The first sake of the new year is from Asahikawa Sake Brewery in Yamagata Prefecture🍶. It is a small sake brewery and most of their sake is distributed locally, so it is a brand that is not registered with Sake-no-Wawa, but it seems to be made with local sake rice from Kahokucho☺️. It has a mellow mouthfeel, then the umami spreads and has a nice sharpness. The umami is not as powerful as Yamadanishiki, but rather somewhat mild and refreshing 🌾. It is clear without any cloying taste. It is exactly the feeling of a sake made with traditional sake rice and methods, but I had the impression that I had received a genuinely good sake 😊.

I had been wanting to try Miyoshigiku, but there were no stores around that carried it, so I gave up. This Miyoshigiku filled in the last remaining prefecture of Tokushima, and I finally achieved the conquest of all prefectures 🍶✨ that I had neglected for a long time. Sweet and fruity like a banana, with a strong acidity that makes it sweet and sour. 100% Yamadanishiki, but the umami is modest, so it feels a bit thin. Elegant, without any clutter. Like the label, the taste is modern and I felt it would be popular with young people and women 😊.

I found a bottle of Kaze no Mori Aizan that I wanted to drink but could not purchase at a tavern, so I bottled it and we all enjoyed it 😄. The aroma was sweet, typical of Kaze no Mori. The taste is robust, with a sweet and umami flavor. The alcohol content is 16%, so there is quite a bit of alcohol in it. Since it is from Aizan, I had imagined a delicate, sweet, fruity sake, but it was quite a powerful sake.

The lower half of the bottle is as cloudy as muddy sake. The concept of Yamanoi is to be free and new, while Aizu is to be classical. Compared to Yama-no-i, the sweetness and umami are stronger due to its higher degree of cloudiness. It has a fruity aroma with hints of muscat. On the other hand, the top aroma is moderate. It has a moderate acidity, and even though it has a strong umami, it has a good sharpness, so you will not get tired of drinking it. There is some bitterness in the aftertaste. Although it was described as "classical," the sweet and clean taste was favorable, and it seemed to be rather close to the flavor that is popular these days 😄.

A friend of mine gave me this mountain well. I've seen it often, but this is the first time I've had it 🍶. The top aroma is quite strong, with a fresh, sweet, fruity aroma like muscat. The taste is sweet on the palate, but is quickly followed by a strong umami flavor, with a nice acidity and sharpness that keeps it from being too sweet. The sweet overtone is also strong, as is the top aroma, which gives the impression of sweetness. The lingering finish is long, and the umami and sweetness remain. It has been a long time since the last moon after the rain. This Black Moon is a limited edition that is only released twice a year and is growing in popularity (it is 100% Omachi and popular among omatists). The top aroma is fruity, with a ginjo aroma typical of junmai daiginjos. It has a mineral-rich mouthfeel. Immediately, the robust flavor typical of Omachi spreads. The sweetness is also felt in the umami. The aftertaste is clean and crisp, and the umami lingers briefly in the aftertaste. The impression of a smooth and easy-drinking palate remained the same as when I first tasted it. It is 100% Omachi, so it was quite powerful, but I finished it before I knew it 😆.

Purchased and opened a bottle of Raifuku, which is also cosmetically pleasing. The brand name "Raifuku" is auspicious and somewhat pleasing at this time of year 😊. The aroma is rich and sweet like muscat. On the other hand, the taste is not strongly sweet, and although it is a moromi sake, it has a refreshing impression. There is a sense of alcohol. The moromi portion is not very much, about 30% of the total, and if not mixed, the majority is supernatant. The moromi portion has a slightly strong taste that is not bothersome, but has the texture of rice 🌾. I tried it with soda water, which is also recommended, but it seems like a little bit of soda water would be a good idea 🤔 as too much soda water would take away the aroma.

Kuroemon nigori sake. I often buy Kuroemon, but the nice name, coupled with the fact that I buy it soon after its release 🍶 On the other hand, the label is still a classic, for better or worse😅. The top aroma is subdued. It is nigori sake only, and has a generally stronger flavor than other brands. Since Kuroemon does not have a strong flavor to begin with, even nigori sake is not as powerful as other brands. The sweetness is moderate, and there is a bitter aftertaste. For a Kuroemon, I thought it was a sake with a roughness that is typical of nama-shu. Yet it is still an easy-drinking sake😄. I think that the brand name of the sake with a raw yeast or yamahai was more spectacular than nigori sake, so I personally prefer the latter.

This is the first time I have had sake from the Ikezuki Sake Brewery, but I was attracted by the binku color of the sake because I had previously had another brand of sake with red yeast that was delicious🍶. It seems to have been featured in an article in dancyu's introduction to sake. There is almost no topical aroma. The taste is sweet and slightly sour as expected, reminding me of strawberries 🍓, but the sweetness is not as strong as liqueur, and there is a slight sake-like umami flavor. It is a cloudy sake, but thanks to the acidity, it is not so heavy, and the low alcohol content of 12 degrees makes it easy to drink. I was satisfied with the red yeast sake as I expected 😆 It may be an evil way to drink sake because it does not have the original sake-like taste, but I thought it was good to enjoy sake by itself 👍.

I enjoyed Shinomine doburoku that I drank last month, so I repeated Shinomine. Since there are many new sake and arabashi at this time of the year, I wanted to drink a mellow, traditional sake made from the traditional sake brewing process, so I decided to try this brand. The aroma is of lactobacillus yogurt, which is typical for a sake made from the traditional sake yeast yeast yeast. The taste is surprisingly dry and refreshing. The mouthfeel is mild, perhaps due to the influence of the sake's traditional "nama-hashiroshi," but it does not have the mellowness typical of the sake's traditional "nama-hashiroshi" style. The alcohol content of 17% gives the impression of a strong sake. I regretted that I had wrong preconceptions about this sake due to the manufacturing method and past brands of the same brewery 😅I was not able to enjoy this sake with cream-based Western food, which I was only aware of the sake's natural yeast, because the clear dry taste of this sake did not go well with it at all. Once again, I realized the importance of understanding the taste from the label and asking questions to the waiter🤔.

Following the red version of Denshikiku the other day, we opened the yellow version today 🍶. Red: The aroma is milder than that of Oorigarami. The aroma is milder than that of Orikagarami, and the alcohol is a little stronger right after opening the bottle, but it seems to have mellowed a little after leaving the bottle open. The taste is sweet on the palate, but less sweet than the red version, while the umami is stronger, crisp and refreshing. It has a slightly bitter taste. Personally, I preferred the red one, which was more characteristic, but the yellow one was safe and tasty 😄.

I heard that my favorite liquor store had just received a new shipment of mizu-hashiro sake, so I bought some 🍶Kinzumi is a brand I've never had before, but I see that they are the brewery that makes Okura. The supernatant has a unique syrupy sweetness that is exactly what you would expect from a mizu-hashiroshi sake. The sweetness is so strong that the umami of the rice is not so pronounced. The second half of the bottle is like muddy sake, with the rice remaining as it is, and it is as thick as yogurt. At this point, the taste is more like eating sweetened fermented rice than sake. From halfway through the bottle, it was more like "eating" than "drinking" as the label stated 🌾In fact, I drank it while chewing 😂I was so full! ... This is a muddy sake, which is good, but I wanted to drink a purely mizu-hashimoto sake from Kinzumi 😄.

This is a new nigori sake from the Kangiku OCEAN99 series 🍶The clear bottle, pale white label and the color of the sake are wintery and visually pleasing☃️. The top aroma is reminiscent of white peaches. The taste is more umami than other OCEAN sake. It has sweetness like Kangiku, so the sweetness and umami spread at once, but it flows smoothly and crisply. There is a slight gaseous sensation, which is also refreshing. In addition to the usual deliciousness of KANGIKU, this bottle has the strength of new sake ☺️.

Today is the day of the Beaujolais Nouveau ban. We are going to have Sake Nouveau ☺️. The body is white with a slight haze. Peachy top notes 🍑. The taste is gentle sweetness at first, but it is not strong and does not linger. There is also a sense of alcohol. The flavor is not strong and does not linger, but soon the umami comes through and the alcohol is very strong. It also has an alcoholic taste, which is typical of new sake 😄.

One of the growing number of craft saké 🍶 I bought this on the recommendation of my favorite liquor store. The brewery is Happy Taro Brewery, which of course I had never heard of before. This is delicious!!! But with plenty of foul taste lol. As its ingredients and name suggest, it has a distinct herbal and lemon aroma. The taste is very acidic, with a distinct sweetness, but not sticky. It contains rice, but the flavor of rice is almost imperceptible. The alcohol content is low, and despite the cloudy appearance, the sake is easy to drink. As a professed sake lover, I don't know how to rate it 😅It's good for those who like sweet sake, but honestly, I feel it's more like a liqueur 💦. and I still can't sort out the positioning of craft saké in my mind 🥲, so I think I'll hold off on buying it for now.

I knew of its existence, of course, but this is the first time I have had Shinomine Nigorizake🍶. I was curious to try a long-established brand of Nigorizake, and bought it. I was very happy to see that the price is reasonable ☺. I'm glad its price is reasonable too☺️. First I had the supernatant and it was surprisingly sour! Of course, it is not degraded like acetic acid, but a pleasant sourness of malic acid. There is also a hint of sweetness and the umami is not so strong, making it very easy to drink. I wondered if the nigori portion would have a stronger umami, but it did not, and it seemed to emphasize the flavor of the supernatant, in other words, the acidity was also very effective. It has a clear aftertaste without any clutter. It seems that the use of yeast No. 77, which produces a lot of malic acid, is the reason for this refreshing feeling 😆 I wondered if it was a good first time for muddy sake. I was so impressed with the taste, I really want to try the junmai sake next time ✨.

It's been a while since I bought a bottle of Akabu 🍶It's a great time of year to get new Akabu sake, which is delicious even when fire-aged ✨. The aroma is so gorgeous you'd think it was a ginjo sake. The taste is clean and crisp, with just enough umami to keep it from being overpowering. The fragrance is fruity and sweet, but the taste itself is not sweet. There is no bitterness. I had lumped it all together in the category of notable brands by young toji, but when I drank Akabu again, it (naturally) had different characteristics from other sakes, which is interesting☺️.

I can't believe it has already been more than a year since I first drank Ikubou last year. Time flies... I was told by the liquor store I usually go to that it is better to leave the bottle open after opening it, so I opened it last weekend and had it in the fridge 🍶. It has a sweetness like ripe peaches and a sour top note like yogurt. Sweet and mellow. The acidity is not noticeable for Kouei Chrysanthemum, but it is also refreshing. There is no cloying taste. It was already delicious right after the bottle was opened, but after leaving the bottle open, the sharp taste of alcohol was gone, giving the impression that it became milder. I used to drink Kouei Kiku thinking I liked Sunburst, but this sake was so good that it made me think I'll go for Ikubou from now on☺️I think I'll buy a bottle if there are still some left 🤤.

Today is my birthday, but since it is a Monday, I was able to buy a bottle of Denshikiku, which I missed out on buying last year, so I opened the bottle immediately 🍁. This one, I like a lot! I've always loved drinking kangiku, but this might be my favorite of all ✨. Sweet and sour topping aroma like young strawberries. The mouthfeel is sweet and sour, gassy and tangy on the tongue. The overtone is thicker than the overtone and juicy like a mango. The aftertaste is slightly bitter. The strawberry-like aroma made me feel like I had unintentionally received a shortcake 🍓It was very tasty and my favorite sake 😊.
