During this year's Obon vacation, I did a Shinshu Kamerei sake drinking comparison at my parents' house. This review is a pure rice sake with 100% Hitogochi from Nagano Prefecture and 70% polished rice for the premium rice.
I did not notice the difference in specs until I looked at the label, but I prefer Hitogokochi despite its higher milling ratio.
It has a fresh, understated aroma and a light mouthfeel with a hint of sweetness. It has umami, but is crisp and free of cloying flavors.
Although it is fire-aged, there is a slight feeling of gas when the bottle is first opened.
Perhaps because it was a hot summer day, our family members seemed to prefer the more refreshing Hitokotchi 😄.
