I attended an online brewery opening of Kawatake Brewery in the town of Taki, behind Ise Jingu Shrine.
The traditional brand name is Hokosugi, but this is a new series.

Yamama is the result of the combination of Yamatoyo (rough running) and Mamatoyo (blame). It's interesting.
It's clearly different. It has a mellow mouthfeel and a deep, calm flavor. From the moment you put it in your mouth to the aftertaste, it's generally gentle, but it's also powerful and fruity.
This is delicious!

The same tank of sake is bottled in the order in which it is pressed: "Ararunushi", "Nakagori", and "Samesame".

A dream collaboration of French wine yeast and Yamadanishiki!

It's also umami! It's a sake with a new sensation.
