Following the Jungin in the white pack and the Daiginjo in the silver pack, the third bottle in the peach-colored pack is a nigori sake. Although the attack is sweet, the umami and spiciness of the rice follow, and the sake does not have a sticky feel. Being a paper pack, I couldn't tell how much nigori was present. The color was clear at first, but towards the end it was almost a lees-tinted white, and my kids said I was cheating by drinking calpis. ⭐️⭐️⭐️ Bought it at Yamaya. I now buy and enjoy a sake fridge, but considering that I store it in my fridge at home, the paper packs are very practical ◎ Personally, I recommend the white Jungin in this series.

Junmai sake with low rice polishing and low alcohol content. The color was a light golden yellow. I had an arbitrary image that it would be a sake with a strong acidity like white wine, but it was a sweet Junmai sake with a strong sweetness and umami of rice. The acidity is just right to keep the aftertaste from becoming too heavy. ⭐️⭐️⭐️ Purchased from Daylink. I had been interested in this sake for a long time, but the price of 3,000 yen had put me off, so I bought it on sale.

Aged sake brewed with Japan's oldest yeast and stored in oak barrels and bottles for 17 years. The color is quite dark amber. As you might imagine, it tastes more like Shaoxing sake than sake. Available at ⭐️⭐️ Purchased at the brewery. The Murashige Brewery is a personal favorite of mine because I can stop by on Saturdays when I take my children to Iwakuni for a visit. The large cedar balls also seem to be a thing for the kids. It would be great for home drinking if it were just a little cheaper, including Eight Knots and Murashige brands.

This sake is brewed with the low-protein edible rice Shunyo. The Tohtsuru we drank last year, also brewed with Shunyo, was named SPRING SUN, and I thought the reading and English application of the name would be just right for naming it. The taste is slightly more acidic than sweet and sour, more like lemon or kiwi. Combined with the 12% alcohol content, it was easy to drink. ⭐️⭐️⭐️ Purchased at Yamatoya Shuho.

The extremely sweet taste derived from koji is balanced by the strong lactic acidic acidity, which keeps it from being too heavy. Combined with the 6% alcohol content, it gives the impression of drinking lemonade or lactic acid sour. I like the concept of pairing it with spicy meat dishes while still having a robust flavor 😉. ⭐️⭐️⭐️+⭐️ Purchased at Fresta. It has been in stock for quite a while, but I bought it after they recently lowered the price to about 1000 yen including tax.

This sake is brewed by four toji (master brewers) with their thoughts and feelings for each season. I always thought the label was a bonito, and that it was out of season, but it is a killer whale. For Hiroshima residents of the Showa generation, Kamotsuru, along with Chifuku, is a brand that is etched in their souls through TV commercials and the soothing sight of turtles and carp in front of Mitsukoshi. Hiroshima Nishiki, which I tasted the other day, has a gorgeous aroma, a soft mouthfeel, and a full flavor, whereas Saijo Shigeru has a mild aroma and a clean taste. My first impression was that it was similar to the sake brewed by Kamoizumi, also from Saijo. It is an elegant sake with no spiciness from the alcohol coming to the forefront. Purchased at a half price sale at Daylink. It was unexpectedly made by Touji Okinaga.

The taste was honestly below my expectations right after opening the bottle, but as the days passed, it became more rounded, and combined with the sharpness of the aftertaste, I could drink it as much as I wanted. The rice flavor was well developed, as if from low-polished rice, but the acidity and other tastes were not so strongly pronounced. It would probably go well with warmed sake, but it was also delicious chilled. ⭐️⭐️⭐️⭐️⭐️ Purchased at Sake Brewery Sumitaya. It goes really well with food, so it's a very cosmetic and home-drinking friendly sake.

The nose is slightly woody and grassy. On the palate, it has a rich sweetness reminiscent of caramel and honey. The impression is similar to that of Pedro Ximenez sherry, so it is not for everyone. If you buy it based on the impression of Wind Forest, you will fail. The lactic acidity and grain-derived complexity are felt, so it spreads out and the aftertaste is cleaner than expected. It becomes more rounded and tasty when warmed up. ⭐️⭐️⭐️ Purchased at the liquor store Yamada.

It does not have the floral and fruity impression that one gets from other Yuki no Kayasha, nor does it have the pushiness, power, and thickness of Yamahai. The attack is clear, smooth, and moist, or rather, a little tender on the palate. After that, you feel the acidity and the sweetness of the rice spreads, and then the light sharpness tightens up the whole. The impression of the flavor changes dramatically depending on whether the sake is served snow-cold, at room temperature, or warmed. Personally, I preferred it best at room temperature. ⭐️⭐️⭐️

Standing aroma is green apple or grape type? But it is not strong. While the attack has a gentle sweetness, the alu-ness makes the mouthfeel dry and refreshing, and the flowing, deep umami flavor leaves the palate. It goes really well with meals. ⭐️⭐️⭐️⭐️⭐️ Purchased at a souvenir shop in Iwakuni. I had seen Otokozumo and Mugyo in my hometown, but this was the first time I had seen Dragon's Tail, so I bought it. The label said "deep and complex taste, Dragon's tale, Special junmai," etc. I thought it was a souvenir for foreign tourists, but it was very tasty. In my opinion, it is a little out of tune with the current taste trends, but I think it would be one of the most popular if the brand name were to be kept secret.

The nose has a gorgeous pineapple aroma. The aroma is tropical and tropical nuances are present. While it has a rich sweetness and umami flavor, it is clean and does not give the impression of being heavy or dry from alcohol. You can also enjoy the changes in flavor depending on the temperature range and the number of days after opening the bottle. ⭐️⭐️⭐️⭐️ Purchased at the brewery. I asked them to take out the wooden box so I could buy it for home use at a slightly lower price. The sake cup is also cute. I really like Kinjaku, but while I can find Tobisho and Daiginjo at liquor stores and souvenir shops, Jungin and Shiboritate, which I prefer, are available only at restaurants, and I regret that I have fewer opportunities to drink them.

It is an active nigori sake with a perforated stopper, but the gaseous and fizzy sensation is not as strong as expected. The turbidity is strong. It has a rice- and grain-based aroma and a thick mouthfeel with a rich umami and sweetness. The other day, I drank a doburoku from another brewery, but this one felt more doburoku-like. The 19% alcohol content is also very light and tasty on the rocks or with soda, as the label says. ⭐️⭐️⭐️ Purchased at a roadside station in Yamaguchi. Like the Bd-14 I drank before, it is not a trendy sake, but rather a sake that makes you feel that it is well made, even if it is a bit picky about who drinks it.

I bought this sake, though not in celebration, because it had won the highest gold medal at the Delicious Sake in a Wine Glass Awards. I was looking forward to seeing what kind of sake it would be, as it is a junmai spec sake brewed with koshihikari rice. Immediately after opening the bottle, which was thoroughly chilled, I was impressed by how clear the flavor could be without relying on acidity or gassiness, even in junmai sake🥺 It was not too sweet or too umami, and I liked the balance of the flavor. After the second day, the spiciness and alcohol strength came to the forefront a bit, and I was not as impressed as I was on the first day. ⭐️⭐️⭐️⭐️ Purchased at Yamatoya Shuho. Sake brewed with food rice makes me nervous about the future of sake brewed with food rice, considering the price increase of white rice.

This brand advocates a new type of Niigata New Light and Dry. It was very well balanced and dry, which was understandable, but the umami and richness of the rice was very apparent. However, the umami and richness of the rice was very apparent, and the fact that it was light did not fit my image of what it should be. It has a strong flavor and is easy to pair with meals, so I think it is suitable for a mid-meal drink. The taste was different from the mellow dry sake and junmai sake I have had so far, and I felt it had a very strong character, but it was a little out of my strike zone. ⭐️⭐️ Purchased at Yamatoya Shuho.

The standing aroma of pears and citrus fruits is fresh and slightly subdued. The firm sense of gas, combined with a crisp acidity and lingering bitterness, gives the impression of a dry sake among the Kangiku varieties. As you drink it over time, the temperature rises, the lees increases, and the sweetness increases. Available at ⭐️⭐️⭐️ Purchased at Yamatoya Shuho. It was very tasty, but it didn't feel special enough to me to make me want to drink it again in the Kangiku series. Compared to other breweries, I really appreciate that they offer this sake at this price.

It has been a long time since I drank Shinsei at home. When you drink it, it has a beautiful acidity that is typical of Niimasa. It has an excellent balance between the depth of flavor, sweetness at the attack, and astringency in the aftertaste. I liked it best when drunk before a meal when it was cold and snow-cooled. ⭐️⭐️⭐️⭐️⭐️ Purchased previously at Yamada Sake Shop.

The fresh aroma, which reminds one of rumune, is moderate. When you drink it, the aroma of rice and grains that passes through to the nose gives a strong impression of freshness from the freshly pressed sake. It is delicious. The cleanliness that is typical of jungin is balanced by the roughness and bitterness that is typical of freshly squeezed sake. ⭐️⭐️ Purchased at the sake shop Yamada. It was a solid impression sake that fit the concept of the product, but personally I felt it was a bit pricey for a home-drinker, considering that I could buy local Sakurafukiyuki Shiboritate for about half the price. The flavor deteriorated quickly, so it tastes better if you open the bottle and drink it as soon as possible.

The nose has a dark, sweet and gorgeous aroma of melon and white peaches. When you drink it, you can taste the sweetness and bitterness at the same time, and it is nicely balanced with the chili sensation on the tongue. I liked it better after a few days than right after opening the bottle, as it seems to be more balanced. It is a sake to be enjoyed by itself rather than with a meal. ⭐️⭐️⭐️⭐️⭐️ Purchased at Ishikawa Sake Shop. I was a little hesitant when I bought it because it is not cheap for home drinking, but it was a very satisfying sake.
