvenir when my family went on a trip to Hakone and Izu 😊. I wasn't planning to drink it right away, but the day after I got it, we had oden for dinner and I had to drink it with dashi soup stock (I didn't have any sake that goes well with dashi soup stock 😅). It is mild and mild without any corners and has a good flavor of rice, but not too heavy 👍It is a good sake for a meal. Next, I added it to oden with dashi soup stock. Personal rating 7.0/10 points
