Sake from Nagano has unintentionally continued since the New Year's holiday. Today's sake is not Genmai but Kawanakajima. It is a special junmai sake with a rich aroma of freshly cooked rice mixed with a slightly fruity muscat-like flavor. The mouthfeel is smooth with little resistance, followed by a subtle sweetness and a clear umami. Perhaps because it is a nama-shu, it has a slight alcohol aftertaste, but in general it has a moderate assertiveness, giving the impression of being easy to drink. There is a lingering but subtle aftertaste. The overall clarity and the gentle drinking with a modest assertiveness are the same as Genshu Mai, but I also felt the powerfulness of the different brands 🍶 Even though Genshu Mai is rarely available, this sake was satisfying enough. ☺️

The first sake of the New Year was Hitogochi Junmai Ginjo from Shinshu Kamerei. It has a youthful, fresh sweetness like muscat. Despite being fire-aged, it has a gaseous feel that makes the tongue tingle. It has a clear aftertaste with no cloying taste. I was proud that I had drunk Kamerei many times before, but this was one that made me think again, "This is delicious! It was a bottle that made me think "This is delicious!

The 2023 closing drink was a Sogapale 🍶 my father-in-law received it from a friend to celebrate, which coincidentally I'm grateful for 😊. Typical sake with a sweet and acidic aroma on the nose. The mouthfeel has a strong acidity, as is typical of yeast #6, from which a slight bitterness and sweetness spread out and flow nicely. It has its quirks, but I like it ✨I opened a bottle of Sogapale to close out the year and it made me very happy: ☺️

Here is another sake I bought on my trip to Nagano, Kawanakajima Genmai. This is only the second time in my life I have had Genmai, and this time it was a ginjo-shu with brewing alcohol🍶. The aroma is subdued. Slightly sweet on the palate, fruity like a peach. The overall flavor is even and clear with no cloying taste. Good sharpness. I had the impression that the brewer's alcohol habit was almost imperceptible, yet still achieved a good sharpness ✨. Once again, I felt that Genmai is a sake that I can confidently recommend: ☺️

Shinshu Kamerei Honjozo Sake 🐢 which I purchased at a sake brewery during a trip to Ueda 🐢 The brand I usually see is only junmai sake, so it looks fresh🫙. The aroma is fruity, like young fruit, green apple or muscat, even though it is a honjozo sake. The taste is also somewhat sweet and easy to drink. Perhaps because it contains brewer's alcohol, it has a slightly bitter taste for a Shinshu Kamerei, but it is not so bad as to be bothersome. It has a nice sharpness. Although it is clear that there is a bias, the top aroma and flavor are still Shinshu Kamerei! It was a high-cost sake that made us think 🍶.

Tomikyunaga's Seafood Dodo brewed with white koji malt. At a quick glance, I could not read it as seafood, but the brand name and concept are interesting. As the name suggests, it is a sake that goes well with seafood, so I bought sushi and boiled fish at the supermarket and drank it with dinner 🍶. It has a clean taste and aroma with lots of citrus acidity, and since it is 13%, it does not feel alcoholic and is easy to drink on its own. The first sip is like a cocktail made with orange and lemon, so it is easy to get used to. No rice flavor can be detected. To be honest, it does not go well with soy sauce on sushi or fish boiled in soy sauce base. I enjoyed it in the sense of an unusual sake, but I had the impression that the more I kept drinking it, the more peculiar it became 🦀As far as white malted rice sake goes, in my mind it's a flax cat, but I was a little disappointed to realize how perfect Shinmasa is😅.

Nanamizu's new sake 🍶I have had several bottles of Nanamizu and they have all been delicious, so I bought this new sake with high expectations. Despite the low milling ratio of 70%, the aroma is gorgeous and fruity. The taste is strong in alcohol. Contrary to the aroma, there is little sweetness. The umami is not strong either. It has acidity and a good sharpness. If I had drank this Nanamizu at the beginning of the brand, I might not have had a chance to buy it after that😅I felt that it was a little different from my taste. I felt that the same brand has a lot of variation in taste, at best, or at worst, it has a lot of blurring 🤔.

Last month, Shichiken had a very nice new sake for this year. In order to drink a variety of Shichiken this year, I bought one of the standard sake, Shichiken Sparkling 🍾. It has a clean and refreshing taste with no habits. Slightly sweet on the palate, feeling like gassed Muscat water, no alcohol. The taste seemed a little too gentle at first, but it is easy to pair with meals. It is also nigori sake, which gave the impression of just the right concentration in the second half. Because it is a second fermentation in the bottle, gas rises for a while after pouring it into the glass. It is also delicious. ☺️ Sparkling sake can be pricey, so it was highly rated, including the fact that it can be purchased for around 2,000 yen ✨.

It has been a little while since I last visited Kangiku. This year's sake is a Junmai Daiginjo, which is a new version of Ginhai (a new sake), Shiroginhai❄️, and is a power-up from next year's Junmai Ginjo. It has a sweet aroma like freshly cooked rice and green apples, which is typical of Kangiku. The taste is sweet and refreshing. It tastes sweet and refreshing, like a high-quality amazake without the stickiness (people call it Calpis soda for adults). Although it is nigori sake, the flavor is not too strong and easy to drink. Kangiku is still delicious ✨I'm also happy with the cosy price of around 2,000 yen for an unfiltered pure rice daiginjo: ☺️

I've finished my hiyayogoshi and it's time to enjoy the new sake I've been waiting for 😊. Come to think of it, I bought a bottle of Shichiken's new sake 🍶The name sounds like beer, but as sake, it's only available this time of year. I don't remember Nanaken being this good. ⁉︎ The aroma is a modest ginjo aroma. The mouthfeel is easy to drink with just the right amount of sweetness, minerality, and overall clean and fresh 🍏. Sake with a refreshing taste often has a strong alcohol taste in the mouth, but this sake is refreshing all the way through. Yet it has just the right amount of umami, and you can taste the deliciousness of sake. It was a sake that I liked very much! Experiences like this make me want to try brands I don't normally drink ✨I'd like to increase my purchases of Nanaken this year and try a variety of them: ☺️

I bought this sake🍶 from a liquor store on a recommendation during a business trip to Kyushu, and with all due respect, the only thing I knew about Oita was Chiebijin, but it is a new sake brewery and the taste is said to be modern. According to my later research, they took over the business in 1989. The aroma is sweet and sour with lactic acid bacteria. It has a slightly sweet taste on the palate, which is easy to get used to, but the flavor is quite robust, with a sense of umami and a touch of alcohol. It has a nice sharpness. It is certainly at a high level for an inexpensive model in a small 300ml bottle, but I would prefer a less powerful sake 😁.

The annual snowman has come to our house again this year ⛄️Senkin and I feel the four seasons and the speed of time every day😅 Fresh sourness like green apple and moderate sweetness spread out, with a slight aftertaste of rice flavor. Even if the ori at the bottom of the bottle is mixed in, it is not heavy due to the sharpness of the acidity. Hmmm, once again it is delicious! I'm glad I don't regret buying it, thinking I always buy it. ☺️

I still had some hiyaoroshi left over from my hoard 🍶 This will be the last hiyaoroshi of the season 🍁. The aroma is gorgeous, citrus 🍊! It's a hiyaoroshi, but the acidity is refreshing without being heavy, with a slight rummy sweetness and aroma. I thought it was definitely on the umami side of the Nanamizu range, but even hiyaoroshi sake is easy to drink and can be easily matched with food 🍶.

It is the time of year when new sake starts to appear. In remembrance of the end of autumn, we opened a bottle of Ding's Aki-agari that we purchased in Nagano last month🍶. The aroma is like freshly cooked rice 🌾. Compared to the Junmai Ginjo we drank the other day, it has a more rounded flavor, just like an Aki-agari. However, it is easy to drink without being too heavy. It is especially elegant at the beginning, giving the sensation that you are drinking a purely delicious sake. As one continues drinking, one begins to taste a bitterness in the aftertaste.

Asamatake is a sake that I have been paying attention to recently. I am not a big fan of sake made with flower yeast because the aroma is too strong in a way, but the owner recommended it to me as a beautifully brewed sake, and I thought I would give it a try if it was Asamatake. The nose is quite strong, with a honey-like sweetness mixed in with the ginjo aroma. It is made with cosmos flower yeast, but I don't understand what it is called 🌸cosmos🌸, but on the contrary, it is an aroma that is not strange to me. The taste is quite reasonable for the aroma. It has a good balance of umami and alcohol, but not too strong, and it has acidity and a nice sharpness. Perhaps it is characteristic of flower yeast, but as the temperature begins to rise, there is a sense of slight bitterness. It was a flower yeast sake, but I personally felt no discomfort and enjoyed it. ☺️

I picked it up at a liquor store I don't usually go to, because they were selling a brand I was unfamiliar with. I thought of Hana-no-Kou Sake Brewery when I thought of Kumamoto, but I was wrong. I thought of the Kyokai No. 9 yeast, which originated in Kumamoto. Among them, this brewery is the originator of Kumamoto yeast 🤔. As the name suggests, it has a rich and mellow flavor. The umami is also very good, but it spreads slowly, so it does not have a strong impact on the palate. As expected from No. 9 yeast, the aroma is gorgeous, and in addition, it has a strong nectar. Perhaps it is due to the fact that it is aged in autumn, but it also has a mild Shaoxing sake-like taste.

I went on a short trip to Nagano and Gunma over the weekend. I found Ding, which is not usually available in my neighborhood, and bought it. ☺️ I only know about Ding from SNS information, and the owner told me about his connection with Kentsu Takagi and his commitment to sake brewing, which made me look forward to it even more. The rice flavor is strong, but not too heavy. The taste itself has some sweetness, but the aroma is more fruity, and the fragrance gives the impression of sweetness. It is clear and has no cloying taste, giving the impression of a legitimately delicious sake. Some say it tastes similar to Jyushiyo Honmaru. I have not had enough to compare it to Jyushidai, but I found it genuinely delicious in its legitimate, yet very fruity modern aspect 😊.

I bought Bodhi yeast from Kaze no Mori because I saw it for the first time 🍶. I had the impression that Bodai Hashiroshi would be extremely sweet, but this one has almost no sweetness and instead has a strong acidity. It has a unique aroma without the general umami of rice. In general, it is refreshingly bitter. I guess this is a challenging series since it is an ALPHA, but I have a very different impression from the ALPHA1 I drank last year, and I am struggling with the image of Kaze no Mori in my mind 😅.

I was so impressed with Asamatake that I finally found a store that sells it. ☺️ I was a little disappointed to see it again in the fall because I had the impression that it was sweet and refreshing, but I was more pleased to find it and bought it. I followed the recommendation and served it at room temperature. The aroma is mellow and sweet, like freshly cooked rice. It has a slightly sweet taste on the palate, and its clean structure is delicious even after drinking it again. Now that I have found a distributor, I wonder if I can buy the new sake next time 😊.

Hozasu of San-Do, opened on our wedding anniversary this year🎉I feel happy just to have my favorite San-Do and my first Hozasu 😊 (for me, it is a luxury bottle for everyday drinking). Fruity and sweet aroma like white peaches, plus a moderate lactic acid yogurt smell. The low alcohol content makes it less alcoholic, and the yogurt-like acidity makes it easy to drink. The gas is strong and the freshness is emphasized. There is no lingering aftertaste of bitterness or other unpleasant flavors, and it finishes cleanly. Compared to the Yamadanishiki from the production area, I had the impression that the lactic acidity was stronger, but both are so delicious that it is hard to say which is which ✨.
