Memorandum Rice polishing ratio 65 Alcohol 15%. Amber-colored sake. Alcohol smell and fresh citrus aroma? Cemedine smell? Sake-like taste. Very sour and citric. Astringent taste after sourness. I might like this. It's a white wine without fruitiness and sweetness! Serve with Italian food, chilled to a crisp.

Memorandum Rice polishing ratio: Yamadanishiki 35 Alcohol: 15° to 16° C Purchased at a brewery in Sawara! This is a daiginjo from a sake brewery in "Sawara", a suigo area famous for its handmade "Hon Mirin". Kaishu" is a reference to Katsu Kaishu, and it is said that this sake brewery was named after him due to the fact that he stayed there for about a month. The aroma is sweet and gorgeous, but the taste is refreshing. It is a beautiful sake with a rich and mellow rice flavor. The freshness of the throat and the crispness of the aftertaste are quintessential! It made me want to visit Sawara again.

Slight sweetness and umami that gives volume to the whole taste. The aftertaste is slightly high in acidity and slight bitterness. notebook Rice : Choshu Yamadanishiki produced in Yamaguchi prefecture Rice Polishing Ratio : 50 Yeast : No.901 Alcohol content : 15%. It seems that Junmai Daiginjo was released in four consecutive months from May to August with the same polished rice and the same yeast, but with different rice varieties. Glossy, clear, sweet umami with a fluffy, delicate gasiness. Beautiful sweetness and umami, gentle acidity, flowing smoothly and lingering really beautifully. The taste is well-balanced and elegant. As expected!

Memorandum Alcohol 15%. Polishing ratio 60 We sought for dryness and refreshing acidity and sharpness. This is exactly what it claims to be. It is gentle to the palate, juicy, and at the same time, it is very refreshing. It is rich, but also has a refreshing acidity. The aroma is subdued, and the flavor is mild and crisp. We enjoyed it with sautéed autumnal fish and mushrooms. It is a perfect autumnal sake. It was empty, but it would have been delicious lukewarm.

notebook Alcohol 13 degrees 60% polished rice This sake is brewed with "V1116" yeast, which is used to brew white wine. The freshness of the high acidity unique to wine yeast and the soft umami with fresh sweetness are in harmony. This is sake? This is a surprising taste. When cooled "crisply," the sharpness of the acidity stands out and makes for a clean, refreshing drink. As the temperature rises, the sweetness and acidity are in perfect balance.
