The president has been replaced and I personally am not into the UGO series, but I was relieved to see that the standard is still solid. ⭐️⭐️⭐️

Although I bought this sake as an offering and missed the time to drink it, I think it would go especially well with grilled fish, eggplants, and other autumnal delicacies. ⭐️⭐️⭐️⭐️ Purchased at Yamada Sake Brewery.

The strong effervescence from the secondary fermentation in the bottle made it impossible to open the bottle in one go, even when chilled to a crisp. The nose has a hint of apricot and lychee aromas with a slight rice powder nuance. It is a dry and dry muddy sake with a core of acidity from the sake yeast, and it is easy to drink. I thought it would be delicious as a heated sake. Available at ⭐️⭐️⭐️⭐️ Purchased at the sake shop Yamada. There was a feature on a local Sanshiro MC TV program, focusing on the replacement representative Fujii. They showed pictures of him studying abroad, saying that he had no intention of taking over the brewery, and other such things. Even if it is just a local brewery, there are many breweries that have no intention of taking over the brewery, but came back after their father fell ill after finding a job, or they are into windsurfing in the summer, or they boast that no one in the local area knew their name. It is a niche market to begin with, and newcomers are doing their best in various ways, but I personally think that their sense of style is old-fashioned, or they are putting a damper on the excitement. Good food is good even without such introductions.

When you drink it, you can taste the beautiful sweetness and umami of rice, as is typical of daiginjos, while the strength of the alcohol gives it a good aftertaste. Enjoying the linear acidity from the cold snow, we sipped slowly and enjoyed the changes in flavor as the temperature changed.... The four-pack bottle ran out quickly. ⭐️⭐️⭐️⭐️⭐️ Purchased at the sake shop Yamada. I had somewhat of a negative impression of Jun Dai's Aragashiri and Blame, but was put in a positive mood when the shopkeeper told me that Aragashiri is the first pressing 🥰.

Junmai Daiginjo A collaboration between Yamawa Sake Brewery and Shinzawa Brewery. This year, it was the turn of the Shinzawa Brewery. From the faint pineapple aroma and acidity, it has a gentle sweetness and a beautiful lingering taste that disappears in a flash 🫥. It can be drunk on its own as well, not to mention as a mealtime sake that doesn't interfere with meals. I have the impression that it strikes people who prefer Jungin to Hakurakusei's Tokujun. ⭐️⭐️⭐️+⭐️ Purchased at the sake shop Yamada. I personally liked the gradation of this year's label design, as it seemed more upscale than ever.

Banana and melon aroma. I had imagined a sweeter, cleaner sake, but it has a roughness that is typical of nama-shu and is quite complex and well-balanced. I heard that this is the last year for this sake, and I wonder if the Sakahomare or Kutouryuu Doroguchi, which were displayed together, will be its successor. ⭐️⭐️⭐️ Purchased at Yamashiroya. I was disheartened to hear that Kinjaku Shiboritate, which I had looked forward to every year, would no longer be sold individually this year, but I was satisfied with the high level of perfection, although the line was completely different.

From the soft mouthfeel, the mellow aroma and rice flavor typical of nama-shu spread out, and the lingering finish is crisp and not overly heavy to the point of being mellow. To put it simply, it is a mellow umakuchi. Because of its robust flavor, it is good on its own or as a mid-meal sake, and is easy to pair with food. I prefer it when the bottle is cold, just after opening, when the flavor profile is well-defined. ⭐️⭐️⭐️⭐️ Purchased at Yamatoya Shuho.

The nose is sweet and acidic with hints of strawberry and pear. When you drink it, it is fruity from the gasiness, and the aftertaste is grapefruit-like with sourness and bitterness. The color of the bottle is also a reason why I did not notice it until the end, but it is lightly nigori (lightly cloudy). The flavor deteriorates quite quickly due to the fact that it is a draft sake, and I felt a strong sense of freshness immediately after opening the bottle, making it the most enjoyable. ⭐️⭐️⭐️ Purchased at a department store. It's sweet and sour, juicy and gassy, and at 14% alcohol, it seems to be right on trend. However, I preferred Kawatsuru Olive and Ko no Tsukasa Madoromi among the recent ones.

Aroma and taste are a mix of citrus and koji. The strong acidity is similar to sake brewed with white koji with added lactic acid bacteria nuances. The strong acidity, koji-derived sweetness, and umami flavor gave the impression of being closer to edible vinegar than to white wine. A change of pace? A challenging line? Then, I think I prefer Kai-fu-do. I'm not sure if this type of sake is suitable for different meals and occasions, but I can't fully appreciate its appeal yet. ⭐️+⭐️ Bought it at Fresta with 3 discount.

This sake has a freshness and roughness as if it were drawn directly from the brewery's tanks. It has a slight grain-derived greenness and a mellow, full-bodied flavor derived from the rice, making it a good match with meals. After opening the bottle, I felt it deteriorate quite a bit over time, so it is best to drink it right away. The 18% alcohol content is strong and I would not recommend it to those who like the trendy modern taste, but the cost performance is excellent and I was wondering if I should buy a bottle again. The fact that it is Sakurafubuki instead of Kamo Kanehide is also fitting: ☺️ ⭐️⭐️⭐️⭐️⭐️

It has a fresh banana-type aroma, which is gorgeous in Camoquin. The sweetness and acidity wrap around the full flavor and bring it all together in a cute way. After opening the bottle, the passage of days and the decrease in volume and increase in the percentage of lees made it more rounded and to my liking. The sake world during the year-end and New Year's holidays is festive with many zodiac sign labels and lees-related products, but the satisfaction level, including the price, is high. The green and red string was a hit with the kids. ⭐️⭐️⭐️⭐️

The standing aroma is pear and muscat-like, but not that strong. The bubbles are a little strong for a Kamogane. When you drink it, it has a fresh lightness typical of low-alcoholic sake, with a slight grain-like classical nuance, and is easy to drink. Perhaps it is because it is not watered down, or perhaps it is just because I like my hometown, but the lightness‡ of low-alcoholic sake is well suppressed and can be enjoyed on its own or with a meal. ⭐️⭐️⭐️⭐️⭐️ It is available all year round and is not too expensive. It is a sake from Hiroshima that is not too trendy and is competitive even in Japan.

Josensen When you smell it from the mouth of the bottle, it has a really nice aroma like thick cream, but when you pour it into a booze cup, the alcohol comes to the forefront, and when you drink it, the rice flavor is strong, but clay? The nose has a rich melon and white peach aroma. When you drink it, it has a slightly thick mouthfeel, followed by a smooth, wagashi-like sweetness and a prodigal flavor. The lingering finish is clean with fresh acidity and light bitterness. It was sweeter than expected and I thought I would choose a little pairing compatibility. I was waiting for my youngest son to be weaned off of it, so I kept it in the cellar and enjoyed it, even though it was past the 3 month limit on the label. Purchased in a distribution plan. I thought no thanks if the price is set by too strong restaurants or resale price.

The nose has ripe apple-like honey and lactic acid nuances. The taste is firm, with little cloying taste, and the acidity is smooth. In general, it is a mellow sake with a mellow umakuchi impression. Personally, I found the balance to be delicious. ⭐️⭐️⭐️ Purchased at a department store. Sold at the renewed Depa basement, along with Kozo Mori and Naeba-yama. I have a very selfish impression, but I felt that only the brewed forest was displayed in a prominent place in the refrigerated section, and I felt a sense of tie-up with the brewed forest sales. At a restaurant on a business trip. After enjoying a variety of sakes, this was the last sake I drank at the end of my trip. The sweetness and full flavor of the rice spread out as it was served hot, and the acidity and bitterness from the Yamahai method balanced it out, warming the body and soul and making you feel happy.
