Nigori sake from a local sake brewery with a 200 year history 🍶I've always been curious about the simple label 😄.
It has a mild, gentle, silky quality, soft sweetness, and a clean, short aftertaste that makes it very easy to drink 😁.
It went very well with sukiyaki 😋.

Slightly less ginjo aroma on opening.
In the mouth it is slightly dry with grapefruit to acidity. The acidity lingers a little.
I thought there might be a slight effervescence since it is a nama-shu, but there was none.
It might be more drinkable if the grapefruitiness came through a little more quickly.
Hiroshima sake has a strong acidity, so this might be the right choice.
The Kurabiraki was good. The Daiginjo, which is not a limited edition, was more gorgeous and fruity than this. But it was expensive. The other one we drank was, to say the least, tasteless. It is better not to sell that one. The yakitori was delicious.

This sake uses "Hiroshima LeG-Sou," a new yeast developed by Hiroshima Prefecture. This yeast is inherited from the oldest yeast in Japan, Hiroshima No. 6, which was isolated in the Taisho era (1912-1926), and is characterized by producing about three times more malic acid and more isoamyl acetate.
It is not a regular junmai sake, but was created to have a juicy flavor with low alcohol content. The same Fukuro-hozuri method is used as for the exhibited sake, and only 300 liters can be obtained from one pressing, a labor-intensive process.

As the name suggests, this sake is sharp and dry. It has a classical but weightless quality, and although it is probably intended for summer, the acidity is strong from the first sip to the aftertaste, so I think it is better served at room temperature or lukewarm rather than cold 😕.

This is a comment from an amateur sake lover. I continue to receive fish and local sake at my parents' home in Setouchi. I am enjoying my favorite Yawatagawa. It is firm, dry and refreshing. I am thankful that I can drink good sake today in good health.
