I haven't had Jr.'s hinomitsu 🍯 in a while, which is what got me into kudokigake 🍶. In addition to the gorgeous ginjo aroma of Junmai Daiginjo, it has a sweet aroma just like honey. The taste has a robust umami, as is typical of Kudokibe. As the concept suggests, there is a sweetness, but it is not extremely strong and gentle. There is no cloying taste. I guess they use the four-stage brewing method to produce this sweetness 🤔I thought it was a good price for such specs as always, and even though it is a Jr. series, I thought it showed the Kudokidokiwai character well. ☺️

I was also lucky enough to get my hands on 2023's birthplace 😊open the bottle with a pop 🍾. Fresh aroma like muscat. When poured into the glass, it bubbles up as much as sparkling sake. Of course, when you put it in your mouth, there is gas that accentuates the refreshing feeling. The overall flavor is gentle, but the sweetness, umami, sourness, and bitterness change in a complex order, giving it a sense of depth. Compared to last year's model, the sweetness is a little stronger and the acidity is moderate. Or maybe. It is definitely delicious after all! It's my favorite sake to drink more and more, probably due to the low alcohol and gasiness 😊✨.

This is the first time I have had sake from Tomikunishiki. They are a Junmai brewery in Harima that uses all local rice and brews only junmai-zukuri sake 🌾They are a brewery that takes the high road: ☺️ Nama sake made with extra fine Aizan, I'm drawn to this one just by the specs ✨. Rich ginjo aroma including the gorgeousness of Aizan. There is a refreshing sweetness on the palate, followed by a firm umami that spreads. It has a minerality and good acidity, and while it has umami, it is not too heavy, making it easy to drink. The aroma and mellow flavor typical of nama-hashiroshi are also good. The aftertaste has the alcohol and slight bitterness typical of nama sake.

It is a local sake from Yamagata, but I had never had it before, so I bought it. Hashu Homare" is a sake rice that I had never heard of, so I looked it up and found out that it is a sake rice bred by the Takagi Sake Brewery in 2000, a cross between Miyamanishiki and Tamaryu F10, and is characterized by its sharp sake quality 🫢. The ginjo aroma is clear and gorgeous🌸 Mineral and smooth on the palate, with a spread of umami and a sharpness. Good balance of sweetness, acidity, and umami. Slight alcohol taste and slight bitterness in the aftertaste. It was an easy-drinking sake with good balance and umami 😄I would like to visit when I go back to my hometown!

I bought the regular version of the Hiran Nikomaru because it was on sale. I got the Queen first and enjoyed it, so the more affordable standard sake is great for my wallet 😄. Melon-like aroma 🍈. It has a sweetness on the palate that makes it easy to get into, but it has just the right amount of umami and acidity to keep it from being too extremely modern. The nose is fruity with a hint of bitterness in the finish. There is some bitterness in the aftertaste, but it is not bothersome. The brewer wanted to use Nagasaki Prefecture's original rice and came up with Nikkomaru, which is edible rice. I had the impression that sake made with edible rice would have a cloying taste, but this Tobiran was so elegant and delicious on the palate that it was hard to believe that edible rice was used as the base rice 😊.

Buy HIZIRIZM series from Seishuzo, which I enjoyed drinking last month 🍶. The aroma is gorgeous from the moment the bottle is opened, as it is only a draft sake 🌸. The palate is clean and refreshing, but then the strong umami of Yamada-Nishiki spreads out. The sweetness and acidity are moderate, powerful, yet well balanced. The fragrance is gorgeous, and there is a sense of alcohol as well. It was not as special as the previous sake, but it too had a strong impact, and as expected from the Challenge Sake Series, it was very interesting 😁.

Sake recommended by a liquor store I frequent. So far, I have only seen Purple Space at this store 🍶 It seems to be a sake made by a female toji. This one is a Junmai Ginjo🌾 made from Gohyakumangoku. It has a clear ginjo aroma. The mouthfeel is soft, with a sense of sweetness and umami spreading in that order. It is not too heavy with acidity and minerality. Overall, it is complex and deep, but each assertion is not too strong and well balanced. As it is an unfiltered, unpasteurized sake, there is a slight alcohol taste in the aftertaste. While it was quite easy to drink, it also had depth and I enjoyed it. ☺️ I'm glad to have new encounters with good sake ✨.

I was curious about Shikishima🍶, which is a favorite at the liquor store I frequent, so I bought the unfiltered, unpasteurized sake. The top aroma is a mixture of a strong cemedine smell and a rich sweet fruity smell like chestnuts in sweetened soy sauce, which is a new sensation for me. The taste is refreshing with a hint of acidity, but there is also a strong cemedine smell and a rich fruity smell in the overtone. It has a strong peculiarity, but it is distinctive, a new sensation for me, and I found it interesting that this kind of sake also exists 😆.

I bought a snowman again this year ⛄️ This is the third year just to start recording it in the sake crocodile 😄. From the moment the cork is opened, a sweet and refreshing aroma like muscat spreads. The taste is moderately sweet on the palate, and the more you go to the bottom, the stronger the umami is, but both sweetness and umami disappear quickly, making it easy to drink. The acidity is effective. The fragrance is fruity and gorgeous. This year, too, it was a stable deliciousness that is typical of Sentori's Snowman. ☺️

My wife gave me this sake for Valentine's Day🍫Tobi Lan Nikomaru's top modelQueen☺️ edible rice Nikomaru is polished to 25% and koji rice is made from Yamada Nishiki🌾. The aroma is mild but peachy sweet. The body is light and cloudy, reminiscent of white peaches. There is a slight feeling of gas. It has a smooth, mineral-like mouthfeel with a gentle sweetness, followed by a mellow umami, which is cut off by the acidity. There is a slight bitterness. It is not very modern or unusual, but it is fruity, easy to drink, and genuinely delicious 😊.

Sake made by Kami-tsubo (upper tank) of the mother of sake. First time I've ever had the pleasure of drinking the mother of sake! So I bought it 🍶 After purchasing it, I realized that the alcohol content is 5%, which is as low as beer. The taste is also new to me! It is sweet and sour, but unlike sake, which is generally considered sweet and sour, it has a flavor and taste similar to that of carbonated plum wine, with less sweetness. In addition, it is not sweetened with sugar like plum wine, so it has an elegant sweetness that is not sticky ✨. It is easy to drink. Bottom line, delicious! This is a completely new sensation that took my breath away 🤯. I dare say that it is too low alcohol for me and I am sad to say that the bottle gets empty quickly and I don't drink enough 😂.

This may be the first time I drink Snow Kayasha at home. It is Junmai and Yamahai, but inexpensive, and I bought it because I thought it was just right for weekday drinking 🍶. Smooth on the palate with a fruity aroma, but a strong umami that quickly follows! The acidity is moderate and crisp, but in addition to the umami, there is a sense of alcohol, making it quite powerful. There is also some bitterness.

It's been a long time since I've opened a bottle of Akabe period sake at home since I used to take it to many people's drinking parties 🍶. It has a good balance of both acidity and sweetness, reminding me of early ripening strawberries. Even though it is nigori, the umami is moderate, and the low alcohol content makes it easy to drink. The nigori portion of the lower layer has some umami, but the impression is that the acidity is more assertive. Even the nigori portion is delicious and easy to drink, and I finished the entire four-pack in no time 😊.

I had almost only had a chance to drink it outside, but now my favorite liquor store started carrying it 😊I went out of my way to buy a bottle. What's that? It was different from the other Tobiran I've had. My image of Tobiran was sweet, mild, and elegant, but this brand is heavy, alcoholic, and powerful. Is it because it is one of the few (apparently) fast brewing brands? Is it because it is unfiltered raw nigori? 🤔I was a little surprised. The aroma is gorgeous and the sweetness on the palate ✨. Now that it's available, I'll have to try it out 🍶.

Hououmida Akaban opened 🍶A Junmai Daiginjo for around 2,000 yen is easy on the pocketbook☺️. It's gorgeous and rich, as is typical of Hououmida, perhaps due to the fact that it's nigori! The mouthfeel is sweet and smooth, but the strong umami soon follows. The aroma is gorgeous with rose-like flowers and ripe melon-like aroma.

I heard "Hiraizumi" which is the first sake from Hiraizumi Honpo 🍶 and I thought is it from Iwate Prefecture? I'm sure I'm not the only one who thinks 😅. It tasted just like I imagined Yamahai to taste, one sip and I was like this this this! I was like 😆✨ It has a soft mouthfeel, mellow and full-bodied as a whole, and gives the impression of a mellow sake. And yet it also has the freshness of a new sake, with just the right amount of acidity and a nice sharpness. It was easy to match with a slightly strong meal and I kept drinking it 🫠.

I was curious about Beaumichel and bought it for the first time 🍶It is affordable, but I had avoided it because it is a 9% low alcohol in 500ml bottle and I was afraid I would not drink enough 😅. Sweet and sour topping aroma like a mixture of citrus fruits like lemon and yogurt 🍋 clear body. The taste is as sour as its aroma, with sweetness and a fruity aroma that follows later. It is not as sweet as liqueur, which is a good impression, and it is not sticky and has a good sharpness. It is not alcoholic or umami, and does not have the so-called "sake-like" taste. It felt similar to Koei Kiku's Sunburst, but with even more swagger, which I personally quite like 😊 Hats off to them for making this with only sake rice and koji! And as delicious as it is, I still can't drink enough lol!

I saved the sake for about 6 months to open with my family for the New Year's holiday 🍶 They use Aizan rice grown under contract in the special A district 🌾. It has a fresh and fruity aroma with a sweetness on the palate that is typical of Aizan. The umami is well pronounced, but it is crisp and elegant with no cloying flavors, so it does not feel heavy. After opening the bottle, there is a slight feeling of gas. I thought it was a delicious sake in order, making good use of Aizan☺️.

The first sake of the new year is from Asahikawa Sake Brewery in Yamagata Prefecture🍶. It is a small sake brewery and most of their sake is distributed locally, so it is a brand that is not registered with Sake-no-Wawa, but it seems to be made with local sake rice from Kahokucho☺️. It has a mellow mouthfeel, then the umami spreads and has a nice sharpness. The umami is not as powerful as Yamadanishiki, but rather somewhat mild and refreshing 🌾. It is clear without any cloying taste. It is exactly the feeling of a sake made with traditional sake rice and methods, but I had the impression that I had received a genuinely good sake 😊.

I had been wanting to try Miyoshigiku, but there were no stores around that carried it, so I gave up. This Miyoshigiku filled in the last remaining prefecture of Tokushima, and I finally achieved the conquest of all prefectures 🍶✨ that I had neglected for a long time. Sweet and fruity like a banana, with a strong acidity that makes it sweet and sour. 100% Yamadanishiki, but the umami is modest, so it feels a bit thin. Elegant, without any clutter. Like the label, the taste is modern and I felt it would be popular with young people and women 😊.
