Wishing for a bright and illuminating year on his birthday. We opened a bottle of Denshogiku (Oriagarami), our first or second favorite brand of Kangiku 🍶. It is still consistently delicious. A good start to the year. ☺️ <Details There is a gas in the mouth. The flavor and sweetness typical of Kangiku can be felt more strongly, but it is not harsh and wears off easily. The bottom of the bottle is cloudy and thick like amazake, with some bitterness.

This is the second bottle of local sake from Numazu on my trip to Shizuoka. While most Shizuoka sake is refreshing, the liquor store said it has a strong umami flavor, so I bought this Hakuin Masamune as the second bottle of a different type of sake. I have to admit that I was afraid of buying a sake with a strong umami taste, since it is distributed mainly in my hometown, but this one was quite a good quality sake! In fact, the umami was not so strong, and the sake was well balanced.

I went on a short trip to Shizuoka. I wanted to try a sake from Shizuoka that I had never had before, so I bought Garyubai, which I purchased after researching its reputation beforehand🍶. The sake had a good online reputation, plus it was awarded [1st place] in the Junmai Sake category [1st place] and [Special Jury Award] at Kura Master 2019. I was surprised by the different peculiarities of this sake, which is not typical of Shizuoka sake. Maybe it was due to too high expectations and preconceptions, but it was not my favorite sake 🥲. <Details Slightly yellowish body. On the label, it doesn't seem to be an autumn-aged sake, but the taste also reminds me of an aged sake, with a peculiar aroma and taste, like a mixture of Shaoxing wine. It was different from the image of a fresh and refreshing sake, which is the image in Shizuoka and the image I was told by the liquor store. The taste was not bad, and it did not have a bad aftertaste, so it did not seem to be a problem with the sake's production or storage.

This is the 2nd Mikumari I drank on Sake Day 🍶 after a delay. It is said that the first version has been brushed up and has a wider range of the best temperature range to protect. The first version was delicious, so I bought it with high expectations 🍶. This is delicious, despite my high expectations! It was one of the first bottles that I could find: ☺️ In a short period of time, just a few months after the first version, there was a feeling of perfection as declared, and I take my hat off to them. <Details It has a strong gassy feeling, with a level of bubbles that are still firmly in the glass two days after opening. However, the bubbles are not mouth-watering like soda water, and the natural, high-quality tongue feel is pleasant. As with the first bottle, there is a sweetness on the palate, but the sweetness is not the only thing that precedes it, and there is a good balance of umami and bitterness. The first version had a slightly pronounced bitterness that became more apparent as it warmed up, but this did not bother me with the second version.

When was the last time you drank Huayouyoku? I have not had a chance to see Huayoukou, even though it is one of my favorite brands 🍶. This time, my brother served it to me at my parents' house🌸. I was surprised to find that the taste has changed compared to the past, but for me, it was still delicious from the very first sip 😊! I could feel it from the first sip 😊. It is often described as pineapple, but in terms of fruits, I think it had a white peach-like aroma. <Details It has sweetness on the palate, but is smooth and refreshing. The chili-like gassiness also accentuates the freshness. In the mouth, it has a fruity aroma like white peaches and a malted rice aroma. As is typical of Hachitan Nishiki (my personal impression of sake rice), it is generally flat with little of the robust flavor and flamboyance of Yamadanishiki, but instead is refreshing.

Every year, at a nearby liquor store, delicious! Cheap! Quick (to sell out)! The Machida Brewery's ✨? As advertised, I have not been able to buy it, but this year I was able to bring it home with me at the right time ✨. The aroma is mild. Still, the fruity aroma spreads in the mouth and is pleasant. The mouthfeel is sweet but refreshing, and a good umami flavor follows. It also has a nice sharpness. In addition, there is a small amount of gas that accentuates the crispness. I thought Machida Brewery's sake was delicious, but was it because of the cosmetics? Or is it because of the undisclosed specs and being able to drink it without preconceived notions? Perhaps it was the fact that it was very tasty: ☺️

Junmai Daiginjo made with Kenaiyama, once fired. There are only two sake breweries in Japan that use Kenaiyama. Kangiku is one of the brands that I tend to buy, and I am really interested in how they make sake that is not only delicious but also interesting, such as this Kenaiyama. It has a sweet mouthfeel that is typical of Kangiku and Aizan. The aroma is subdued. Compared to Hyogo's Aizan, the umami is not too strong, giving the impression of a refreshing taste. However, the more one continues to drink it, the more the umami is firmly added. There is no gassiness, and the overall impression is clear and free of any cloying flavors. I felt that I preferred it to Kangiku's Aizan brand Red diamond. ☺️ I felt that it would be good if the production of Ken Aizan increased so that we could try other brands as well!

A new brand of Houou Mita. The prototype is said to be made with 50% polished rice from Tochigi Prefecture and carefully brewed with Nikko's gojinsui. It is a junmai-daiginjo-namaishu, a very high-cost sake, priced at a little over 1,500 yen! Slightly carbonated, with a tangy gassy feeling when opened. The aroma is subdued, sweet and refreshing. The taste is light and refreshing. In addition to moderate sweetness, it has acidity and a good sharpness. The umami taste is followed by a touch of bitterness. You can enjoy complex flavors, but they are all subtle and you will not get tired of drinking it. ☺️ However, I recommend drinking it as soon as possible after opening the bottle, because it was the freshest and gassiest when it was just opened.

Here is a review of Yamaye Nishiki from a drinking comparison at my parents' house. It is a junmai ginjo-shu with a rice polishing ratio of 55%. This time, Yamae-Nishiki had a lower milling ratio than Hitogochi, but it had a bit of a quirkiness to it that made me prefer Hitogochi. It has more umami than Hitokogochi, with a slightly heavier sensation in the middle (for a Shinshu Kamerei). It is also fire-aged, but has a slight gassy feeling when opened.

During this year's Obon vacation, I did a Shinshu Kamerei sake drinking comparison at my parents' house. This review is a pure rice sake with 100% Hitogochi from Nagano Prefecture and 70% polished rice for the premium rice. I did not notice the difference in specs until I looked at the label, but I prefer Hitogokochi despite its higher milling ratio. It has a fresh, understated aroma and a light mouthfeel with a hint of sweetness. It has umami, but is crisp and free of cloying flavors. Although it is fire-aged, there is a slight feeling of gas when the bottle is first opened. Perhaps because it was a hot summer day, our family members seemed to prefer the more refreshing Hitokotchi 😄.

Toyo Bijin's Sake Mirai. Impressed by the cosiness of the ginjo sake I drank last time, I bought Sake Mirai this time. Fruity, refreshing aroma like white peaches. Lightly sweet and soft on the palate, the umami spreads out. The flavor is well balanced, sharp and crisp with a firm umami like Sake Mirai. It was as cosy as ever!

Burozumi red label, 3 year old sake. Purchased on the recommendation of my brother who likes old sake 🍶. The aroma and taste are like old sake. The aroma and taste are like old sake. Perhaps because it has been aged for a relatively short period of time (3 years), it is a bit lighter than other old wines I have had. I was told that one can enjoy the changes after opening the bottle, so I drank it for about a month, but the taste did not change that much. The taste did not change that much. Old sake is interesting for drinking a few cups, but for me, a bottle might be too much😅It was a good experience for me.

Kamikigen's Sake Wachi. Hard to type in the brand name 😂. Bought it for the gassy feeling from the fermentation in the bottle. It is not as gassy as the name suggests, almost like a normal nigori sake. I wonder if the storage conditions were bad... It has a refreshing taste. The umami is restrained for a Kamikigen, and it is refreshing and easy to drink without getting tired. It is a junmai ginjo, so it has a refined taste. It didn't have the gassiness I was looking for, but it was reasonably priced and I am satisfied with it 😄.

It is sweet and mild. No riceiness. There is also a slight ripeness aroma, like that of so-called Shaoxing wine. It is a Limene, so is it crisp? You might be surprised at how mellow it is lol. However, it is certainly one of the more acidic Okura, so it is not as heavy as you might think. Interesting sake in the sense that it is an unusual sake😄.

A friend recommended it to me as a local sake, so I bought it for the first time 🍶 The liquor store asked me if it was okay that it was a strong sake. I opened the bottle with a little apprehension. Unlike the image, it has a sweet aroma with a lactic acid aroma like yogurt. It is true that it has a strong alcohol taste, but it is not too heavy and the aroma is not too harsh. I had heard that it was a small sake brewery, so I thought it would be made in the traditional way, but it was a modern and particular sake, delicious enough 😄. The aroma was strangely similar to that of the nearby Sairai, which was interesting to me, as I felt it must be a regional characteristic.

This is a Junmai, hi-iru sake from Toyo Bijin. It is said that this sake won the highest award in the Junmai-shu category of the Yamaguchi Prefecture New Sake Competition. It has a fruity aroma like muscat. The taste is refreshing with a hint of sweetness. Although the alcohol content is 16%, it does not have a strong alcoholic taste. There is no cloying taste. Toyo Bijin has a relatively wallet-friendly price tag, and this Bessen is a junmai sake for just a little over 1,300 yen, which is also great ✨. If I were to drink it on a daily basis, I would probably only need one bottle of this sake! If I were to drink it on a daily basis, I might just have to settle for this one!

Shichiken's summer sake 🌻 is the first summer sake of the year. As the concept suggests, it is refreshing and clean. On the other hand, the gorgeous aroma lingered for a short time, and the alcohol feeling was a bit pronounced. It was like a summer sake, but I personally felt that I prefer it not to be so refreshing for a Nanaken 😃.

The first Matsumine no Fuji. Low milling of 77% Dewanosato rice from Yamagata Prefecture. The top aroma is sweet and fruity. The aroma is reminiscent of pears and peaches, and is so gorgeous that it is hard to believe it is junmai. The taste is not as sweet as the aroma suggests, and the mouthfeel is clean with a touch of umami. There is a faint bitterness in the aftertaste, but it is not difficult to drink. There is also some fresh gassiness from the secondary fermentation.

This Asamatake was brewed in 2019 and left to sleep in the brewery until now. It is Junmai-shu specs, but considering it is a so-called aged sake, it is also a great cosy sake for just over 1,600 yen. ☺️ The body is slightly yellowish. The alcohol content of 19% makes it powerful, and the mellow, aged aroma and taste are reminiscent of brandy. When it was fresh from the refrigerator, it had a slightly sharp taste, but it was better to drink it at room temperature to enrich the aroma and mellow it out 🍶.

When I visited a friend's house, I decided to have a bottle of Teisho, which is produced near his wife's family. I had never tasted the Teisho brand or the sake rice, Sake Musashi, before, so I was very excited and could not imagine what it would taste like. This is delicious! I was shocked from the first sip. The top aroma is subdued, but a fruity, muscat-like aroma spreads on the palate. It is gassy and refreshing, not strongly umami, and has a refreshing sweetness. Although it is 16% alcohol, it does not feel alcoholic and can be drunk easily. I didn't realize there was such a delicious sake brand that is mainly distributed locally... I would like to keep a bottle of it on hand 😊.
