We received a Hidakami from Ishinomaki City, Miyagi Prefecture, because of 3.11. It's been 13 years already!
I thought it was light and dry, but it was quite sweet😅.
The sourness and bitterness may remind you of lemonade 🍋, but it's just me 🤤.
It's not too light, but it's not too light, so it can be served as a mealtime drink or on its own.

It has a pear-like taste with no alkali flavor, and it is full-bodied, yet it is easy to drink.

They said it was a gift from a neighbor and they use this "Hitomebore" with their neighbor🌾.
It is 80% polished rice, full of rice flavor, with good acidity and a clean taste, classic sake with a hint of fruity flavor.
It is better to drink it with Japanese dishes than by itself 😊.

I realized I hadn't had this one in the Miyaganbai Four Seasons series, so I immediately bought it this year✨.
This sake is brewed with Miyatubaki yeast, Miyakanbai's original camellia flower yeast, which was discovered in the camellia flowers in the brewery's garden and is suitable for sake brewing❀.
It has a slight gaseous taste, a soft honey-like sweetness, a gentle sourness, almost no bitterness, and a low alcohol content of 12 degrees, so it is very easy to drink.
(It may be a little too sweet for those who don't like sweet)

Fresh and sweet aroma, gentle sweetness and firm rice flavor, with just the right amount of spiciness, sharp, light and very sharp.

I knew that the local liquor store had it before, but I was hesitant to buy it because I heard it was dry and robust, but I was right 😅I've been able to enjoy dry wine recently.
Full of gassy texture, tender and interesting texture with the mashed feeling still remaining, sweet and sour reminiscent of strawberry (🍓) as it looks (д)umaa!

Limited quantity, new sake Shiboritate 🍶 filled with the blame portion.
Last year I couldn't drink it, but this year I was able to get it safely ✨.
The concentrated flavor from the moderate sweetness and acidity is amazing👍!
It's very drinkable and has a nice sharpness, so you can easily drink more 😆.
I think it goes well with anything you serve it with!
It's impossible to find this for 1,210 yen (including tax) 😅😅.

I drank it with the image of a standard Koganezawa, but it was outrageous 😆 It was so fresh, with the sweetness of the rice flavor and the sourness and bitterness, it was like a grapefruit 🍊(🍊)🍊(🍊)🍊(🍊)
I'm not sure if I'd notice Yamahai if I were blind tasted 😁.
I'm not sure if I'd recognize it as yamahai if I was blindfolded, but this lactic acidity is yamahai? 😅

Miyagi Kogota Agriculture and Forestry High School 130th Anniversary Project "Students Brew Sake with Rice Grown by Students" 5th Year Challenge Sake
The brewer is Kawatakei Shoten, which brews a delicious Yamahai sake called "Koganezawa" in the same town 😊.
Our eldest and second daughters are also enrolled in the same high school😅.
Last year it was a melon type, but this year it's a banana🍈. It has a gentle sweetness from the rice, and the acidity from the Yamahai makes it crisp and a little dry.
This brewery has a strong core of sake quality👍

The wine is dry and refreshing with a light gassy feeling, fluffy sweetness, moderate bitterness, and a cider-like acidity.

Six months have passed while I've been wondering when I'm going to open it, and I bought it in a bottle 💦.
The top aroma is modest, but you can feel the sweetness. It is a mellow, sweet and umami type, and the sweetness lingers for a long time, but it is accompanied by a firm bitterness and spiciness that finishes off the taste.

I rarely buy a bottle of sake so it's great when I hit upon a good one 😆.
Fresh and slightly gassy, sweeter than I expected, not heavy or sticky, but the sweetness stands out more than the umami, acidity and bitterness 🤔.
On the second or third day, the sweetness and acidity become more cohesive, and it is more refreshing to drink.

I like that it is moderately fruity and not too modern 😉.
There is nothing outstanding about it, but it has an excellent balance of acidity and flavor, and I think that's all there is to it.
