酒呑みKen1We ordered a set of 3 kinds of Denshu (rice wine) bottoms with a choice of a dish. I chose grilled chicken with sansho. First of all, a Junmai Ginjo Yamadahou Sweet fruity ginjo aroma. The well-balanced sweetness and acidity spread first, and the bitterness that comes from the depths of the umami tightens the whole. The aftertaste lingers for a long time, but the bitterness and acidity keep it sharp.

The acidity is more pronounced than when served chilled. The spiciness lasts until the back end, and the bitterness in the aftertaste finishes it off. When it cools down a bit and reaches room temperature, the flavor expands even more, so it's probably best enjoyed at room temperature.

The balance of acidity and bitterness is exquisite, and the bitterness is added to the aftertaste to make the whole taste clear. A perfect match for horse sashimi.
