The nose has a standing aroma of white peaches and melon. From the mouthfeel, which is free from any catching, a round sweetness with moderate acidity spreads in the mouth. The standing aroma is lactic acidic, refreshing, and subdued. When poured into an indigo-colored cup, the fine bubbles and lees look like the starry sky of the Tanabata star festival, the theme of the brewery.
When you drink it, it has a milky nuance with a nice acidity that seems to seep in deep and smoothly.
It has a grapefruit-like aroma with a refreshing aftertaste.
The taste is less bloated than Saido, and there is also a healthy gasiness, so perhaps this is easier to drink in summer.

Renamed Asahiran? It was renamed Adams this year. The price was raised by almost 30% from less than 2,000 yen for Asahiran, and the four-pack bottles are a little longer-sided than most bottles.
The label has an illustration of a yuletide cat and a lot of words about a woman's dry taste, but it is a junmai sake with a sharp taste that is more classical. It has little sweetness, and the impression is that it is fermented well, but you can taste the umami of the rice, miscellaneous flavors, and complex flavors.

There are many good dry sake locally, so I would like to repeat this brand among them! I didn't find it attractive enough to make me want to repeat this brand. It's for everyday sake.
The aroma is gorgeous and fruity, and when you drink it, the sweetness and umami spread out, leaving a clear and beautiful aftertaste! However, I personally did not find Omachi to be a good match for me 😪 I did not feel the fullness of flavor that only Omachi can offer, and the lingering taste was a bit bitter and pungent at times.

I originally went there to enjoy Kiri-Tsukuba, but they only had Daiginjo and it was over my budget so I couldn't buy it. Purchased this one because I liked the 6th generation's response and story at the tasting.
The aroma is fresh and melon-like. When you drink it, the juicy melon flavor spreads out as the aroma does. The lingering finish is light, and the sake is easy to drink. It has a modern taste for a Saijo sake.

I have always wanted to try it if I had the chance, but I got a great deal on it so I bought it this time.
As with Geyo Otokoyama, as a local, it would be easier for me to pick it up if it were one more pricey, but when I visited the brewery on a weekday the other day after a long absence, no one was there, and I guess that's just the way it is.
The beautiful label, with its image of the night sky over the Seto Inland Sea and the torii gate of Itsukushima Shrine, is well written in English, and I would be happy to receive it as a souvenir!
As is typical of nigori sake, the rich mouthfeel is followed by the sweetness of the rice and the complex flavors of umami and grains. The finish is light and refreshing, probably due to the low alcohol content. This type of nigori sake may be a little out of my strike zone.

This sake has a very good balance of the five tastes. The taste is clear and clean, although you can enjoy the umami of the rice without any of the flavors being assertive.
I had a chance to drink it at home. It was a very satisfying sake even if you consider it as a 3,000 yen jun-dai, but I guess the overwhelming brand power along with Jyushiyo makes it an explosion of satisfaction. To put it in a colloquial way, I am drinking the sake that everyone wants at home at a fixed price, and it makes me feel good.
I have the impression that I have only seen the Chinese character for "而今" in Chinese characters, but on a smartphone, you can find it more quickly by searching for "じ" (じ).
The Yamada-Nishiki was the first to be compared.
The aroma is mild, with hints of muscat and Japanese pear, but it is mild like the Yumachi.
The sweetness of the rice spreads beautifully when you drink it, and I preferred it.

Purchased at a hotel in Okayama. Unlike Omine's cup sake, the label comes off easily when washed, but my child wanted a cup after drinking it. The label is very Okayama-like, so it is suitable as a souvenir.
If I wanted to compare the sake, I would have appreciated the 180 ml small bottle type rather than the cup type.

The Omachi was not as full-bodied as I expected, and combined with the grain-based acidity that made it sharp, it gave the impression of being a little thin rather than light. The impression may change when the temperature range is raised.

A sake that brings out the flavor of the rice while also pursuing cleanliness. I have often seen "Hanasou," a sake made from Aomori Prefecture's rice suitable for sake brewing, and I wonder if it is along the same lines.

Following the Jungin in the white pack and the Daiginjo in the silver pack, the third bottle in the peach-colored pack is a nigori sake.
Although the attack is sweet, the umami and spiciness of the rice follow, and the sake does not have a sticky feel.
Being a paper pack, I couldn't tell how much nigori was present. The color was clear at first, but towards the end it was almost a lees-tinted white, and my kids said I was cheating by drinking calpis.

I had been interested in this sake for a long time, but the price of 3,000 yen had put me off, so I bought it on sale.
Aged sake brewed with Japan's oldest yeast and stored in oak barrels and bottles for 17 years.
The color is quite dark amber. As you might imagine, it tastes more like Shaoxing sake than sake.

Purchased at the brewery. The Murashige Brewery is a personal favorite of mine because I can stop by on Saturdays when I take my children to Iwakuni for a visit. The large cedar balls also seem to be a thing for the kids.
It would be great for home drinking if it were just a little cheaper, including Eight Knots and Murashige brands.
This sake is brewed with the low-protein edible rice Shunyo. The Tohtsuru we drank last year, also brewed with Shunyo, was named SPRING SUN, and I thought the reading and English application of the name would be just right for naming it.
The taste is slightly more acidic than sweet and sour, more like lemon or kiwi. Combined with the 12% alcohol content, it was easy to drink.

This sake is brewed by four toji (master brewers) with their thoughts and feelings for each season. I always thought the label was a bonito, and that it was out of season, but it is a killer whale.
For Hiroshima residents of the Showa generation, Kamotsuru, along with Chifuku, is a brand that is etched in their souls through TV commercials and the soothing sight of turtles and carp in front of Mitsukoshi.
Hiroshima Nishiki, which I tasted the other day, has a gorgeous aroma, a soft mouthfeel, and a full flavor, whereas Saijo Shigeru has a mild aroma and a clean taste. My first impression was that it was similar to the sake brewed by Kamoizumi, also from Saijo. It is an elegant sake with no spiciness from the alcohol coming to the forefront.
Purchased at a half price sale at Daylink. It was unexpectedly made by Touji Okinaga.
The taste was honestly below my expectations right after opening the bottle, but as the days passed, it became more rounded, and combined with the sharpness of the aftertaste, I could drink it as much as I wanted. The rice flavor was well developed, as if from low-polished rice, but the acidity and other tastes were not so strongly pronounced. It would probably go well with warmed sake, but it was also delicious chilled.

Purchased at Sake Brewery Sumitaya. It goes really well with food, so it's a very cosmetic and home-drinking friendly sake.
The nose is slightly woody and grassy. On the palate, it has a rich sweetness reminiscent of caramel and honey. The impression is similar to that of Pedro Ximenez sherry, so it is not for everyone. If you buy it based on the impression of Wind Forest, you will fail.
The lactic acidity and grain-derived complexity are felt, so it spreads out and the aftertaste is cleaner than expected.
It becomes more rounded and tasty when warmed up.
