Asamatake is a sake that I have been paying attention to recently. I am not a big fan of sake made with flower yeast because the aroma is too strong in a way, but the owner recommended it to me as a beautifully brewed sake, and I thought I would give it a try if it was Asamatake. The nose is quite strong, with a honey-like sweetness mixed in with the ginjo aroma. It is made with cosmos flower yeast, but I don't understand what it is called 🌸cosmos🌸, but on the contrary, it is an aroma that is not strange to me. The taste is quite reasonable for the aroma. It has a good balance of umami and alcohol, but not too strong, and it has acidity and a nice sharpness. Perhaps it is characteristic of flower yeast, but as the temperature begins to rise, there is a sense of slight bitterness. It was a flower yeast sake, but I personally felt no discomfort and enjoyed it. ☺️

I picked it up at a liquor store I don't usually go to, because they were selling a brand I was unfamiliar with. I thought of Hana-no-Kou Sake Brewery when I thought of Kumamoto, but I was wrong. I thought of the Kyokai No. 9 yeast, which originated in Kumamoto. Among them, this brewery is the originator of Kumamoto yeast 🤔. As the name suggests, it has a rich and mellow flavor. The umami is also very good, but it spreads slowly, so it does not have a strong impact on the palate. As expected from No. 9 yeast, the aroma is gorgeous, and in addition, it has a strong nectar. Perhaps it is due to the fact that it is aged in autumn, but it also has a mild Shaoxing sake-like taste.

I went on a short trip to Nagano and Gunma over the weekend. I found Ding, which is not usually available in my neighborhood, and bought it. ☺️ I only know about Ding from SNS information, and the owner told me about his connection with Kentsu Takagi and his commitment to sake brewing, which made me look forward to it even more. The rice flavor is strong, but not too heavy. The taste itself has some sweetness, but the aroma is more fruity, and the fragrance gives the impression of sweetness. It is clear and has no cloying taste, giving the impression of a legitimately delicious sake. Some say it tastes similar to Jyushiyo Honmaru. I have not had enough to compare it to Jyushidai, but I found it genuinely delicious in its legitimate, yet very fruity modern aspect 😊.

I bought Bodhi yeast from Kaze no Mori because I saw it for the first time 🍶. I had the impression that Bodai Hashiroshi would be extremely sweet, but this one has almost no sweetness and instead has a strong acidity. It has a unique aroma without the general umami of rice. In general, it is refreshingly bitter. I guess this is a challenging series since it is an ALPHA, but I have a very different impression from the ALPHA1 I drank last year, and I am struggling with the image of Kaze no Mori in my mind 😅.

I was so impressed with Asamatake that I finally found a store that sells it. ☺️ I was a little disappointed to see it again in the fall because I had the impression that it was sweet and refreshing, but I was more pleased to find it and bought it. I followed the recommendation and served it at room temperature. The aroma is mellow and sweet, like freshly cooked rice. It has a slightly sweet taste on the palate, and its clean structure is delicious even after drinking it again. Now that I have found a distributor, I wonder if I can buy the new sake next time 😊.

Hozasu of San-Do, opened on our wedding anniversary this year🎉I feel happy just to have my favorite San-Do and my first Hozasu 😊 (for me, it is a luxury bottle for everyday drinking). Fruity and sweet aroma like white peaches, plus a moderate lactic acid yogurt smell. The low alcohol content makes it less alcoholic, and the yogurt-like acidity makes it easy to drink. The gas is strong and the freshness is emphasized. There is no lingering aftertaste of bitterness or other unpleasant flavors, and it finishes cleanly. Compared to the Yamadanishiki from the production area, I had the impression that the lactic acidity was stronger, but both are so delicious that it is hard to say which is which ✨.

Second day of business trip to Fukuoka. Visited a liquor store in the Hakata Station building, which is actually another branch of yesterday's liquor store. I bought a bottle of Jinden, which I had never seen in Tokyo! (but it is in Kumamoto). The aroma is sweet and sour with a hint of lactic acidity, typical of the Hananaka Shuzo brand. It is refreshing from the first sip to the finish. The slightly strong alcohol content in the middle of the bottle can be said to be a characteristic of affordable sake, but the white flower aroma that lingers faintly in the aftertaste is gorgeous, reminiscent of ginjo-shu, despite the low price. I was envious of those who live in Fukuoka, where you can buy a cup of sake from a major sake brewery at a convenience store and enjoy it so much 😄.

Business trip to Fukuoka✈️ search for a liquor store that would be easy to access on the way to the office. I found a sake shop with a good reputation near Sumiyoshi, where I was staying🍶. After three rounds of the sake corner on the second floor and much agonizing, I purchased this Harvest Moon🌕. The hiyaoroshi Nabeshima was exactly as I imagined it would be with a strong umami flavor. It is a popular brand, and even at 60% rice polishing ratio, it has no cloying taste, and while powerful, it is somehow refreshing and not tiring to drink. There is some bitterness. This was the first time I had Harvest Moon outside of a restaurant, so I thoroughly enjoyed it 🌾.

Asahi Ran🌾, made from Nagasaki's edible Asahi rice Quite a refreshing taste, you can drink it like water! There is a slight sweetness and fruity aroma that is typical of Hiran. After a little while, as the temperature rises, a bitter taste emerges, but it is not so bothersome.

広島出張のたびに訪問している酒商山田さんにて購入🍶広島の種類豊富なお酒とかなり悩みつつも、初めて見かける「菊酛」がどうしても気になり、奈良県大倉本家さんのお酒に決定。 確かに独特の匂い。樽がカビたような湿った発酵臭。お店の人はブルーチーズだと言っていたが分からなくはない。 味は匂いとはまた雰囲気が違って、酸が強く、スッキリ。-30以下の酒度ではあるが、思ったよりも甘みもスッキリめ。味と香りから薄い梅酒?のようにも感じるし、梅酒よりは柑橘っぽい。 含み香は菩提酛に似ている感覚。普段の日本酒らしさは皆無。雑味、苦味なし クラフト酒も流行っているようですが、逆に歴史を辿って昔のお酒を再現してみた!という逆方面の新ジャンルだなーと面白くいただきました😆 賛否両論ありそうですが、菩提酛とか好きなら抵抗なく飲めそうかな🤔私は意外とイケる口です😄

Sparkling Ki. I have had a bottle of this sparkling wine at a tavern, but to be honest, I was not that impressed with it. This time, on the liquor store's recommendation, I bought a sparkling wine suitable for summer. Cloudy white body. The bubbles, which continue for a while after pouring into the glass, are more robust than those of other sparkling sake. The taste has a strong rice flavor, but it is also refreshing, probably due to the gas. It also has a slight sweetness to it, making it easy to drink and enjoyable. As is the case with sparkling sake in general, the bitterness appears when the gas is removed. I drank it so fast that I didn't have time to take a picture of the bottle after pouring it 😅It was a tasty sake considering the attention to the secondary fermentation in the bottle 😆.

The second bottle opened during the Bon vacation, Tobiroki Junmai Daiginjo🍶I didn't have a chance to drink it so I let it sit in my fridge at home (it was laid out...)😅 It is well-balanced from the first sip to the aftertaste, with no unpleasant sharpness. It has a moderate sweetness on the palate, followed by a not-too-strong umami flavor. There is no bitterness or other unpleasant tastes, and the umami of the rice lingers in the aftertaste. I was able to make my family say "Delicious from the first sip! 😄I was impressed that the sake is as perfect as ever✨.

It's the Obon vacation, so the family is getting together for a drink. 👨‍👩‍👦‍👦We open a bottle of Isobojimai Daiginjo Junmai, which is quite extravagant for such a occasion🍶. It has almost no sweetness, and as is typical of Isobojimai, it has a good sharpness (with a short aftertaste). The alcohol taste is quite clear, which gives the impression that it is generally drier than the sake level label indicates. No miscellaneous flavors. It is beautiful and elegant as expected😃How different it is from Isoboast Honjozo, I didn't feel the difference in efficacy as much as the price 🤔.

My wife bought me a bottle of Kawanakajima Genmai🍶 on a trip to Nagano, the first precious brand I've ever had, including eating out: ☺️ It has a muscat-like aroma and tastes fruity and sweet, but it's not just a modern sake, you can also taste the umami of the rice 🌾, yet it's not too heavy, not sticky, and has a good sharpness. There is no bitterness or other unpleasant taste at all. It is a bottle, and since I was on a business trip, I drank it slowly over the course of a month, but even though it is unfiltered, it is always delicious!

I had a business trip to Hiroshima, so I visited a famous liquor store in front of Hiroshima Station that is often mentioned in Sake no Wa 🍶 very stylish! I bought a bottle of Hiroshima sake, Amego no Tsuki. I was told that there are only a few stores in Hiroshima that carry this slightly sparkling nigori sake. Second fermentation in the bottle makes opening the bottle a challenge 💦. Although it is a sparkling sake, it tastes dry and unobtrusive, as is typical of Ame-go-Tsuki. The gas in the bottle accentuates the refreshing feeling and makes it easy to drink. It's a 16°C sake, but I finished it in no time 😅.

My first Nanamizu. My favorite liquor store started carrying it, so I bought some for the weekend 🍶. It has a gorgeous, sweet aroma like white grapes and tastes sweet and soft. 16 degrees Celsius, but I didn't find the alcohol taste strong. The umami is moderate, not too strong and easy to drink, probably due to the fact that it is made from gohyakumangoku. I felt that this delicious and easy to drink sake with this specs is a proof of its popularity. ☺️ I will buy another brand soon ✨

I had heard that Kameizumi's light nigori was available for a limited time, but I finally came across it and bought it immediately 🍶. The gas was so strong that I had to open and close the lid several times to keep it from blowing out, and it took about 5 minutes to finally open the bottle 🍾. It was so strong that it was quite shwashy. It is a light nigori, but it is not strong in flavor, but rather refreshing and fruity. It is sweet and easy to drink because of the use of CEL-24. As the gas is released, a slightly bitter taste becomes noticeable. The taste and gasiness reminded me of Flax Cat Spark, but taking into account the difficulty of obtaining it, this is a very tasty and delightful sake✨. I would definitely repeat this sake😊.

My favorite liquor store started carrying Kawanakajima and I immediately bought it 😆 First time drinking it at home ✨. It has a sweet and gorgeous heady aroma. It's a nigori sake, so it has a strong umami and bitterness, but it has a moderate sweetness and acidity that keeps it from being cloying. It's not a modern sake, but I felt it's a traditional and genuinely delicious sake 😄.

My friend gave me this sake as a souvenir from a trip 🍶It was a brand I had never heard of before, but according to my friend, it was a relatively well established sake brewery with a wide range of sake business 🤔. The top aroma is modest, but when you put it in your mouth, it has a gorgeous ginjo aroma 🌸 which makes it easy to drink with a little bit of sweetness. The taste is clean. Slightly edgy as you continue to drink it. It was a 300ml souvenir, so I may have tasted it a little.

For the second time in my life, the first time I bought Kamishin 🍶 was hiyaoroshi, so I bought the standard sake unfiltered nama sake 😄. Sweet and savory top aroma, like a mixture of ripe peaches and nuts. The taste starts with sweetness and quickly spreads to a clear and strong umami 🌾. The sweet and savory aroma spreads clearly even in the hinted aroma. The aroma is rich and mellow, perhaps because it is an unfiltered, unpasteurized sake. It has a clear umami flavor, but I thought it was because it was surprisingly crisp and free of any cloying flavors that I did not get tired of drinking it. ☺️
